Cowboy Caviar is one of the easiest snacks/appetizers to make because you throw everything into one bowl and it’s done! It’s full of flavor and textures – it’s a definite crowd-pleaser!
Happy Monday! This weekend went by with a blur. We drove over to Arizona on Friday evening, after my boys’ baseball practices. It’s about a six hour drive from us. We ended up getting in at 2am which is never a good way to start the weekend! We crammed all six of us in one hotel room and got a few hours of sleep.
The next day we got up early and went to my Grandfather’s funeral. They had a viewing prior to the actual funeral service, which was nice. I got to see all of my aunts, uncles and cousins from my dad’s side. We seriously have the biggest family ever! When we walked into the service, our family took up over half of the church seats!
The service was beautiful. I learned so much about my grandpa and what an amazing, hard-working person he was. We (his grandchildren) sang a song in the middle of the program and it was so pretty. I couldn’t look at my dad while I was up on the stage singing because he was crying and it made it hard for me to finish the song. It was such a touching experience.
After we followed the hearse to the cemetery, we watched the Color Guard fold up the flag over my Grandpa’s casket and my uncle said a few words. It was beautiful and perfect.
I got to spend some much needed time with my siblings the rest of the weekend. If you follow me on Instagram, you know how much fun we had together. I LOVE my brothers and sisters! There are six of us together and we laugh so much when we’re together! We went to church with my mom and dad on Sunday and then left to drive back home. It was a great weekend and I’m glad I got to go but I’m also glad to be home! 🙂
I made a batch of this Cowboy Caviar before we left town and we ate some of it but I left a container of it in the fridge. When we came home, I busted it out of the fridge and we devoured it with some tortilla chips! Perfect welcome home snack!
Have you ever made Cowboy Caviar (aka Cowboy Salsa or Texas Caviar) before? It’s so super easy to make because you basically throw some canned ingredients and spices into a mixing bowl and BAM. Chip dip! You do have to chop up a few veggies, but that’s hardly work when you get such a yummy snack in the end. 😉
I love all of the textures and flavors in this Cowboy Caviar. With the Italian seasoning and cumin, it has some great spice to it and the beans and vegetables really make it hearty and delicious! Your family will love this easy snack!
Ingredients
- 2 15.25-oz cans white & golden corn
- 1 1.5-oz can cannellini beans
- 1 15.5-oz can black-eyed peas
- 1/2 bunch cilantro chopped
- 6 Roma tomatoes chopped
- 4 green onions sliced
- 1/2 Tbsp. cumin
- 1 tsp. salt
- 1/4 tsp. pepper
- 2-3 jalapeños diced
- 1 package dry Italian dressing
Instructions
- Combine all the ingredients in a large mixing bowl. Can serve right away or put in an air-tight container in the refrigerator for a few hours to let the flavors combine.
- Serve with tortilla chips. Enjoy!
