There’s something great about being able to stuff a vegetable with healthy stuff. Makes me feel like a wizard. Is that silly? I get this crazy, giddy feeling when I make up a recipe that not only tastes great but is healthy too. (Picture me standing at the oven, doing a happy dance when I see how good the recipe turned out. Yep, that’s what I do!)

I’ve stuffed everything from burgers, bell peppers (and a stuffed pepper casserole, too), pasilla peppers, acorn squash, and even tomatoes. But I haven’t stuffed zucchini – until today! I’m really excited about this recipe!

It’s super healthy but tastes almost like, dare I say, pizza? Even with the southwestern flavors in this, I think stuffed zucchini with a bit of tomato sauce in it tends to taste like pizza. So maybe this tastes more like a taco pizza?? Ha!

Either way, it is so delicious. I ate half of this pan. I saved a little for my husband, because I’m nice like that. So many yummy flavors all tucked into one pan of zucchinis. It’s high protein, vegetarian and delicious. Do yourself a favor and harvest those summer zucchini in your garden and make yourself some Black Bean & Quinoa Stuffed Zucchini. You won’t regret it!

Black Bean & Quinoa Stuffed Zucchini

A hearty and easy meatless side dish or dinner that's gluten-free and clean-eating!

Serves: 6 stuffed zucchini
Ingredients
  • 3 medium zucchini
  • ½ cup cooked quinoa
  • ½ cup low fat cottage cheese
  • 1 (8-oz) can tomato sauce
  • ½ cup black beans, drained and rinsed
  • 1 tsp. cumin
  • ½ tsp. chili powder
  • ¼ tsp. onion powder
  • ½ tsp. salt
  • ¼ tsp. pepper
  • ½ cup shredded cheese
Instructions
  1. Preheat oven to 350ºF. Spray a casserole dish with cooking spray.
  2. Heat zucchini for 5 minutes in the microwave. Set aside to let cool.
  3. Mix cooked quinoa, cottage cheese, tomato sauce, black beans, cumin, chili powder, onion powder, salt and pepper in a bowl.
  4. Cut each of the cooled zucchini in half and scrape the seeds out of the insides using a spoon.
  5. Fill each zucchini half with the black bean/quinoa mixture and place in baking dish.
  6. Bake for about 40 minutes. Add the shredded cheese and bake until cheese has melted, about 5 minutes or less. Serve and enjoy!

I jumped on the smoothie bowl bandwagon! Have you seen/made one yet? They’re all the rage on Pinterest these days!

I got on a huge smoothie kick after buying a really fancy, expensive blender. My husband and I would make green smoothies every night for breakfast the next day (he leaves the house really early so didn’t have time to make them before he leaves).

And then one day, I got totally fed up with smoothies. Especially green ones. I’m a foodie for goodness sakes! I need food. REAL food. Not food from a straw, you know what I’m sayin’? So then our fancy expensive blender sat there gathering dust on our countertop.

Then, as I was browsing Pinterest as I love to do, I saw a smoothie bowl recipe and I thought this is perfect! It’s the best of both worlds – healthy smoothie + food on top = happy foodie!

You guys, this tropical smoothie bowl recipe is just amazing. I’m obsessed. I blended up frozen tropical fruit, half a frozen banana, tofu (for added protein), a little honey to sweeten, and Vanilla CashewMilk. Poured that in a bowl and layered the top with cut up fruit, sliced almonds, coconut and chia seeds. It’s seriously the best breakfast I’ve ever had!

Another thing I’m obsessed with? The new CashewMilk. My oldest isn’t a big milk drinker. He’s my only one out of four that just doesn’t like milk. I bought a carton of Vanilla AlmondMilk and he couldn’t stop drinking it. But I think this new CashewMilk is even better! They have a new Chocolate and Vanilla flavor. Both are so delicious. Serves: one large smoothie bowl
Ingredients
  • 1 cup frozen tropical fruit (strawberries, pineapple & mango mix)
  • ½ of a frozen banana
  • 6 ounces soft tofu (I used half of a 12 ounce box of tofu)
  • honey or agave to sweeten, I used about 1 Tbsp.
  • ½ cup Vanilla CashewMilk
  • sliced fruit for topping, such as strawberries, kiwi, peaches & blueberries
  • sliced almonds, shredded coconut & chia seeds, for topping
Instructions
  1. Blend frozen fruit, tofu, honey and CashewMilk in a good blender. Taste and add sweetener and more CashewMilk if needed.
  2. Pour smoothie mixture into a bowl. Top with sliced fruit, almonds, coconut and chia seeds.
  3. Serve and enjoy!

Use up that summer zucchini and satisfy your sweet tooth with this Double Chocolate Zucchini Bread. An easy quick bread everyone will rave over!

