We eat a LOT of chicken at our house. In fact, it’s my go-to protein for dinner. Chicken teriyaki, chicken burgers, chicken casserole…the list goes on and on. Since it’s such an important part of my family’s diet, I make sure to buy good quality, fresh chicken.

Foster Farms is my favorite brand to buy. I can find it at every supermarket I shop at, readily available. It’s always comparable in price to other brands, and it tastes fresh and delicious. Foster Farms is family-owned and operated since 1939. All of their fresh chicken is locally grown to the West Coast and is American Humane Certified. They just introduced the Organic and Simply Raised antibiotic free lines and I am a huge fan.

As a mom of four boys, we go through a lot of food. I like to feed them meals that are less processed and full of healthy ingredients. Clean eating is becoming more and more popular, especially when it comes to meat. With 85% of parents stating that their criteria for buying meat and poultry has changed over the last several years and 42% cited having a child as the primary reason (based on an independent survey conducted by Metrix Lab).

I think most parents would agree that we don’t want our kids eating chemicals and added hormones! So I buy Foster Farms chicken. My favorite is their Simply Raised. There are no antibiotics administered – EVER and the chickens are 100% vegetarian fed and American Humane Certified. The chicken is 100% natural (minimally processed, no additives or preservatives, steroids or hormones) and produced with no added sodium. Plus, it’s locally grown throughout CA, OR, and WA which is great for me, living in California!

Liked I said earlier, we love chicken dinners. This Grilled Lemon Rosemary Chicken is such an easy favorite of ours. It’s an elegant-looking, yet simple dinner with few ingredients that always comes out tasting amazing.

Mix olive oil, lemon zest, lemon juice, garlic, fresh rosemary and a little S&P in a large plastic baggie and let marinate for a couple of hours. Heat your grill to medium-high heat and grill your chicken until the internal temperature reaches 165º. Add a slice of lemon to the top if you want a little extra lemon boost.

The outcome is a tender, flavorful, healthy chicken breast that you can proudly serve your family and/or friends! You will love this easy summer dinner!

Grilled Lemon Rosemary Chicken

Ingredients
  • 2 lbs. Foster Farms Simply Raised Chicken (I used thin sliced breast fillets)
  • ¼ cup olive oil
  • 3 cloves garlic, minced
  • zest from one lemon
  • juice from one lemon (about ¼ cup)
  • ¾ tsp. salt
  • ¼ tsp. pepper
  • 2 large sprigs rosemary (I take the leaves off one of the sprigs and leave the other one whole)
Instructions
  1. Combine all ingredients in a large baggie and store in the refrigerator for about 3 hours.
  2. Preheat grill to medium-high heat. Place chicken breasts on hot grill and top with a slice of lemon. Close grill lid and let cook for several minutes, only opening to flip over.
  3. Cook until internal temperature of chicken is 165º. Pull off grill and let rest for a few minutes then serve and enjoy!

A fun, easy red white & blue cake that you can whip together for a last minute, delicious 4th of July dessert!

I just spent the best weekend in Palm Springs with my little family! We rented a pool-side room at the Omni resort. They have an awesome pool set up, with a big pool, water slides, splash pad and lazy river. It was ah.maz.ing.

Now that my little boys are older and don’t need naps anymore, it’s fun to take trips like this where we can go and do fun things and enjoy the time together and we’re not rushing back for feedings or naps. Plus my little guys actually get it and enjoy it more. If that makes sense.

Now I’m back home, and mourning my vacation time! I wanna go back to to Palm Springs!!! Even though it was over 100 degrees there, we had tons of fun chillaxin in the pools. Oh and seeing Jurassic World (finally)!

But up next is the 4th of July. I have mixed emotions for this holiday. Just about every 4th of July, I’m usually without one of my kiddos. My oldest. He goes to Utah to spend an entire month with his dad. I’m always so sad to see him go. The first week is the hardest. I cry daily, I miss him so much.

