Crock Pot Sloppy Joes with veggies hidden inside! Your kids (or husband!) will never know there are vegetables sneaked in there!
My older two boys are just starting their baseball season. I know, early right?! That’s Southern California for you! It’s in the 60’s to 70’s every day here while other parts of the United States are snowing! Again I say, I’m spoiled. 🙂
Anyway, back to baseball… since one of my boys is thirteen years old, he’s now in a different league than my ten year old. I know what you’re thinking, “um, what does this have to do with crock pot sloppy joes?”
Well, if I told you that the practices for my older son’s league were about thirty minutes in the exact opposite direction as the practices for my ten year old’s league? But that they have to be there at the exact same times? Yay!
Then yes. Yes. This has a LOT to do with crock pot sloppy joes.
Let’s just say crock pot dinners are my best friend. Especially right now. Even if you aren’t running back and forth to baseball practices, you will LOVE this crock pot sloppy joes recipe!
Let me brag a minute… I had this idea to blend up some veggies and add them to sloppy joes to totally fool my kids into eating my vegetables. I’m probably not the first to think of this idea, but humor me for a minute. 😉
They turned out even better than I hoped! They taste JUST like regular sloppy joes, you can’t even tell they’ve been altered at all. They’re flavorful and so tasty but just with a little more vitamins and minerals added into the mix. Whether you’re running kids from practices or lessons, or running home from a busy day at work, these crock pot sloppy joes are a healthy and super easy dinner everyone will devour!
- 3 cloves garlic, peeled
- 2 carrots
- 1 (10-oz) container button mushrooms
- 1 onion, peeled
- 1.25 pound lean turkey
- 1½ cup ketchup
- 2 tsp. mustard
- 1½ Tbsp. light brown sugar
- 1 tsp. salt
- ½ tsp. pepper
- In a food processor, combine garlic, carrots, mushrooms and onion. Blend until fully pureed. Set aside.
- In a saucepan, brown turkey. Add in pureed vegetables and heat through. Pour all into the crock pot.
- Add ketchup, mustard, brown sugar, salt and pepper into crock pot and stir together.
- Cook on LOW for 4-6 hours. Serve on buns and enjoy!