Every couple weeks, I get this hankering (is that a word?) for a loaf of quick bread. It’s no secret I’m the carb queen. I love me some bread. But I think quick breads are even better than regular bread. Not only do they live up to their name of being “quick” and take little time to whip together but they’re sweet, comforting, and satisfy your sweet tooth.

I love this recipe because it has double the chocolate. Chocolate chips and melted chocolate both folded into the batter. I really like that it’s not made with cocoa powder but melted unsweetened chocolate. It gives this chocolate zucchini bread bread more of a light, real chocolate flavor.

And then there’s zucchini. It’s like a penny a pound at the grocery stores these days. Okay, I’m being sarcastic but really it’s always on sale and screaming “buy me, buy me!” whenever I walk by it in the produce aisle. If I was cool, I’d be growing some in my yard like a lot of my friends but sadly, I can’t keep even one of those little basil plants you buy, alive. I have a hideous black thumb.

It’s kinda cool to sneak a veggie into something chocolatey and my kids have no clue. Muahaha! And it makes me feel better when I eat ten slices because of course it’s filled with vegetables!

Double Chocolate Zucchini Bread

Serves: 2 loaves
Ingredients
  • 2 (1 ounce) squares unsweetened chocolate
  • 3 eggs
  • 1 cup Truvia Baking Blend (or 2 cups sugar)
  • 1 cup coconut oil or canola oil
  • 2 cups grated zucchini (about two zucchinis)
  • 1 teaspoon vanilla extract
  • 2 cups white whole wheat flour
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 teaspoon ground cinnamon
  • ¾ cup chocolate chips
Instructions
  1. Preheat oven to 350ºF. Lightly grease two 9x5 inch loaf pans.
  2. Microwave chocolate until melted, stirring occasionally until chocolate is smooth.
  3. Grate zucchini and place on paper towels.
  4. In a large bowl, combine eggs, Truvia or sugar, oil, grated zucchini, vanilla and melted chocolate. Stir in the flour, baking soda, salt and cinnamon until just combined. Fold in the chocolate chips. Pour batter equally into prepared loaf pans.
  5. Bake in preheated oven for 60 to 70 minutes, or until a toothpick comes out clean. Let cool for about 10 minutes and then dump out carefully onto cooling rack.

Your next BBQ cries out for this Tropical Chicken Bowtie Pasta Salad! It’s easy, with few ingredients and has both sweet and savory elements and textures, making it a great side dish.

Two things on my mind today:

  1. I’m over The Bachelorette. Although I keep watching for some reason. OMGosh did you see the men tell all on Monday?! So. Much. Drama.
  2. I’m also over summertime and not having air conditioning in my house! Every day this week has been a million degrees with zero breeze. Ugh.

So…The Bachelorette. Do you watch it? Have you seen this train-wreck of a season? Geez. It’s been one dramatic episode after another. But, sigh. I’ve been sucked in. Kaitlyn has cried on every. single. episode. Every single one, guys! So much fighting, kissing, (and more than kissing, ahem) even a bromance happened this time around. Drama, I tell you! Next week is the finale and we will see if Nick or Shawn propose to Kaitlyn. I’m thinking Nick but spoilers say it’s Shawn so we will see!

And how about that weather? What’s it like where you’re at? It’s been great up until this week. I’ve sweltered inside my house. We’re lucky to live near the beach but we don’t have air conditioning. We have central heat because it does get a little cold but no AC. It’s usually not bad because we have so many windows and we get a nice breeze but this week seems breezeless (is that a word?!). So this momma has been running random errands around town just to get the heck outta the heat and into some AC!

The heat also means I do NOT feel like cooking. Or at least turning on my oven and heating up my entire house. So I’ve turned to the grill this week. And pasta salad, because who doesn’t like pasta salad?

This recipe comes from an old cookbook my mom put together for a church function. I can’t say I remember her making it when I was a kid but it must have been from in my family somewhere along the line. It’s incredibly easy because the creamy sauce is made from coleslaw dressing in the bottle. Probably not the healthiest choice but when you’re in a rush, this is great. It makes the salad creamy and adds a touch of sweetness that really goes well with the fruit and chicken.

A couple things that are great about this chicken bowtie pasta salad is that: 1) it’s creamy 2) it’s easy to make 3) includes 3 different kinds of fruit 4) it’s sweet and savory, which is a nice change from a “regular” pasta salad 5) it makes a big batch and lasts in the fridge for several days – which also means: great leftovers!! I hope you like it as much as we do!