It’s crazy how one kid gone can leave such a void in your heart. I’m getting ready to go somewhere and I think, someone is missing! Duh. Or I’ll randomly call to him in the house and then remember he’s not there. He’s sort of my rock and I’ve grown to count and rely on him for not only help but as a confidant. We have such a strong relationship and I love and appreciate him so much.

On the flip side, he is really excited to go. He’s looking forward to seeing his other family. I feel lucky that I get to have him for the majority of the year. I have nothing to complain about, right?

I’ll miss the crap outta him but I’ll be okay. It’s only a month, right?!?! Ugh. I’ll drown out my sorrows with both his and my favorite – bundt cake!

This bundt cake is especially amazing because it’s three colors (duh) – red white and blue! But guess what? It’s made from a cake mix (two thumbs up in this chicks book! Hence, EASY). It’s not healthy, so head on over to this skinny bundt cake recipe if you’re looking for that…but it IS super fun and patriotic.

It’s so easy to make this red white and blue cake. Only a cake mix, food coloring, and a few ingredients for the glaze. So simple and perfect for a last minute 4th of July weekend dessert!

Easy Red White and Blue Cake Recipe

Ingredients
  • 1 box white cake mix
  • ingredients required from cake mix (oil, egg whites)
  • red food coloring
  • blue food coloring
  • 2 cups powdered sugar
  • 2-4 Tbsp. fat-free milk
  • ½ tsp. vanilla extract
Instructions
  1. Heat oven to 325ºF. Generously spray a bundt cake pan with cooking spray.
  2. Make cake mix according to the box directions, using water, oil and egg whites.
  3. Pour 1¼ cup of the batter into a small bowl and color it red with food coloring.
  4. Pour 1 cup of batter into another bowl and mix in blue coloring.
  5. Pour red batter into the bottom of the prepared pan. Carefully pour white batter over red batter in pan.
  6. Now, carefully pour blue batter over white - it doesn't need to cover the white all the way.
  7. Bake as directed on box, or until toothpick comes out clean. Cool until warm and them flip over onto a serving platter or plate.
  8. When cake is cool, combine powdered sugar, milk and vanilla in medium bowl and mix until fully incorporated. I like to add the milk one tablespoon at a time to make sure it doesn't get too runny. If glaze isn't runny enough, add more milk and if it's too runny, add more powdered sugar.
  9. Drizzle over the top of the cake. Slice and serve.

Raise your hand if you love Panera Bread as much as I do! We have a Panera that’s within a few miles of our house. It’s one of my favorite places to grab lunch or dinner because they serve yummy food that makes me feel good after I eat it. They serve food as it should be.

Now that school’s out, I’ve been trying to do fun things with my boys every day. We had some errands to run the other day and then ran to Panera for lunch. Each of my boys picked something different, which is always a plus because I get to try more things, ha!

I got the Mediterranean Chicken & Quinoa Salad for my lunch and let me tell you, it was SO delicious! I’m a huge fan of Mediterranean food and this salad had all the goodies from Greek food that I love, like cucumbers, olives and Greek dressing. But it also had chicken, almonds and quinoa mixed in with kale and romaine. The dressing was light and refreshing. I practically licked my bowl when I was done.

I’m not the kind of person that craves a salad. Well, I should clarify – a green salad. When my husband and I go out to dinner, he’s usually the one that orders the salad while I order a burger. Hehe.

Orzo is one of the coolest little pastas. It cooks really quickly and has a neat texture, almost like rice but a little heartier. You can buy regular orzo or whole wheat, both are great.

