I’m much better at coming up with side dish ideas that main dish ideas. When I’m planning out my weekly meal plans, I can usually come up with a hundred yummy side dishes or salads to serve but coming up with a main dish? Not so easy for me!
I think that’s because I seriously LOVE side dishes. I can’t eat a meal without having two or three other things on my plate. I love texture. For example, I love eating scrambled eggs with a slice of crispy toast and sliced cold tomatoes. I eat a bite of each as I go. I can’t sit and eat just the scrambled eggs and then the toast. Nope. I have to switch off and eat a bite of each, haha! Are you like that too?
A few weeks ago, I got a call from the nurses office saying that my oldest son had hit heads with another boy while playing basketball during lunch. I picked him up at school and took him into the urgent care. He needed FIVE stitches in his eye brow! I guess that’s what you get when you have boys! As I was waiting for him to go back into a room to be seen by a doctor, I was thumbing through a magazine and saw a picture of a farro salad.
I was instantly intrigued. I love quinoa, barley and all other grains but I don’t think I’ve ever tried farro. So the next day I went to the store and grabbed some farro and other ingredients for a Greek-style farro salad.
Farro is really interesting. It tastes almost like barley but more hearty. It’s nutty and delicious. This farro salad is seriously such an easy, delicious side dish!! Even my super picky oldest son devoured it. Really. He couldn’t stop eating it. I had it in an airtight container in the fridge. I walked into the kitchen and saw him standing there with a fork in his hand, shoveling forkfuls of this farro salad into his mouth.
I, ahem, also caught my husband doing the same thing the next night. LOL!! This farro salad has all the great Greek flavors you love, with a splash of lemon. I love the texture the farro gives. Mixing in cucumber and tomatoes really gives this salad a delicious mix of flavors and textures. I will be making this farro salad again and again and again. 🙂

- 1½ cups uncooked farro
- 4 cups water
- 1 cup cherry tomatoes, halved
- 1 cup diced cucumbers
- 5 green onions, diced
- ¾ cup fresh parsley, chopped
- 1½ tsp. salt
- ¼ tsp. pepper
- ¼ tsp. garlic powder
- 3 Tbsp. fresh lemon juice
- ¼ cup olive oil
- Boil 4 cups of water. Add salt and add uncooked farro. Turn heat down to medium-low and simmer for 15 minutes or until the farro is tender. Drain farro and set aside to cool.
- In a large bowl, combine tomatoes, cucumbers, green onions, parsley, salt, pepper, garlic powder, lemon juice and olive oil. Add in cooked and cooled farro and toss. Serve and enjoy!!