Tropical Chicken Bowtie Pasta Salad
 
An easy Tropical Chicken Bowtie Pasta Salad with both sweet and savory elements and textures, making it an incredible side dish!
Author:
Recipe type: Side Dish
Serves: about 8-10 (one cup) servings
Ingredients
  • 1 (1-lb) box bowtie pasta
  • 1 can pineapple tidbits, drained
  • 1 can mandarin oranges, drained
  • 1½ cups halved seedless grapes
  • 1 cup sliced celery
  • 3 green onions, sliced
  • half of a 16-oz bottle coleslaw dressing (I used Hidden Valley brand)
  • 3 chicken breast thin fillets, cooked and diced - I grilled mine but you can cook on the stovetop or use rotisserie chicken meat
Instructions
  1. Cook bowtie pasta according to package directions.
  2. Meanwhile, cook chicken. I salt and peppered mine and grilled it, let it rest for a few minutes and then diced into chunks. But feel free to cook chicken however you'd like!
  3. Cut up grapes, celery and green onions. When pasta is finished cooking, drain and rinse with cool water. When thoroughly drained, pour into large mixing bowl.
  4. Add in cooked chicken, and remaining ingredients, stirring coleslaw dressing in until its combined.
  5. Serve right away or chill for a few hours and then serve.
  6. Store in a large air-tight container in the refrigerator. Lasts for several days in the fridge - can add a little extra coleslaw dressing to add moisture after a day or two. Enjoy!

Okay, I know that you know that I big fluffy heart Panera Bread. It’s no secret. After all, I talk extensively about it in THIS post. What’s not to love? When I walk in to their cafe, I feel happy. It’s clean, smells good, yummy bakery items are calling my name, and their menu speaks to me.

Who wouldn’t go crazy for a menu full of hearty, delicious, “clean” food? If you haven’t already heard, Panera is on a journey to serve clean foodIf you’re unfamiliar with the term “clean food”, in a nutshell it means food does not have artificial colors, sweeteners, flavors and preservatives. Panera is ahead of the game and has already started eliminating those things from their menus! They’ve committed to removing all by the end of 2016!

As a firm believer in eating healthy and clean as much as possible, this makes me very excited. Panera wants to be an ally for wellness for the millions of guests they serve each week. They recently launched new branding and tagline: “Panera Bread. Food as it should be.” Yup.

You know what? They’ve removed artificial colors, sweeteners, flavors and preservatives from the cafe salad dressings they serve, too. I love that because I think their dressings are better than ever now!

Speaking of salads and dressings, I had the pleasure of eating at Panera again last evening. This time I brought my hubby for date night. Last time I went, I had the Mediterranean Chicken & Quinoa Salad so this time I wanted to try something different. I ordered the Power Kale Caesar Salad with Chicken and my husband got the Strawberry Poppyseed & Chicken Salad.

I’m not sure which I liked more! I loved the kale mixed into the caesar. It was very hearty and had these yummy round crouton things mixed in. I absolutely loved the classic caesar dressing, too. The best part about both salads (my husband agrees) is the chicken. It’s thinly sliced and really tender. I would love to get my hands on the recipe they use!

The Strawberry Poppyseed & Chicken Salad was not what I was expecting. It was full of strawberries, pineapple, mandarin oranges and blueberries over greens and tossed in a sweet dressing. Needless to say, my husband and I ended up switching salads because I liked his so much! I love fruit in green salads and sweet dressings. I like to eat colorfully — not just greens, but yellows, reds and blues too. The brighter the better!

Both salads were incredible. I can’t wait to try the Fuji Apple Chicken Salad, BBQ Chicken Salad and the Thai Chicken Salad. Those are next on my list.

A couple weeks ago, I got to attend this fun little grilling event in Los Angeles. I was shown how to grill the perfect burger on those new darling Weber Q1200 grills! It was a blast and I learned some valuable tips on grilling meat.

But what I didn’t expect to learn, was how you can cook a million other things on your grill. Have you ever grilled an avocado? Yeah, me either until then. Practically anything can be grilled – even dessert!

So I decided to try it out for myself. I bought some fresh peaches and raspberries from my local farmers market. I pulled out my Truvia Brown Sugar Blend, and some yogurt and got started.

I preheated my grill then cut my peaches in half and took out the pits. Then I brushed the peaches with a little melted butter and placed the skin side on the preheated grill. I cooked that side for about 4-5 minutes. Then I flipped it over to the flesh side and cooked for a few minutes and then carefully pulled the fruit up and sprinkled with Truvia Brown Sugar Blend and placed back on the grill. In just another minute, the brown sugar caramelizes and transforms the peach to become the most delicious dessert you’ve ever had.

The brown sugar gives the fruit such a delicious caramelized yumminess. I love the grill marks on the fruit. I kid you not, these peaches are one of my favorite desserts. They are insanely delicious. The flavor the grill brings out is wonderful! Juicy, flavorful, healthy and so easy to clean up! No dishes that need to be cleaned. Booyah!