  2. the only cooking you have to do is the orzo pasta

The Caesar dressing is what makes this salad special. It has a wonderful zesty flavor from the lemon juice, apple cider vinegar and mustard in the dressing. Recipe type: Salad
Ingredients
  • 1 cup uncooked orzo
  • 3 tomatoes, diced
  • kernels cut from one corn cob
  • 1 bunch of green onions, chopped
  • ½ cup chopped jicama
  • 1 yellow pepper
  • 1 green pepper
  • 1 (14-oz) can black beans, drained and rinsed
  • ½ cup chopped cilantro
  • 1 (3.5-oz) container feta cheese, crumbled
  • ½ cup Tessemae's Caesar Dressing
  • ½ tsp. salt, or more to taste
  • ¼ tsp. pepper, or more to taste
Instructions
  1. Cook orzo according to the package directions.
  2. Meanwhile, combine the tomatoes, corn, green onions, jicama, bell peppers, black beans, cilantro and feta cheese in a large mixing bowl. Toss lightly together.
  3. When orzo is cooked, drain and rinse lightly with cool water. Drain well and pour into vegetable-feta mixture. Pour dressing and salt and pepper over the top and toss until combined. Taste and add more S&P if needed.
  4. Serve and enjoy!

This Roasted Salsa recipe is my family’s very favorite salsa recipe! It’s incredibly easy and super healthy. Only a few steps to a great-tasting salsa!

I have a life-changing recipe to share with you today. Do you like salsa? We happen to LOVE salsa at our house. Especially fresh, homemade salsa made from roasted veggies.

Here’s another question, have you ever roasted vegetables under your broiler and then blended them up to make salsa? OMG. You guys. It’s life changing… I swear!

It brings much bigger, deeper flavor from roasting the veggies before you blend them up. Sooooo much more flavor then just cutting them up and throwing together. I promise.

Plus, it’s really easy. Methinks it’s even easier than classic salsa. Why? The only thing you have to cut, is the onion in half! That’s it! Everything else you leave whole and toss onto a cookie sheet. Roasted it all on the same cookie sheet, together.

Broil until the skins of the veggies begin to get that charred look and that amazing roasted smell. Blend it all up in a food processor or blender, serve and enjoy! I love this easy roasted salsa and hope you will too. It’s the perfect fresh summertime snack!


Best Ever Roasted Salsa
 
An incredibly easy and super healthy roasted salsa recipe. Only a few steps to a great-tasting salsa!
Author:
Recipe type: Snack
Ingredients
  • 10 roma tomatoes
  • 3 cloves garlic
  • 1 shallot
  • 1 sweet onion
  • 2 jalapeños (or more if you like it spicier)
  • 1 tsp. cumin
  • ½ tsp. salt (or more, for taste)
  • ⅛ tsp. pepper
  • ¼ of a lime, squeezed
  • ¼ cup chopped cilantro (or more, if desired)
Instructions
  1. Heat up your broiler on your oven. Place tomatoes, garlic (with the peels on), shallot (with the skin on), onion (peel and cut in half) and whole jalapeños on a cookie sheet. Place under broiler.
  2. I like to rotate the veggies periodically so they get equally cooked. When skins begin to char, pull cookie sheet out of oven. Be careful not to burn the garlic! It should take about 10-15 minutes.
  3. When finished, let the vegetables cool down then peel the garlic skins and shallot skin off. Using a food processor or blender (I used my Vitamix), blend all the vegetables together to the consistency of your liking.
  4. Add cumin, salt, pepper and lime juice. Stir in cilantro. Taste and add extra seasonings if necessary. Enjoy!

TGIF, friends! This week went by fast. Actually, this month has gone by fast.

Summer days seem to just ease by. Our weather is getting warmer and the June gloom has come and gone. The days are longer, too. Not sure if you’ve noticed but the summer fruit hitting the farmer’s markets and grocery stores is ah-mazing.

I think I fill up about half of my grocery cart every Saturday with fresh fruits and veggies. Sometimes when I have extra fruit that my kids haven’t sneaked off and eaten, I make fun little desserts. Like strawberry & yogurt popsicles, tropical chia pudding cups, or fruit salsa with cinnamon chips to dip. It makes me feel good knowing my kids are at least getting a serving of fruit in with their dessert!

