This Chicken Cacciatore Recipe is full of chicken and vegetables in a flavorful tomato sauce. It’s an easy, comforting and healthy dinner the whole family will love! 

Do you ever have a mile long daily to-do list but somehow you end up sitting in a chair staring at the wall? Or your computer screen?

No? Okay, then. I’m a weirdo.

That’s me today. I leave town to go to Portland early Friday morning for a blog conference. Like, early. My flight leaves at 6:40am. Yowza! I have only one day to get everything packed and prepared for my trip.

This includes typing out an agenda for my babysitter of everything she has to do on Friday. It’s really crazy how much driving I do! Handing the burden over for a day feels good but the preparation is annoying.

Not to mention all the laundry and packing to get my bag ready to go…plus a million errands around town and a baseball game for my ten year old and baseball practice for my oldest on the night before I go.

Just thinking about it makes me want a nap!

But then I end up sitting in my office chair, staring at my computer screen or the wall. I don’t want to do any of it! I want to just be able to leave town and have it all done for me. Ha!

Of course, the last thing I want to do is think about dinner. My husband is great about making quick things like sandwiches for the kids if I’m out of town. But I like to make a few yummy meals ahead of time and leave them for him and the boys to eat while I’m gone so he doesn’t have to worry about it.

This Chicken Cacciatore recipe is the perfect one to make for them. Not only does it makes quite a bit of food but it’s great as leftovers. My boys love it and I love the fact that they’ll eat the vegetables in it! This is one of those recipes you can pull out of your hat if you have company coming over and want to impress them. It does require some chopping of vegetables but it all simmers together on the stove until cooked and tastes fabulous over a bed of noodles or my boys’ favorite: mashed potatoes.

This Chicken Cacciatore recipe is one you will not want to miss. You will love this easy and healthy dinner!


Chicken Cacciatore
 
An easy, comforting and healthy dinner the whole family will love!

Recipe type: Main
Serves: 6-8 servings
Ingredients
  • 2-3 lbs. chicken cutlets or chicken breasts, cut into smaller pieces
  • salt & pepper
  • 2 Tbsp. olive oil, divided
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 green bell pepper, diced
  • 2 cups fresh mushrooms, sliced or quartered
  • 1 (14.5-oz) can diced tomatoes, undrained
  • salt & pepper, to taste
  • 1 Tbsp. Italian seasoning
  • ½ cup chicken broth
  • mashed potatoes or noodles, to serve with
Instructions
  1. In a dutch oven (or heavy pan), heat 1 Tbsp. olive oil over medium-high heat.
  2. Season chicken with salt and pepper and place in hot pan. Brown chicken on both sides. Remove from skillet and set aside on a plate.
  3. Pour remaining tablespoon of olive oil in dutch oven and add in onion, garlic and bell pepper. Stir until fairly tender, being careful not to burn the garlic.
  4. Pour in tomatoes, broth, Italian seasoning and mushrooms. Cook until mushrooms are almost tender. Taste and season as needed. Add in browned chicken and juices.
  5. Cover and simmer for 30-40 minutes on medium-low heat, until all vegetables are tender and chicken is cooked through and very tender.
  6. Serve on plates with spaghetti noodles or mashed potatoes. Enjoy!

I hope you had a great weekend! If you’re in the United States, I hope you had a great long Memorial Day weekend. Did you do anything fun? We really didn’t do much. We stayed home and had a sort of “staycation” with our boys.

My oldest went to Utah to visit his dad for the weekend so I was one kid short. It was interesting how every meal I made, I ended up with leftovers. I kept thinking that was strange to have so many leftovers but then I remembered he was gone, lol!

It’s really crazy to me how much food my boys can put away. I was talking with my mom today and telling her how I need to practically double all my recipes because there just isn’t enough food to feed everyone!

Like one pound of ground beef usually makes four burger patties but we need more like 6-8 since we have 4 boys plus Cory and I…and don’t forget the second helpings!

Although, I do love it when they like what I make. Duh, of course I do! What mom doesn’t like it when their kids like what they make?!

The one meal that really gets me though, is breakfast. I get in these slumps where I just do not know what to give my hungry boys. They need protein but only two of my four will eat scrambled eggs. Only one, maybe two will eat oatmeal or other hot cereals. They all like cold cereal but let’s be honest, that stuff goes right through you. You can eat like three bowls and be hungry again in an hour. True story! Plus, most aren’t very healthy.

I’ve seen a lot of recipes for egg cups and I thought I needed to give that a try. But instead of making full size muffins, I thought why not make mini egg cups? Ones you just pop in your mouth in a hurry.

These mini egg cups are filled with healthy ingredients and are made super quick! You can make a pan full and refrigerate them for a week’s worth of breakfasts. That is worth its weight in gold to me. Especially with hectic mornings, rushing off to school with all my boys. I hope you give them a try and let me know what you think!

Easy egg cups you can refrigerate or freeze for make-ahead breakfasts.

