Baked Chicken Fingers with an almond-herb crust are my go-to easy dinner recipe and my favorite way to eat chicken! They’re incredibly flavorful, healthy and delicious! (Thanks Foster Farms for sponsoring this post!)
I don’t usually get on diet kicks, I just try to eat healthy on a regular basis. But a few years ago, I got really into the South Beach Diet. It was all the rage then – have you heard of it or tried it before? I bought a bunch of books and cookbooks on it and actually really liked it. Of course, after a little while I lost interest in it (haha!) but some of the recipes in the cookbook are still my favorites.
This recipe is similar to one in my cookbook but I’ve tweaked it to be my own over the years. It’s a family-favorite and my boys ask for it regularly.
For these Baked Chicken Fingers I like to use Foster Farms Simply Raised chicken, cut into cutlets or “fingers”. I make a coating with almonds, bread crumbs, parmesan cheese and herbs. What I love about this crust, is that it’s made in the food processor so you don’t have to do a lot of chopping or mincing. Just throw the ingredients in the food processor then roll the chicken in it.
I love the crunchy exterior of the chicken and the tender, moist interior. Plus, it’s packed with flavor making it a deceiving dinner because it tastes decadent but it’s healthy! My little boys think I’m splurging and letting them eat fried chicken… 😉

These Healthy Baked Chicken Tenders need to be added to your New Year’s healthy resolution dinner menu rotation! I hope they become a family favorite like it has for us!
- 1½ slices whole wheat bread (I leave the slices out for an hour or so to dry them out a bit)
- ⅓ cup shredded parmesan cheese
- ⅓ cup almonds (I've used all kinds in this recipe!)
- 2 Tbsp. parsley
- 1 tsp. salt
- 1 tsp. Italian seasoning
- ⅛ tsp. pepper
- ¾ tsp. garlic powder
- 1½ lbs. Foster Farms Breast Tenders
- ¼ cup olive oil
- Preheat the oven to 400ºF. Spray a cookie sheet with cooking spray and set aside.
- Using a food processor, combine bread slices, parmesan cheese and almonds. Process until combined and crushed into small bits.
- Add parsley, salt, pepper, garlic powder, and Italian seasoning. Pulse to combine into almond mixture. Pour into a large bowl.
- Pour olive oil into another bowl. Dredge chicken tenders into oil and then roll in almond mixture, making sure to completely coat the chicken. Place chicken on cookie sheet.
- Repeat until all chicken pieces are coated and placed on the cookie sheet. Bake in preheated oven for 25 minutes, or until chicken is cooked through and almond crust is golden brown.
- Cool for a few minutes and serve. Enjoy!