Father’s Day is this weekend…did you get your dad/husband/man in your life anything? I usually mail my dad a funny card and a gift card to either Home Depot or Red Lobster. This year it was Red Lobster (or as we like to call it Red Slobster. Haha, we’re so funny )

My father in law is getting a fun group gift from all the siblings in my husband’s family. Group gifts are the best. Pile all your money together to get something extra good! And my husband? Well, he’s getting a gourmet meal from yours truly, of course! And Mini Cobblers for dessert.

This cherry cobbler recipe is so simple. You don’t even have to stir it at all before baking! It’s just three layers of goodness poured right on top of each other and then baked. One less spoon to wash!

The baked cherries are soft and full of flavor. The cobbler portion is so moist and buttery – it gets saturated by all that yummy cherry juice on the bottom. Using Truvia Baking Blend definitely cuts the calories and sugar content. That’s why I love using Truvia products in all of my baked goods!

I love the fact that it’s in individual little ramekins so you have automatic portion control. Because if it wasn’t in individual containers, I would eat the entire batch! Honestly, it’s such a delicious dessert that will go over perfectly on Father’s Day or any other day!

Mini Cherry Cobbler Recipe

An easy and delicious cherry cobbler recipe that makes 4 individual sized servings.

Serves: 4 ramekin cups
Ingredients
  • 4 Tbsp. unsalted butter, divided
  • ½ cup white whole wheat flour
  • ¼ cup Truvia Baking Blend
  • ½ tsp. baking powder
  • ½ cup milk
  • ⅛ tsp. cinnamon
  • ¼ tsp. vanilla extract
  • 1½ cups pitted & halved cherries
  • ¼ cup Truvia Baking Blend
  • ½ Tbsp. white whole wheat flour
Instructions
  1. Preheat oven to 350ºF. In four ramekins, place 1 Tbsp. butter. Place the ramekins on a cookie sheet and place in preheating oven for about 5 minutes, or until the butter is melted.
  2. In a medium sized mixing bowl, mix together the next ingredients: flour through vanilla. Stir until smooth.
  3. Pour ¼ cup of batter into each cup of melted butter. Do NOT stir!
  4. Mix together pitted and halved cherries with ¼ cup Truvia and ½ Tbsp. white whole wheat flour (depending on how sweet your cherries are, you may need more or less Truvia to sweeten).
  5. Top each batter filled cup with a fourth of the cherry mixture. Again, do NOT stir.
  6. Bake in preheated oven (with ramekins on the cookie sheet) for 40-45 minutes, until the cake part is cooked through and the top is golden brown.
  7. Serve with whipped cream, ice cream or alone and enjoy!

I’ve been hearing about flourless this, gluten free that and I think I might be falling under the spell of it all. I had to give up a few of my workouts when my two little guys were in preschool three mornings a week. Mostly in order to get work done or run errands. But now that it’s summertime, I’ve been able to go to the gym a lot more. And since it’s bathing suit season…I’ve been trying to watch what I eat.

Which brings me to this awesome recipe. Now, I have to say that I don’t love the pictures of these flourless muffins. I feel like they don’t do these delicious muffins the justice they deserve. With that being said – I absolutely L-O-V-E this recipe. I know I say that a lot, (pretty much with every recipe, lol) but this time – I really really mean it!

The combo of the ingredients in these easy flourless muffins, really make for a healthy muffin. But a lot of times healthy muffins = dry muffins, right? Not these. They’re moist, soft, squishy muffins with tons of flavor. And they fill you up with just one muffin – they’re that satisfying!

Instead of flour, these muffins use oats. Bananas and Greek yogurt make them moist and tender. There’s no added oil or butter, which makes these a healthy choice for breakfast, a snack or even dessert. They’re the easiest muffins ever to make. You throw the few ingredients in the blender and blend it all up, pour right into the muffin tin and bake. Easy peasy! Please try this recipe, you will love these healthy muffins!