Recipe type: Breakfast
Serves: 24 mini egg cups
Ingredients
  • 6 eggs, beaten
  • ¼ cup low fat cottage cheese
  • ¼ cup diced green chilies
  • ¼ cup shredded sharp cheddar cheese
  • ¼ tsp. salt
  • ⅛ tsp. peper
  • 2 Tbsp. milk
Instructions
  1. Preheat oven to 350ºF. Spray mini muffin tin with cooking spray and set aside.
  2. In a medium sized mixing bowl (I like to use my Le Creuset mixing bowl with a pouring spout) mix together all the above ingredients. Pour into mini muffin cups and bake in preheated oven for 15-20 minutes or until cooked through.
  3. Let cool and then carefully extract from pan. Serve and enjoy!
  4. *Can also put in a plastic container and refrigerate or freeze for future breakfasts. Just pop in the microwave for a few seconds to reheat and eat!

Red, White & Blueberry Healthy Fruit Popsicles – a healthy and easy treat the entire family will gobble up! Perfect to make for Memorial Day or 4th of July… or really anytime.

I’m really not a creative person. Like, really not. But every once in awhile, the urge to create something clever and/or cute strikes me. Like fun red, white & blue popsicles.

Well, I can say that I tried with these popsicles. Not that I even thought for a second that I’m the first to think of a red white & blue popsicle BUT I still was excited about the thought of making a patriotic healthy fruit popsicle.

But when I pulled them from the freezer, I was pretty disappointed. I mean, the blueberry layer had turned almost a purplish brown – and that’s not blue. Nope.

So I thought it was back to the drawing board. How could I make the blueberry layer blue without using food coloring?

But then… a nibble here and a nibble there had me totally rethinking the drawing board. These fruit popsicles were GOOD. Like, really good.

So I thought, what the hay. I’ll just keep ’em. The blue layer might not be blue but it IS full of blueberries. And that says something, right?

With a top layer of a crazy good strawberry/pineapple mixture, a middle layer of low-fat yogurt, and a bottom layer of a blueberry/banana mixture – you will love these fruit popsicles! They’re a wonderful addition to your holiday get together. Or really any day because heck, they’re not actually red, white & blue, right?!

Red, White & Blue Fruit Popsicles
 
A healthy and easy treat the entire family will gobble up!
Author:
Recipe type: Dessert
Serves: 8-10 popsicles, depending on the size
Ingredients
  • 2 cups sliced strawberries
  • 1 cup pineapple chunks + a little extra pineapple juice
  • sweetener of your choice (Truvia, honey, sugar, etc)
  • low-fat vanilla yogurt
  • 1 cup blueberries
  • ½ a banana
  • ½ tsp. lemon juice
Instructions
  1. In a blender or food processor, blend together strawberries and pineapple. Add in a little juice if it needs it. Add in some sweetener to taste. Pour mixture in the bottom of popsicle molds.
  2. Fill the middle section of each popsicle mold with yogurt.
  3. In a blender or food processor, mix together blueberries, banana and lemon juice. Sweeten if necessary. Fill remaining popsicle molds with blueberry mixture. Place in the freezer to set.
  4. When fully set, run some warm water over the bottom of the popsicle mold to loosen. Pull out each popsicle, serve and enjoy!

So I’m a little late to the game, but I’m officially obsessed with the show Scandal. Are you a Scandalite? I guess they just ended the show but I’m just starting it on Netflix. Obsessed, I tell you! I’m watching it as I type this.

You know what else I’m obsessed with? Cherry Dump Salad.

Okay, here we go again with the word “dump” in association with food. It just sounds wrong. But if you just think of it as a verb, as in “dumping these cans into a bowl” …you won’t feel like giggling when you hear the name dump salad.

Because basically that’s what this fruit salad is: dumping some cans into a bowl. Oh, and mixing in some whipped topping to make it super creamy. But only four extremely easy ingredients.

This salad is beyond easy, not to mention totally delicious, too! This is my favorite to make when I have company coming over and I’m afraid my meal won’t stretch. If I need an extra side dish, this is the perfect way to quickly make an impressive dish. It adds a sweet side to the meal that everyone enjoys. This is a family-pleaser and you won’t regret making it!


4-Ingredient Cherry Dump Salad

Ingredients
  • 1 (21-oz) can cherry pie filling (I used Lucky Leaf brand)
  • 1 (8-oz) container lite whipped topping
  • 1 (15-oz) can mandarin oranges, drained well
  • 1 (15-oz) can mixed fruit, drained well
Instructions
  1. Pour cherry pie filling in a mixing bowl. Fold in whipped topping.
  2. Fold in drained canned fruit. Chill and serve. Enjoy!

Happy Monday! How was your weekend? We were able to see my 10 year old’s buddy play Charlie Brown in the play, You’re a Good Man, Charlie Brown. It was so cute! Did you do anything fun this weekend?

The weather has been a little funky lately here, but I’m looking forward to a few warm nights this week to barbecue. I’m super lucky that I get to live in Southern California where the weather is moderate all year long. We barbecue year round, for the most part. Woot!