Grilled Peaches with Yogurt & Brown Sugar
 
This healthy & easy grilled peaches dessert will blow your mind!

Ingredients
  • 2 peaches
  • 2 tsp. melted butter
  • 2-4 tsp. Truvia Brown Sugar Blend
  • ¼ cup low-fat vanilla yogurt
Instructions
  1. Preheat the grill to medium-low heat. Cut the peaches in half and take out the pits.
  2. Brush the peaches with the melted butter and place the skin side on the preheated grill.
  3. Cooked that side for about 4-5 minutes. Then flip it over to the flesh side and cook for a few minutes, until it's starting to get tender.
  4. Carefully pull the fruit up and sprinkle the flesh with Truvia Brown Sugar Blend and place back on the grill.
  5. Wait about another minute, until the brown sugar caramelizes and then gently pull off the grill and let cool for a few minutes. Serve with a scoop of yogurt inside and an extra sprinkle of brown sugar on top. I like to eat with a few raspberries as well. Enjoy!

I went on the best family vacation of my life. My husband had 10 glorious days off of work. TEN! I hardly worked out and ate like a pig most of the time.

I came back to reality and then stepped on the scale. Remind me never to weigh myself. ever. again. So yeah, it’s back to drinking a million gallons of water every day (I hate water) and eating salads with lunch and dinner (not a salad person).

But what’s this I share with you today? Yep that, my friends, is a salad. But it’s the best salad I think I’ve probably ever had in my entire life. Why? Because it’s a salad bowl.

Salad Bowl recipes are the best salad recipes EVER. Where have these been all my life?! I mean, seriously though. I love how you can layer a bunch of ingredients into one salad bowl, drizzle with a little dressing and BAM. A salad that’s pretty and tastes good too. Win-win!

I made a quick and easy basil vinaigrette to drizzle over the whole salad. It’s full of flavor and really simple to make. I mixed mine in the Vitamix and that was it. One step and it’s done.

I marinated my chicken in a fast 3-ingredient marinade for about 15 minutes and then grilled it and sliced it up. The marinade really tenderizes the meat and gives it lots of flavor. Plus I’m obsessed with grilling. It’s so easy and the clean up is always quick. Feel free to skip this step and pan-sear your chicken or use rotisserie chicken if you’d like.

As for the rest of the salad, I added some cooked quinoa, fresh raspberries, sliced almonds, feta cheese, green beans and Earthbound Farm Organic Kale Italia salad mix.

Let me first say, I’m a huge Earthbound Farm fan. I love all their fresh, organic salad mixes. The Kale Italia is the newest of the Deep Green Blends and it is awesome. It’s a combination of mildly bitter baby kale, gently peppery baby arugula, bold mizuna and ruby red radicchio.

It pairs perfectly in this salad bowl recipe! I love the different flavors the greens bring out in the basil vinaigrette and the other yummy parts of the bowl. This is a healthy, filling meal that you and your scale can feel good about!

Chicken, Quinoa & Kale Salad Bowl Recipe with Easy Basil Vinaigrette

Ingredients
Quick & Easy Chicken Marinade:
  • 2 Tbsp. olive oil
  • juice from ½ lemon
  • 2 tsp. dry Italian seasoning mix
  • 2-3 chicken breasts, cut into tenders
Basil Vinaigrette Dressing:
  • ¼ cup apple cider vinegar
  • 2½ Tbsp. honey
  • 1 cup olive oil
  • 2 cloves garlic
  • ¼ cup fresh basil leaves
  • salt & pepper
Salad Bowl:
  • Earthbound Farm Kale Italia Mix
  • ¼ lb. fresh green beans, with the ends trimmed
  • sliced almonds
  • reduced fat feta cheese
  • cooked quinoa
  • raspberries
Instructions
  1. Mix together marinade ingredients in a large plastic bag and add chicken. Let sit on the counter while you prepare dressing and green beans.
  2. Dressing: Blend the dressing ingredients above into a good blender or food processor. Blend until mixed and fully combined.
  3. Boil 2 inches of water in a medium sized pan. Salt the water and add the green beans. Cook for about 4 mins (until crisp-tender), rinse and soak in ice water until cooled. Drain and set aside.
  4. Grill chicken (or can use either grill pan or cook on stove-top if you don't want to grill), using extra marinade to brush chicken with. Grill until internal temperature registers 160º. Set aside for a few minutes. Then slice into thin slices or cubes.
  5. In your salad bowl, create a pie effect (like pictures show) by adding cooked quinoa, raspberries, sliced almonds, feta cheese, cooled green beans, chicken and Earthbound Farm Kale Italia greens in "pie slices" around the bowl.
  6. Drizzle with basil dressing, serve and enjoy!