Healthy Flourless Muffins (made using a blender!)

Serves: 12 muffins
Ingredients
  • ¼ cup fat free milk
  • 1 (5.3-oz) container fat free vanilla Greek yogurt
  • 2 eggs
  • 2 ripe bananas, broken into chunks
  • 2½ cups dry quick oats
  • ¼ cup Truvia Baking Blend, or your favorite sweetener
  • 1½ tsp. baking powder
  • ½ tsp. baking soda
  • ¼ tsp. vanilla extract
  • ⅛ tsp. salt
Instructions
  1. Preheat oven 400ºF. Spray a 12-cup muffin tin with cooking spray, set aside.
  2. In a blender, combine ingredients and blend together. (I have a Vitamix, so blending these ingredients together works fine. If you don't have a blender like this, do it in batches to get it to blend together.)
  3. Pour evenly into prepared muffin tin and bake for 20-25 minutes, or until a toothpick inserted in the middle of one comes out clean.
  4. Cool for 5 minutes and carefully take out of muffin tin. Eat immediately or place in airtight container in refrigerator. Enjoy!

Following the Chopped model, my dish had to include: Sargento Chef Blends 4 State Cheddar, Kale, Oyster Crackers and Bacon. What a great list, right?!

The first thing I thought of was macaroni and cheese. My boys LOVE macaroni and cheese. And I’m known to be quite the casserole maker, so I decided to combine the two and make a creamy baked macaroni and cheese casserole.

But this isn’t any old baked macaroni and cheese. Along with the Sargento Chef Blends 4 State Cheddar (which includes Sharp Wisconsin Cheddar, Sharp Vermont Cheddar, Sharp New York Cheddar and Mild California Cheddar cheeses.) I added cottage cheese, one egg – yay for more protein – and sour cream. Adding those ingredients help ditch the white sauce step.

I also added bacon and kale in with the macaroni and topped it with crushed oyster crackers. The result was a creamy, tasty casserole. If you like mac and cheese, you will fall in love with this simple, easy, creamy, cheesy baked macaroni and cheese casserole!

Baked Macaroni and Cheese Casserole

Ingredients
  • 1 (1-lb) box macaroni pasta
  • ½ lb. bacon, cooked and crushed
  • 1 cup reduced-fat cottage cheese
  • 1 cup light sour cream
  • 2 (7.5-oz) bags Sargento® Chef Blends 4 State Cheddar
  • 1 egg, lightly beaten
  • ¾ tsp. salt
  • ½ tsp. pepper
  • ½ tsp. garlic powder
  • 2 cups steamed kale, cut into small pieces (about 3 cups uncooked)
  • 3 Tbsp. unsalted butter
  • 2 cups crushed oyster crackers
Instructions
  1. Preheat oven to 350ºF. Spray a 2.5 quart casserole dish with cooking spray.
  2. Cook macaroni according to package directions. Drain and set aside.
  3. Meanwhile, cook bacon until crispy - in the oven, microwave or stove top. Drain and when cool, crush or chop into small pieces.
  4. Quickly steam the kale for a couple minutes, until slightly wilted and crisp-tender.
  5. In a large mixing bowl, combine cottage cheese, sour cream, cheddar, egg, salt, pepper, garlic powder. Pour in cooked macaroni, kale and bacon. Stir to combine.
  6. Pour into prepared casserole dish, smoothing top down.
  7. In a microwave bowl, melt the butter. Add in crushed crackers and stir. Pour oven the top of the casserole, evenly.
  8. Place in preheated oven for 40 minutes, or until top is golden brown and everything is heated through.
  9. Scoop into bowls or on plates and enjoy!

I’m a pretty sneaky mom. But in a good way, sneaky.