My husband is usually our grill master. To be honest, I get sort of nervous grilling meats because I’m never sure when they’re done cooking! I’m always afraid of overcooking and/or undercooking. But when it comes to shrimp, that’s my specialty. I always know when it’s done cooking because, duh. It turns from gray to pink.

My boys actually like shrimp, but only if it’s simply made. Not fried or covered in seasonings, etc. That’s one of the reasons why these grilled shrimp skewers are so awesome.

Another reason is because, well, skewers are cool. Everyone likes grilled meat on skewers – am I right?! Yep. And this shrimp is marinated in a simple garlic/oil marinade. It’s quick to make and adds so much flavor to the shrimp. And then there’s the mango salsa, which is crazy easy and can be served on the top or on the side of the shrimp.

These skewers are perfect for entertaining, too. They’re easy, healthy and absolutely delicious. You will love to welcome summer by making a batch of these grilled shrimp skewers! And if you want to try another easy shrimp dish, try this favorite of ours: Orange-Thyme Grilled Shrimp. Can’t go wrong with shrimp on the grill!

Grilled Shrimp Skewers with Mango Salsa

Serves: about 6 skewers
Ingredients
  • 5 Tbsp. olive oil
  • 5 large cloves garlic, thinly sliced
  • 2 Tbsp. fresh lime juice, divided
  • ½ tsp. pepper
  • 1 tsp. salt
  • 2 pounds large shrimp, shelled
  • 6 wooden skewers, soaked in water for 15 minutes
  • SALSA:
  • 1 bunch green onions, thinly sliced
  • 2 ripe mangoes, peeled and chunked
  • 2 jalapeños, seeded and finely diced (or less depending on heat preferences)
  • ½ of a bunch of cilantro, leaves only, chopped
  • salt and pepper, to taste
Instructions
  1. Heat olive oil in medium saucepan over low heat. Add sliced garlic and cook until soft. Add 1 Tbsp. lime juice, pepper and salt. Let cool.
  2. Thread shrimp onto soaked skewers and place in a 9x13 pan (or something similar). Pour garlic oil marinade over shrimp. Cover with plastic wrap and place in refrigerator for 2-6 hours.
  3. Meanwhile, prepare mango salsa: mix green onions, mangoes, jalapeños, cilantro and remaining 1 Tbsp. lime juice. Taste and add salt and pepper if needed. Refrigerate until ready to use.
  4. Preheat grill to high. Grill marinated shrimp for about 3 minutes on each side. Shrimp will be pink and firm. Take off grill and serve with salsa. Enjoy!

Last weekend, I shopped at ALDI grocery stores for the first time but for sure not my last! Let me tell you why YOU need to shop at ALDI if you don’t already. Here are my top 5 reasons plus a $25 gift card giveaway for ALDI stores! (this is a sponsored conversation provided by ALDI. All opinions are my own.)

I had the honor to be invited to the ALDI headquarters in Batavia, Illinois the other weekend. I had a ridiculously good time! I met some new blog friends and ate some a LOT of yummy food. How cute are we, standing near the checkout in the ALDI store we visited?

I also had the privilege of getting an inisde look at an ALDI store. We don’t have ALDI stores in California. YET. I have some huge news – in the near future, there will be ALDI grocery stores in Southern California!! You have no idea how excited this makes me!

I’ve struggled to find grocery stores near me that have lower prices but also have high quality. Usually if the store has lower prices, things are unorganized or the produce is terrible or the overall selection is bad. Not ALDI. I have not one thing bad to say about this grocery store. None. And that’s the honest truth. No sugar coating here. I love this store! Let me tell you why. Here are my Top 5 reasons to shop at ALDI stores…

#1 – This is number one for a reason – you will save $$$.

There are so many ways to save money at ALDI! First of all, their prices are crazy low. We’re talking $1.99 for milk, people! It’s never under $3.00 at the grocery store I’ve been shopping at! The way they’re able to lower their costs is by:

  1. ALDI exclusive brand products are often manufactured by national brands and taste just like regional brands but they’re much cheaper! Win-win for sure.
  2. When you start your shopping experience, you place a quarter in the cart machine to remove a cart to use. When you return your cart, you get your quarter back. This saves YOU money because ALDI doesn’t have to hire someone to pick up carts in the parking lot. Very smart.
  3. You bag your own groceries. Not only does this save on plastic bag waste, but it saves YOU money because ALDI doesn’t have to hire an employee to bag your groceries. Not sure about you, but I like to bag my own groceries. I can put items where I want them in the bags.
  4. They also use a handy dandy pallet system (seen in my pictures below) that hold many items in one box. This makes it easier for the employees to place items on the shelves instead of individually placing one item at a time on the shelf. Again, this saves YOU money because ALDI is hiring less employees to stock their shelves!

It’s the “little” things like the cart system, self bagging, and pallet system that saves them money, and they roll that savings into their prices, making them cheaper for you and me.