When I was a kid, my mom would cut up a tomato and put a little salt and pepper on it and serve it to us with our dinner. I remember hating eating tomatoes like that. It’s supposed to be a fruit but it’s not sweet, so as a kid it goes right into the vegetable category. Ha!

But then I grew up and now I can’t get enough of them. I buy two containers of cherry tomatoes every week and keep them on the counter to snack on during the day. They’re so sweet and crunchy.

My husband and I have always enjoyed caprese anything. (Have you tried my Caprese Balsamic Chicken? So good!) On the weekends while we’re preparing dinner, I like to cut up a tomato or two, some mozzarella and basil and put it on a plate and drizzle it with balsamic vinegar for an appetizer. It’s healthy and tastes so good.

The other day, I asked my husband what he wanted for dinner and he mentioned making caprese skewers. I’d never really thought about putting them on skewers but thought it would be fun for the kids to help with.

So I put my kids to work putting the skewers together. They’re like the easiest things in the world to make. While they were doing that, I reduced some balsamic vinegar on the stovetop. Have you ever done that before? It’s crazy how much better it tastes when you do! The balsamic vinegar becomes thicker and the flavor is much more intense. I could drink the stuff.

I drizzled the balsamic reduction over the caprese skewers and then we ate every last bit of them. It’s a fun snack to bring to a potluck or to make when you have guests coming over. Or just to make as a side dish with your burgers. Plus, everything is cuter on a stick, right?!


Easy Caprese Skewers with a Balsamic Reduction Drizzle

Recipe type: Snack, Appetizer
Ingredients
  • cherry tomatoes
  • fresh mozzarella, cut into cubes (I used Bel Gioioso brand)
  • fresh basil leaves
  • 1 cup good balsamic vinegar
  • wooden skewers
Instructions
  1. Thread cherry tomatoes, mozzarella cubes, and basil leaves onto skewers, repeating until the skewer is filled. Repeat until you get the amount of skewers you want.
  2. Place balsamic vinegar in a small saucepan. Bring to a simmer on medium-heat and then turn down heat to a low simmer. It will take about 10 minutes to thicken and reduce. Keep a close eye on it so it doesn't burn. When it coats a spoon, it's finished.
  3. Take off heat and let cool for a few minutes. Drizzle over the skewers and serve. Enjoy!

My diet downfalls:

I start out on a diet plan and then wonder why the scale isn’t lowering and these three above reasons always come into play. Ha!

For one, I cook. A LOT. Yes, I predominately make “healthy” stuff, but I love sweets! I find that I actually enjoy baking more than cooking. But I think that’s pretty normal, right? So, I try not to bake. Or at least I try not to bake as much as I cook. Because baking leads to what I call, “dessert grazing”. The definition basically being that if there’s a dessert sitting around, I won’t cut off a slice of cake, or a square of brownie, but will eat a forkful here and there. Aka, graze at the dessert all. day. long. Which leads to my diets never working. Sigh.

My solution? Peanut Butter Oat Balls! These little guys are super simple to make and help you with portion control. They’re pretty filling too, so usually one ball will tide you over. They’re absolutely delicious and are a favorite everyone loves.

Peanut Butter Oat Balls
 
No-bake peanut butter oat balls - a great little snack or dessert!

Serves: about 12 balls
Ingredients
  • 1 cup quick oats
  • ½ cup peanut butter
  • 1 Tbsp. ground flax seed
  • 2 Tbsp. wheat germ
  • ⅓ cup honey
  • ½ cup mini baking M&M's or mini chocolate chips
Instructions
  1. Mix all the ingredients together either in a mixing bowl with a spoon or a Kitchen-Aid mixer with paddle attachment. Place mixture in refrigerator for about 15 minutes, or until chilled enough to roll into balls without being too sticky.
  2. When chilled and not as sticky, roll into balls and place on a piece of parchment paper on a plate and place in refrigerator, until set.
  3. Can now place balls in an airtight container in the refrigerator and eat at your leisure. :) Enjoy!

I’m behind in sharing this yummy recipe with you because I had too great of a weekend! Our 4th of July was so fun. We hung out at the beach all day long and then watched the fireworks on top of our suburban. The perks of having a big car! We just had my two little guys since Justin is in Utah visiting his dad and Chance went to his friends cabin for a few days. Brock and Tate loved the fireworks, even though they were absolutely exhausted and passed out on the way home afterwards.

I couldn’t have asked for a better holiday – it was great! Cory goes back to work tomorrow and I’m sad about it. It’s been great to have him home with us for the last 10 days.

