Hawaiian Haystacks {aka Chicken Sundaes}

Hawaiian Haystacks are a quick, easy and healthy dinner idea. Only a few ingredients and they’re fully customizable to what everyone likes!
Sometimes my weekly menu planning is a lot like when I was in grade school and it was test time.
My mind turns to a complete blank and I sit staring at my paper, unable to write a dang thing.
Do you ever feel like that??

Last week was like that for me. I had a complete brain fart when I sat down to plan my meals. So I started thinking about what I used to eat when I was a kid, what my all time favorite meals were … and then BAM! Hawaiian Haystacks came to my mind!

No idea why, but it’s been years since I’ve made them for my family! And honestly, it’s seriously one of the yummiest dishes EVER! It’s totally customizable depending on what you like, which is so cool. So you start with rice and then add on a warm, creamy chicken sauce. (Who doesn’t like warm, creamy chicken sauce?!) Then top with your favorite vegetables – I threw on some pineapple too! It’s a yummy and quick weeknight meal. My boys devoured it and my oldest son had three servings! If you haven’t tried Hawaiian Haystacks yet, give it a try! And even if you have, try changing it up with this recipe! ;)

Hawaiian Haystacks {aka Chicken Sundaes}

Layered Chicken Sundaes!
Recipe type: Main
Serves: 6-8
  • 4 cooked chicken breasts, chopped or shredded (or 1 large can)
  • ½ cup chicken broth
  • 1 (10.75 oz) cream of chicken soup
  • 1 tsp. dried basil
  • 1 tsp. dried parsley
  • about 4 cups warm cooked rice (I used brown)
  • Suggested Toppings:
  • pineapple tidbits
  • green bell peppers, chopped
  • shredded cheddar cheese
  • sliced olives
  • chopped tomatoes
  • sliced green onions
  • crunchy chow mein noodles
  • sliced almonds
  • shredded coconut
  • any other topping that sounds good to you!
  1. Pour chicken broth into a large skillet. Add chopped or shredded chicken and simmer on medium-high heat until slightly reduced, 3-5 minutes.
  2. Add cream of chicken soup, basil and parsley into chicken and cook until heated through.
  3. Scoop warm rice onto plates and generously top rice with chicken mixture. Now add favorite toppings as desired to complete your dish. ENJOY!!