If you haven’t been inside one of their stores yet, I encourage you to find one near you and go in just to see the prices on their products! It’s unreal. The cheese for example, look at those prices!

And chocolate. Oh, the chocolate…

#2 – Convenience.

Have you ever walked inside a Walmart and been totally overwhelmed due to the sheer size of the store? It’s hard to find what you’re looking for. ALDI stores are compact and easy to navigate. They have all the products you could want with the prices easy to find.

Don’t have an ALDI store nearby? Well, they’ll be adding 650 stores to 32 states in the next five years!

#3 – Better for you products.

This is another big one, guys. ALDI is known for their healthier products. While they still sell the yummy stuff like the world’s best chocolate (no, really. It’s the best), their products are more natural than most.

By the end of 2015, ALL of their products will have NO hydrogenated oils, MSG’s or certified synthetic colors. Period. Many of their products already fall into these guidelines, which is great for people who have sensitivities to products containing these things, or for those that just want to avoid them.

They have some great quality produce that they get fresh every day from regional growers, as well.

They also have these really great Specially Selected items that are a hit. One of the bloggers that toured the store with me said how amazing those cherries are below and how you can’t find them anywhere else. It’s a foodie’s dream section!

#4 – Quick, pleasant shopping experience & check out.

Going along with number two, it’s important (for me, at least) to have a quick shopping experience. I’m often dragging along at least two of my kids to the store with me, sometimes all four – so my grocery trip needs to be fast. It’s always a plus if it’s pleasant, too!

One thing that really struck me when I visited ALDI, was how quiet and serene the store was. I’m sure that sounds hokey, but it’s the truth! (and yes, there were kids in the store!) I think the reason is that you can find the products you want quickly and check out fast.

Cool fact #1 – ALDI has these super long barcodes on the back of their packaging so it will scan no matter what position. I’m a total nerd but I thought they were pretty awesome.

Cool fact #2 – The ALDI employees have these cool little seats that are ergonomically designed so they’re able to scan the groceries with ease and swiftness. In and out in minutes!

#5 – The Double Guarantee!

ALDI is known for their product satisfaction guarantee: 100% satisfaction or they’ll replace the product AND refund the money! Both. Not one or the other – both. That’s some serious confidence in what they sell. And from what I’m told, this guarantee rarely gets tested.

Those who have kids know that your life changes as soon as you have them. Your life revolves around them. Dare I say…life is taken over by them? Haha!

Let’s just say these past few months have zipped by because I’m so busy carting boys to practices and lessons. There is something going on every. single. day. Weekends have turned into no fun at all because they’re full of games, birthday parties and more games.

This weekend, we had two baseball games at the same park (yay!) at the same time. The fields were right next to each other, with a little playground parallel to it. I couldn’t believe my luck! We were able to somehow watch both boys play in their baseball games and my two little ones play on the playground.

I ran into one of my old friends at the little playground and we were commiserating about how much more busy the weekends are than the weeks. It can get crazy. But then cool things happen, like my 10-year old hitting his first home run!! So exciting!

So today, in celebration of kids, babies especially, we are celebrating the amazing Ashton from Something Swanky and her soon-to-be little man!

She has the cutest little daughter and now will be welcoming a son. It’s such an exciting time for her! To celebrate, myself and several other bloggers are throwing her a little virtual baby shower complete with lots of yummy treats! My contribution is this yummy angel cake roll.

The best part of this cake roll is that it has NO butter or oil. Seriously. It tastes just like an angel food cake but is baked in a sheet pan and then rolled into a cake roll – hence the name angel cake roll.

Then it’s filled with a creamy lemon custard-type sauce (also made with no butter or oil!). Lemon and angel cake were totally made for each other, by the way. Yep. This is a total keeper! Perfect for a spring baby shower!

Creamy Lemon Angel Cake Roll
 
A light & delicious angel cake roll filled with creamy lemon custard.

Recipe type: Dessert
Serves: about 10
Ingredients
  • 9 egg whites
  • 1 tsp. vanilla extract
  • ¾ tsp. cream of tartar
  • ½ cup + 1 Tbsp. Truvia Baking Blend (or 1 cup + 2 Tbsp. granulated sugar)
  • ¾ cup sifted all-purpose or cake flour
  • 1-2 Tbsp. powdered sugar
  • ½ cup Truvia Baking Blend or 1 cup granulated sugar
  • 3 Tbsp. cornstarch
  • 1 cup water
  • 1 egg, lightly beaten
  • ¼ cup lemon juice
  • 1 Tbsp. grated lemon peel
  • 1 cup whipped cream (can whip your own heavy whipping cream or use Cool Whip)
  • powdered sugar, for topping
Instructions
  1. Place the egg whites in a large bowl. Let stand at room temperature for 30 minutes.
  2. Meanwhile, line a 15x10x1-in. baking pan with parchment paper; lightly spray paper with cooking spray and set aside.
  3. Preheat oven to 350ºF. Add vanilla and cream of tartar to egg whites. Beat on medium speed until soft peaks form. Gradually beat in sugar, 2 tablespoons at a time, on high until stiff glossy peaks form and sugar is dissolved.
  4. Fold in flour, about ¼ cup at a time. Spread batter into prepared pan. Bake for 15-20 minutes or until cake springs back when lightly touched. Cool 5 minutes.
  5. Turn cake onto a kitchen towel dusted with powdered sugar. Gently peel off parchment paper. Roll up cake in the towel jelly-roll style, starting with the short side. Cool completely on a wire rack.
  6. In a large saucepan, combine sugar and cornstarch. Whisk in water until smooth. Cook and stir over medium-high heat until thick and bubbly. Continue cooking for 1 minute. Remove from heat.
  7. Crack your egg in a small bowl and lightly beat. Stir a small amount of the hot mixture into the egg and slowly add the egg mixture to the return all to the pan, stirring constantly. Bring to a gentle boil and pull off heat. Let cool down for a few minutes, then fold in whipped cream a little bit at a time.
  8. Unroll cake carefully and spread filling to within ½" of edges. Roll up again. Place seam side down on a serving plate. Sprinkle with powdered sugar, slice and serve! Enjoy!