It will be nice to get back on a schedule though. And back to healthier eating. I’ve had a cold for the last few days. All of my boys had it and right after we got home from our Palm Springs vacation, I caught it. (Eye roll here.) Thanks a lot kids.  I’m just now starting to feel a little better. I had to tough it out through the last few days and pretend I wasn’t entirely stuffed up and miserable.

I wasn’t very hungry for the first few days of my cold but just wanted to snack more than eat big meals. These homemade healthy granola bars saved the day. They surprisingly fill you up but taste like a dessert. It’s the best of both world’s for me. They’re healthy, filling and delicious. They’re soft and chewy too. Better for us old people with bad teeth that can’t handle the crunchy kind of granola bars.

What’s great about these homemade granola bars, is that my kids will actually eat them. They have no clue that they’re eating something that’s much healthier than pop-tarts – haha!

I added dried cranberries to these but feel free to omit them or add in something else you like instead. Other dried fruit or even chocolate chips for an added treat, would be delicious.

These homemade healthy granola bars are great to make at the beginning of the week and eat all week long! Perfect for breakfast, a quick snack or dessert. You will love having this quick snack to grab when you’re hungry!


Homemade Healthy Granola Bars

Ingredients
  • 2 cups old fashioned oats
  • ½ cup Truvia Brown Sugar Blend (or about ¾ - 1 cup light brown sugar)
  • ¼ cup wheat germ
  • ¼ cup ground flax seed
  • ½ Tbsp. ground cinnamon
  • 1 cup white whole wheat flour
  • ½ cup dried cranberries (can substitute with other dried fruit or omit if desired)
  • ½ tsp. salt
  • 1 egg, lightly beaten
  • ½ Tbsp. vanilla extract
  • ¼ cup applesauce
  • ¼ cup honey
  • ½ cup canola oil
Instructions
  1. Preheat oven to 400ºF. Spray a 9x13 generously with cooking spray.
  2. In a large bowl, lightly mix together oats, brown sugar, wheat germ, flax seed, cinnamon, wheat flour, cranberries and salt with wooden spoon.
  3. Make a well in the middle of the oat mixture and add the egg, vanilla, applesauce, honey and oil. Mix with wooden spoon until just combined.
  4. Pour into prepared pan and press down evenly using your fingertips. Bake in preheated oven to 20-25 minutes or until lightly browned and cooked through.
  5. Cool and then cut into bars. Serve and enjoy! Keep in airtight container to keep fresh.

We eat a LOT of chicken at our house. In fact, it’s my go-to protein for dinner. Chicken teriyaki, chicken burgers, chicken casserole…the list goes on and on. Since it’s such an important part of my family’s diet, I make sure to buy good quality, fresh chicken.

Foster Farms is my favorite brand to buy. I can find it at every supermarket I shop at, readily available. It’s always comparable in price to other brands, and it tastes fresh and delicious. Foster Farms is family-owned and operated since 1939. All of their fresh chicken is locally grown to the West Coast and is American Humane Certified. They just introduced the Organic and Simply Raised antibiotic free lines and I am a huge fan.

As a mom of four boys, we go through a lot of food. I like to feed them meals that are less processed and full of healthy ingredients. Clean eating is becoming more and more popular, especially when it comes to meat. With 85% of parents stating that their criteria for buying meat and poultry has changed over the last several years and 42% cited having a child as the primary reason (based on an independent survey conducted by Metrix Lab).

I think most parents would agree that we don’t want our kids eating chemicals and added hormones! So I buy Foster Farms chicken. My favorite is their Simply Raised. There are no antibiotics administered – EVER and the chickens are 100% vegetarian fed and American Humane Certified. The chicken is 100% natural (minimally processed, no additives or preservatives, steroids or hormones) and produced with no added sodium. Plus, it’s locally grown throughout CA, OR, and WA which is great for me, living in California!

Liked I said earlier, we love chicken dinners. This Grilled Lemon Rosemary Chicken is such an easy favorite of ours. It’s an elegant-looking, yet simple dinner with few ingredients that always comes out tasting amazing.

Mix olive oil, lemon zest, lemon juice, garlic, fresh rosemary and a little S&P in a large plastic baggie and let marinate for a couple of hours. Heat your grill to medium-high heat and grill your chicken until the internal temperature reaches 165º. Add a slice of lemon to the top if you want a little extra lemon boost.

The outcome is a tender, flavorful, healthy chicken breast that you can proudly serve your family and/or friends! You will love this easy summer dinner!

  • 2 lbs. Foster Farms Simply Raised Chicken (I used thin sliced breast fillets)
  • ¼ cup olive oil
  • 3 cloves garlic, minced
  • zest from one lemon
  • juice from one lemon (about ¼ cup)
  • ¾ tsp. salt
  • ¼ tsp. pepper
  • 2 large sprigs rosemary (I take the leaves off one of the sprigs and leave the other one whole)
Instructions
  1. Combine all ingredients in a large baggie and store in the refrigerator for about 3 hours.
  2. Preheat grill to medium-high heat. Place chicken breasts on hot grill and top with a slice of lemon. Close grill lid and let cook for several minutes, only opening to flip over.
  3. Cook until internal temperature of chicken is 165º. Pull off grill and let rest for a few minutes then serve and enjoy!

A fun, easy red white & blue cake that you can whip together for a last minute, delicious 4th of July dessert!

I just spent the best weekend in Palm Springs with my little family! We rented a pool-side room at the Omni resort. They have an awesome pool set up, with a big pool, water slides, splash pad and lazy river. It was ah.maz.ing.

Now that my little boys are older and don’t need naps anymore, it’s fun to take trips like this where we can go and do fun things and enjoy the time together and we’re not rushing back for feedings or naps. Plus my little guys actually get it and enjoy it more. If that makes sense.

Now I’m back home, and mourning my vacation time! I wanna go back to to Palm Springs!!! Even though it was over 100 degrees there, we had tons of fun chillaxin in the pools. Oh and seeing Jurassic World (finally)!

But up next is the 4th of July. I have mixed emotions for this holiday. Just about every 4th of July, I’m usually without one of my kiddos. My oldest. He goes to Utah to spend an entire month with his dad. I’m always so sad to see him go. The first week is the hardest. I cry daily, I miss him so much.

It’s crazy how one kid gone can leave such a void in your heart. I’m getting ready to go somewhere and I think, someone is missing! Duh. Or I’ll randomly call to him in the house and then remember he’s not there. He’s sort of my rock and I’ve grown to count and rely on him for not only help but as a confidant. We have such a strong relationship and I love and appreciate him so much.

On the flip side, he is really excited to go. He’s looking forward to seeing his other family. I feel lucky that I get to have him for the majority of the year. I have nothing to complain about, right?

I’ll miss the crap outta him but I’ll be okay. It’s only a month, right?!?! Ugh. I’ll drown out my sorrows with both his and my favorite – bundt cake!

This bundt cake is especially amazing because it’s three colors (duh) – red white and blue! But guess what? It’s made from a cake mix (two thumbs up in this chicks book! Hence, EASY). It’s not healthy, so head on over to this skinny bundt cake recipe if you’re looking for that…but it IS super fun and patriotic.

It’s so easy to make this red white and blue cake. Only a cake mix, food coloring, and a few ingredients for the glaze. So simple and perfect for a last minute 4th of July weekend dessert!

Easy Red White and Blue Cake Recipe

Ingredients
  • 1 box white cake mix
  • ingredients required from cake mix (oil, egg whites)
  • red food coloring
  • blue food coloring
  • 2 cups powdered sugar
  • 2-4 Tbsp. fat-free milk
  • ½ tsp. vanilla extract
Instructions
  1. Heat oven to 325ºF. Generously spray a bundt cake pan with cooking spray.
  2. Make cake mix according to the box directions, using water, oil and egg whites.
  3. Pour 1¼ cup of the batter into a small bowl and color it red with food coloring.
  4. Pour 1 cup of batter into another bowl and mix in blue coloring.
  5. Pour red batter into the bottom of the prepared pan. Carefully pour white batter over red batter in pan.
  6. Now, carefully pour blue batter over white - it doesn't need to cover the white all the way.
  7. Bake as directed on box, or until toothpick comes out clean. Cool until warm and them flip over onto a serving platter or plate.
  8. When cake is cool, combine powdered sugar, milk and vanilla in medium bowl and mix until fully incorporated. I like to add the milk one tablespoon at a time to make sure it doesn't get too runny. If glaze isn't runny enough, add more milk and if it's too runny, add more powdered sugar.
  9. Drizzle over the top of the cake. Slice and serve.

Raise your hand if you love Panera Bread as much as I do! We have a Panera that’s within a few miles of our house. It’s one of my favorite places to grab lunch or dinner because they serve yummy food that makes me feel good after I eat it. They serve food as it should be.

They’ve removed artificial colors, sweeteners, flavors and preservatives from the cafe salad dressings they serve. I love that because I think their dressings are better than ever now! Clean food just tastes better and makes you feel better after you eat it.

Now that school’s out, I’ve been trying to do fun things with my boys every day. We had some errands to run the other day and then ran to Panera for lunch. Each of my boys picked something different, which is always a plus because I get to try more things, ha!

I got the Mediterranean Chicken & Quinoa Salad for my lunch and let me tell you, it was SO delicious! I’m a huge fan of Mediterranean food and this salad had all the goodies from Greek food that I love, like cucumbers, olives and Greek dressing. But it also had chicken, almonds and quinoa mixed in with kale and romaine. The dressing was light and refreshing. I practically licked my bowl when I was done.