If there’s one thing I could tell you about myself and my relationship with food, I would admit to being a big snacker.

It’s probably my diet downfall. I love nibbling here and there, mostly just because I can’t commit to one single thing to eat. Must eat ALL the things!

I have lots and lots of dips here on Yummy Healthy Easy. Sweet dips and savory dips. Healthy dips and not-so-healthy dips. I love them all. They all have their rightful place in my heart.

If we get invited to a party, you know I’ll be the one to bring the dip! But do you know what’s even more important than the dip? The crackers.

If you bring gross crackers…guess what? Your dip will sit there, uneaten. No joke. (I might have learned this the hard way… )

Now I only bring Breton crackers to serve with my favorite dips. Breton crackers are the bomb! They’re the best tasting crackers and are perfect for dipping. Everyone is a fan of them, too. Breton recently came out with new gluten-free flavors and I was lucky enough to be able to try them all.

The newest flavors are Herb & Garlic, Original with Flax, White Bean with Salt & Pepper and one of my favorites, Black Bean with Onion & Garlic.

All Breton crackers are certified gluten free by the National Foundation for Celiac Awareness Gluten Free Certification Program. They also taste absolutely delicious – and I’m sort of a cracker snob, ha!

In the Black Bean with Onion & Garlic flavor, beans are the main ingredient and listed first on the nutritional label. Each serving contains two grams of fiber and two grams of protein. These new crackers are also low in saturated fat, contain no artificial colors or flavors, no cholesterol and are trans-fat free. They add such a rich flavor to this Healthy Greek Dip.

You’ll never guess what this dip is made out of! The bottom layer is made from blending together a dry ranch seasoning packet with low-fat cottage cheese! Who would have thought blending those two things together could taste so good?

When it’s all blended together, you can’t taste the cottage cheese. At ALL. It just tastes like a creamy ranch dressing. But it has less calories and so much more protein. Add on some layers of cucumbers, green onions, tomatoes, kalamata olives, and feta cheese – and you have yourself the best healthy greek dip EVER!

  • 3 cups low-fat cottage cheese
  • 1 package dry ranch dressing mix
  • ½ cucumber, diced
  • 3 green onions, sliced
  • 1 tomato, diced
  • ¼ cup kalamata olives, sliced
  • ⅓ cup reduced-fat feta cheese
  • Breton Black Bean with Onion & Garlic Gluten Free Crackers
Instructions
  1. In a blender or food processor, combine cottage cheese and dry ranch dressing. Blend together until combined and smooth. Spread in the bottom of a 1.5 quart dish.
  2. Top with cucumber, green onions, tomato, olives and cheese.
  3. Serve with Breton Black Bean with Onion & Garlic Gluten Free Crackers. Enjoy!

Happy (early) Mother’s Day to all you mom’s out there!

Do you have any Mother’s Day traditions? Any plans this year? We really don’t do anything particularly exciting. Usually go to church and then hang out for the rest of the day. If I’m lucky, my husband makes me his specialty – french crepes for breakfast. Or maybe breakfast for dinner?

I’m a huge breakfast fan. I could eat breakfast for every meal. Denny’s or IHOP? My favorite restaurants. You just can’t go wrong with a plate of pancakes. Or french toast. Or muffins.

Definitely muffins. Mini muffins. Banana Chocolate Chip Mini Muffins. Oh, yeah.

They’re the perfect size to grab one or two and throw them in your mouth. These particular mini muffins are so easy to make – only 4 ingredients, without the chocolate topping. It doesn’t get quicker or more delicious!

We’d have breakfast for dinner at least once a month when I was growing up. Maybe more.

It’s funny what you remember when you get older. I have fond memories of breakfast for dinner and my mom’s muffins. My mom is the coolest lady and I’m so glad I was able to learn so many things from her. Happy Mother’s Day mom! And to all you mom’s out there – Happy Mom’s Day! Banana Chocolate Chip Mini Muffins

Serves: about 3½ dozen mini muffins
Ingredients
  • 1 (14-oz) package banana quick bread and muffin mix
  • ¾ cup water
  • ⅓ cup non-fat plain Greek yogurt
  • 1 egg
  • 1 cup mini chocolate chips, divided
  • 1 tsp. coconut oil (or canola oil)
Instructions
  1. Preheat oven to 375ºF. Spray a mini muffin tin with cooking spray or fill with muffin liners.
  2. In a large bowl, combine the muffin mix, water, yogurt, egg and ½ cup mini chocolate chips.
  3. Fill each muffin ¾ of the way full and bake for 12-15 minutes, until toothpick inserted comes out clean. Take muffins out of tin and allow to cool.
  4. If you want chocolate topping: In a small bowl, microwave the other ½ cup mini chocolate chips and coconut oil until melted and smooth when stirred. Top each muffin with chocolate.
  5. Eat and enjoy!

If you follow me on Instagram, you know that I got to spend the weekend before last in Palm Springs with some of my favorite girlfriends! It was ridiculously fun.

I felt guilty about leaving since I had just (no, seriously JUST) come home from Chicago the day before and Santa Barbara the weekend before that (THREE trips in ONE week, guys!). My husband is a good sport and let me go.

So when I was in Palm Springs, I was chatting with my friend Emily on the way to the outlets and she was telling me about a recipe that her family loves. She said it wasn’t the healthiest but maybe I could fix it and give it a YHE spin.

So I took the challenge. Of course I did! Her recipe was for balsamic chicken sandwiches. Sandwiches sound amazing but add unnecessary carbs. So I threw the sandwich idea aside.

Also, her recipe had a lot of brown sugar in the balsamic sauce. I subbed Truvia Brown Sugar Blend in its place and the sauce was ah.maz.ing. I pan cooked the chicken and let it simmer in the sauce until cooked through and tender and then I baked it with a slice of mozzarella cheese, a sprig of basil and a slice of tomato on top. My boys absolutely loved this balsamic chicken recipe!

The chicken is tender and the caprese combo on the top is like icing on the cake. It adds so much flavor. If you try one dinner on YHE, try this! It is so delicious!

Caprese Balsamic Chicken Recipe

Easy balsamic chicken recipe with a caprese twist on it!

Serves: 4-6 servings
Ingredients
  • 2 lbs. chicken breasts (about 5-6 pieces)
  • salt and pepper
  • 3 Tbsp. olive oil
  • 2-3 cloves minced garlic
  • 1 cup low sodium-chicken broth
  • ½ cup balsamic vinegar
  • 3 Tbsp. Truvia Brown Sugar Blend (or about 6 Tbsp. brown sugar)
  • sliced tomato
  • sliced mozzarella
  • fresh basil
Instructions
  1. In between two pieces of plastic wrap, pound chicken breasts to ½" thick. (Mine were large, so I cut them in half). Salt and pepper both sides.
  2. Heat oil in saucepan on medium-high. Brown chicken on both sides. Reduce heat to medium-low and add garlic.
  3. Cook until garlic is tender, being careful not to burn it. Add broth, balsamic and Truvia. Turn heat up to medium-high and simmer for 10-12 minutes, covered until chicken is cooked through.
  4. Preheat broiler. Line baking sheet with parchment. Place each chicken piece on baking sheet. Place a sprig of basil on top of each breast then cover with a slice of mozzarella.
  5. Broil until cheese is slightly melted. Add tomato slice on top. Heat again until tomato is warm and cheese is melted. Serve as is or with a little extra sauce from the pan drizzled on top. Enjoy!

Happy Cinco de Mayo!

I wanted to post this yummy agua fresca recipe yesterday but I had to recover from my weekend. And no, I’m not a crazy partier. But I do have four boys. It’s crazy town in this house. Especially on the weekends.

You know how most people are like “YES! It’s Friday! Time for some relaxation!”

I’m over here going, “Nooo! Not the weekend!”

Not that some weekends aren’t fun and relaxing, but with two out of four boys in baseball right now, we have two games every Saturday (always at different parks at different times and my oldest’s are just about 3 hours long!) plus practices on Sunday as well as church. Then there’s always a random Birthday party to go to, baby shower, etc.

This last weekend we had a baseball practice & football pre-season party on Friday after school, then two baseball games (which just about spanned the entire Saturday), church on Sunday and we hosted a church get together that night at our house. So busy!

The plus of the weekend? We were invited by one of my husband’s old work acquaintances to go to the Clipper’s game 4 of the playoffs – it was so fun!

We got to hang out in the suite and watch the Clipper’s play a great game, right up until the end when they won by two points! So our weekend was busy – but fun, too. (Isn’t my guy the cutest?!) Also, kids are a LOT of work but SO worth it!

But back to this agua fresca recipe… I made these with my boys between baseball games. Have you ever made an agua fresca? They are so easy and refreshing.