I’m not the kind of person that craves a salad. Well, I should clarify – a green salad. When my husband and I go out to dinner, he’s usually the one that orders the salad while I order a burger. Hehe.

But other kinds of salads? Pasta, chicken, orzo? Yeah, I’m in like Flynn.

Orzo is one of the coolest little pastas. It cooks really quickly and has a neat texture, almost like rice but a little heartier. You can buy regular orzo or whole wheat, both are great.

This orzo salad recipe has a few great things going for it:

  1. it’s full of veggies (which means you can skip the green salad!)
  2. the only cooking you have to do is the orzo pasta
  3. the dressing isn’t something you have to blend together or mix up – it’s made entirely from Tessemae’s Caesar Dressing!

The Caesar dressing is what makes this salad special. It has a wonderful zesty flavor from the lemon juice, apple cider vinegar and mustard in the dressing. It pairs perfectly with the veggies and orzo in this salad! This orzo salad recipe is a delightful addition to your dinner, especially a barbecue meal!

Southwestern Orzo Salad Recipe
 
This Healthy Southwestern Orzo Salad recipe is full of veggies, black beans, orzo, & feta cheese all smothered in a delicious dressing.

Ingredients
  • 1 cup uncooked orzo
  • 3 tomatoes, diced
  • kernels cut from one corn cob
  • 1 bunch of green onions, chopped
  • ½ cup chopped jicama
  • 1 yellow pepper
  • 1 green pepper
  • 1 (14-oz) can black beans, drained and rinsed
  • ½ cup chopped cilantro
  • 1 (3.5-oz) container feta cheese, crumbled
  • ½ cup Tessemae's Caesar Dressing
  • ½ tsp. salt, or more to taste
  • ¼ tsp. pepper, or more to taste
Instructions
  1. Cook orzo according to the package directions.
  2. Meanwhile, combine the tomatoes, corn, green onions, jicama, bell peppers, black beans, cilantro and feta cheese in a large mixing bowl. Toss lightly together.
  3. When orzo is cooked, drain and rinse lightly with cool water. Drain well and pour into vegetable-feta mixture. Pour dressing and salt and pepper over the top and toss until combined. Taste and add more S&P if needed.
  4. Serve and enjoy!

This Roasted Salsa recipe is my family’s very favorite salsa recipe! It’s incredibly easy and super healthy. Only a few steps to a great-tasting salsa!

I have a life-changing recipe to share with you today. Do you like salsa? We happen to LOVE salsa at our house. Especially fresh, homemade salsa made from roasted veggies.

Here’s another question, have you ever roasted vegetables under your broiler and then blended them up to make salsa? OMG. You guys. It’s life changing… I swear!

It brings much bigger, deeper flavor from roasting the veggies before you blend them up. Sooooo much more flavor then just cutting them up and throwing together. I promise.

Plus, it’s really easy. Methinks it’s even easier than classic salsa. Why? The only thing you have to cut, is the onion in half! That’s it! Everything else you leave whole and toss onto a cookie sheet. Roasted it all on the same cookie sheet, together.

Broil until the skins of the veggies begin to get that charred look and that amazing roasted smell. Blend it all up in a food processor or blender, serve and enjoy! I love this easy roasted salsa and hope you will too. It’s the perfect fresh summertime snack!


Best Ever Roasted Salsa
 
An incredibly easy and super healthy roasted salsa recipe. Only a few steps to a great-tasting salsa!
Author:
Recipe type: Snack
Ingredients
  • 10 roma tomatoes
  • 3 cloves garlic
  • 1 shallot
  • 1 sweet onion
  • 2 jalapeños (or more if you like it spicier)
  • 1 tsp. cumin
  • ½ tsp. salt (or more, for taste)
  • ⅛ tsp. pepper
  • ¼ of a lime, squeezed
  • ¼ cup chopped cilantro (or more, if desired)
Instructions
  1. Heat up your broiler on your oven. Place tomatoes, garlic (with the peels on), shallot (with the skin on), onion (peel and cut in half) and whole jalapeños on a cookie sheet. Place under broiler.
  2. I like to rotate the veggies periodically so they get equally cooked. When skins begin to char, pull cookie sheet out of oven. Be careful not to burn the garlic! It should take about 10-15 minutes.
  3. When finished, let the vegetables cool down then peel the garlic skins and shallot skin off. Using a food processor or blender (I used my Vitamix), blend all the vegetables together to the consistency of your liking.
  4. Add cumin, salt, pepper and lime juice. Stir in cilantro. Taste and add extra seasonings if necessary. Enjoy!