I had strawberries in my fridge so I blended them up, added some of my standby sweetener,  Truvía®, strained out the seeds then added lemon-lime soda. Quick, easy and perfect for a hot afternoon, Cinco de Mayo, or just about any other day of the week. Enjoy!

Strawberry Agua Fresca

Recipe type: Drinks
Serves: about 5 cups
Ingredients
  • 2 cups strawberries, hulled and cut into chunks
  • ¼ cup Truvía® natural sweetener
  • 1 cup water
  • 3 cups lemon-lime soda
  • lime, for serving - optional
  • mint, for serving - optional
Instructions
  1. In a blender or food processor, mix strawberries, Truvia and water.
  2. Pour mixture into a fine strainer to get rid of seeds.
  3. When drained and rid of seeds, pour strawberry mixture into a pitcher. Add in lemon-lime soda and limes & mint if desired.
  4. Pour into glasses and serve with ice. Enjoy!
Notes
*can substitute ½ cup sugar for Truvia if desired)
*Can also refrigerate strawberry mixture prior to mixing with soda.

Summer is coming up! It felt like it today, as I was sitting at my son’s baseball game. It was 8:30am (way too early for a baseball game, if you ask me!) and I was slathering the sunscreen on myself and my boys. It was so blasted hot! I’m excited to have my boys home for the summer and love how summer brings friends and family together. Everyone wants to be outside together, eating and playing. You can always use some new recipes for summer, right?

Can we talk about something near and dear to my heart?

Casseroles. They’re the most underrated dinner, in my humble opinion. They’re easy to make, versatile to ingredients you have on hand, and can feed a group. You know what else is underrated? Dried beans and lentils… aka pulses.

When was the last time you bought a bag of dried lentils or chickpeas and cooked them at home? They’re much cheaper than canned versions (especially lentils! They’re almost $4.00 a can in my store!) and so healthy.

 

Why are pulses so awesome? Here are some pulse facts:

They’re gluten-free, sodium-free and cholesterol-free, with a low glycemic index and load. They’re high in protein, making them a great source of nutrition for vegans and vegetarians. One ½ cup serving of pulses offers 7 to 9 grams of protein, or 15 percent of your recommended daily intake. One serving of lentils has twice as much protein as quinoa!

Pulses are also high in fiber. On average, one ½ cup serving of pulses delivers ¼ of your recommended daily fiber intake. The antioxidant content of lentils is twice that of blueberries, and three times that of pomegranate juice! Go figure! Pulses are also high in essential nutrients like folate, iron and potassium. Chickpeas contain 3x more folate than kale and more than twice as much iron as chicken.

So now you know my two obsessions: casseroles and dried beans and lentils (pulses) and you can see why I’m obsessed. So many nutritional values in pulses and yet they get overlooked in recipes, am I right?

Well, today I’m combining my two loves into one: Healthier Sloppy Joe Casserole. This American dinner comfort food staple gets a healthy redo. It’s filled with pureed vegetables, (your kids won’t even know they’re there!) lean ground turkey and one of my favorite pulses – chickpeas, then topped with a yummy biscuit topping. My boys love this healthy dinner!

Why am I talking about pulses so much today? Well, each year the United Nations picks a topic of global interest – and they named 2016 to be International Year of Pulses!

Pulses were selected because of their significant health, economic and environmental benefits. Gearing up for 2016, each country was charged by the UN to submit one pulse recipe to represent their country. The USA Dry Pea and Lentil Council, which is the body selected by the UN and Global Pulse Confederation to manage International Year of Pulses in the U.S., reached out to me to develop a recipe to be in the running. You guys – I’m so excited about this!

Healthier Sloppy Joe Casserole

Serves: 10 (1 cup) servings
Ingredients
  • 1 8-ounce package mushrooms
  • 3 cloves garlic, peeled
  • 2 carrots, cut into chunks
  • 1 medium sized onion, cut into chunks
  • 1.25 pound lean ground turkey
  • 1½ cup ketchup
  • 2 tsp. prepared mustard
  • 1½ Tbsp. light brown sugar
  • 1 tsp. salt
  • ½ tsp. pepper
  • 1½ cup cooked chickpeas (directions for cooking dried beans below)
  • 1 cup baking mix (I used Bisquick brand)
  • 1 egg
  • ½ cup milk
Instructions
  1. Preheat oven to 400 degrees fahrenheit. Spray a 2.5 quart casserole dish with cooking spray.
  2. In a food processor, blend together mushrooms, garlic, carrots and onion until smooth.
  3. Break up ground turkey in a large saucepan over medium heat until no longer pink. Add in the pureed vegetables, stirring to combine. Mix in the ketchup, mustard, brown sugar, salt and pepper. Cook until warmed through. Stir in cooked chickpeas.
  4. In a small mixing bowl, mix together baking mix, egg and milk until smooth.
  5. Pour turkey mixture into an even layer on the bottom of prepared casserole dish. Pour baking mix over turkey and smooth out to create a flat top. Place in preheated oven and bake for 15-20 minutes, until top layer is cooked through and golden brown.
  6. Cut into squares and scoop out onto plates. Serve and enjoy!
Notes
How to cook dried chickpeas: Place chickpeas in a large bowl and cover completely with cold water. Allow to soak overnight, about 12 hours. Once the chickpeas have soaked, drain them and transfer to a large cooking pot. Cover with water twice the amount of beans and bring to a boil. Cover and allow to simmer for approximately one hour. Do a taste test to make sure they are tender enough for your liking. Drain and allow to cool for 15 minutes. Once chickpeas are cooled they are ready to be used. Cooked chickpeas can keep covered in the refrigerator for up to three days.

Happy Hump Day! It got up into the 80’s yesterday (I’m not ready for that kind of hot!). But overall, just really starting to feel like spring here. What’s the weather like where you live?

Since it’s finally almost May, it’s asparagus season! I’m loving all the green bundles of asparagus at the grocery store – yum! It’s one of my favorite veggies. When I saw asparagus on this month’s Mystery Dish ingredient list from Krista at Inspiration Kitchen, I knew right away I had to make a recipe using it.

Here are her ingredients: Apricots, Asparagus, Vidalia Onions, Fennel/Tarragon, Chicken, Puff Pastry, Coconut, Cashews, Chocolate and Pineapple.

So of course, asparagus right? I’ve always wanted to make an asaragus tart so I thought, what the heck? Why not? So I used puff pastry and onions from the list to make seriously one of the best things I’ve ever eaten/made. I love this tart so much!

If you’ve ever felt nervous about making a tart because it looks complicated, believe me – it’s not! It’s super easy. The best part is that you don’t have to cook the asparagus ahead of time, it cooks right on top of the tart. Plus the cheeses mix together make one heck of a filling and the onions add such great flavor.

Ricotta Asparagus Tart

Serves: 1 tart (about 8 servings)
Ingredients
  • 1 sheet frozen puff pastry, thawed
  • 1 cup part-skim ricotta cheese
  • ⅓ cup grated parmesan cheese
  • ⅓ cup grated romano cheese
  • juice from ½ a lemon
  • ⅓ cup chopped parsley
  • ½ tsp. salt, or more to taste
  • ¼ tsp. pepper, or more to taste
  • ½ vidalia onion, sliced extra thin into circles
  • 1 bunch asparagus, about 1 pound - bottoms trimmed
Instructions
  1. Preheat oven to 400ºF. Roll out pastry to a 9x13" rectangle. Fold edges over a bit to create a crust. Move to a parchment-covered baking sheet. Prick a few times with a fork. Place in preheated oven for 10 minutes.
  2. Meanwhile, combine ricotta, parmesan, romano, lemon juice, parsley, salt and pepper in a small mixing bowl. When pastry is done, spread ricotta mixture over the crust. Spread a thin layer of onion circles over ricotta and then line asparagus over the onions.
  3. Bake until pastry is golden brown and asparagus is tender, about 30 minutes. Slice into long pieces, serve and enjoy!

Not to be dramatic, but you guys… I just took three separate trips in one week. THREE!!!!

One trip to Santa Barbara. One trip to the ALDI test kitchens in Chicago (more to come on this!). And one fun girls trip to Palm Springs! It’s been a whirlwind of a week but in a nutshell – I had a great time but am completely behind. And happy to be home.

That being said, between those trips, I had the opportunity to whip together some of the most amazing chicken burgers I’ve ever had. I’ve done some recipe development on chicken burgers several times and feel like I finally created the yummiest, most juiciest recipe ever. Guacamole Chicken Burgers!

My boys LOVED these. It’s such a great basic chicken burger recipe, but then you add guacamole and BAM. Best ever chicken burger ever! I hope you give this recipe a try… even if you’re busy traveling and/or busy, this is a quick one that takes little time and tastes amazing. Happy Monday!

Easy Chicken Burgers with Guacamole

Serves: 4 burgers
Ingredients
  • 1 lb. lean ground chicken
  • ¼ cup green onions, chopped (about 3-4)
  • ⅓ cup cilantro, chopped
  • 1-2 garlic cloves, minced
  • ½ of a lime, juiced
  • ½ cup white cheddar cheese (I used Cabot Farmhouse Reserve aged cheddar cheese)
  • 1 tsp. cumin
  • ½ tsp. paprika
  • ¼ tsp. salt (or more if needed)
  • ¼ tsp. pepper
  • 2 medium avocados, smashed with a fork
  • 1 tomato, diced
  • lawry's season salt
  • pepper
  • ¾ tsp. lime or lemon juice
  • hamburger buns, for serving
Instructions
  1. Combine chicken, green onions, cilantro, garlic, lime juice, cheddar, cumin, paprika, salt and pepper in a mixing bowl. Mix lightly and then divide into 4 patties.
  2. In a separate bowl, combine smashed avocados, diced tomato, Lawry's, pepper and lime or lemon juice. Set aside.
  3. Barbecue patties on the grill or on a hot pan on the stove top until cooked through. Serve on buns with reserved guacamole. Enjoy!