I sneak a lot of things. Like taking quick pictures of my teenager when he’s not looking. And sneaking kisses on all four of my kidlets when the mood strikes. But my most sneakiest moments are when I sneak healthy food into other seemingly normal, regular dishes… and my kids have zero clue about it.

Like adding veggies to sloppy joes, casseroles and mac and cheese. Or mixing quinoa into quick bread and muffins. Oh and one of my favorites, disguising the healthy fat of avocado into truffles and cookies… and even tofu into chocolate pudding! Oh yes, I like to get sneaky.

But let’s talk popsicles for a minute. Every kid loves popsicles. The bright colored ones from the grocery store or the ice cream man are sought out and prized. Eating a cool, sweet treat on a stick is the best!

So why not be sneaky and puree up some fruit and pair it with yogurt (which, hello! Frozen yogurt!) to make an eye catching popsicle your kids (and adults) will totally go for?! It’s a marvelous idea.

These strawberry yogurt popsicles are way healthier than store-bought popsicles and taste every bit as sweet and satisfying. And you’re saving some cash, too! Bye bye ice cream man!


Strawberry Yogurt Popsicles

Ingredients
  • 2 cups sliced strawberries
  • 1 cup pineapple chunks + a little extra pineapple juice
  • sweetener of your choice (Truvia, honey, sugar, etc)
  • low-fat vanilla yogurt
Instructions
  1. In a blender or food processor, blend together strawberries and pineapple. Add in a little juice if it needs it. Taste and add in some sweetener, if needed.
  2. Take turns layering yogurt and strawberry mixture into popsicle molds. Place in the freezer to set.
  3. When fully set, run some warm water over the bottom of the popsicle mold to loosen. Pull out each popsicle, serve and enjoy!

Brown Sugar Bacon aka Candied Bacon aka the Best Bacon EVER! This easy bacon is baked in the oven with a topping of brown sugar and pepper, and comes out sticky, sweet & savory. Absolutely drool-worthy! 

Truthfully, we go through a lot of bacon at my house. At least a couple pounds a week. {eek!}

Here’s why…about six months ago we took our extremely picky then 4-year old (and our other boys, too) to the one and only Original Pancake House in Redondo Beach. Side note: have you eaten there? OMG you guys. Best. Pancakes. Ever. Obviously.

Anyway, we all order pancakes and are going to town, while my 4-year old is eating a bowl of applesauce. No clue why this kid has a hate relationship with carbs. He must not be mine…

So yeah, he’s watching us all eat and we’re trying to get him to try the pancakes. Nope, no go. Then he sees my husband’s bacon and asks what that is. My clever husband says, “oh, that’s candy.” My cutie little guy says, “candy? Can I try it?” So of course, my husband obliges and we all stare at my little guy while he takes a bite. Unbelievably, he LOVES it. He ends up eating everyone’s bacon at the table.

So that’s how we found out we have a huge bacon lover in the house and why I go through it like crazy. But let’s take bacon to a whole ‘nother level today. Let’s make it into “bacon candy”, or as the normal people would call it: brown sugar bacon.

I’m a fan of cooking bacon in the oven. It’s so easy to slap a piece of parchment on a cookie sheet and spread the bacon out on top, and pop it in the oven. When it’s done, take the bacon off and toss that parchment right in the trashcan. It’s so much easier!

With this brown sugar bacon, you do the same method but you sprinkle the bacon with pepper and coat it in brown sugar, then bake. The result? An amazing sweet & savory bacon your family will love! Stick a batch in the oven and you’ll have extra time to cook those special pancakes or waffles or eggs for your family.

Or, say… your dad. Father’s Day is right around the corner. This is the perfect addition to breakfast to make your dad feel extra special. Because what dad doesn’t love bacon? Enjoy!

Serves: 1 pound of candied bacon
Ingredients
  • 1 lb. bacon
  • 1½ tsp. ground black pepper
  • ⅓ cup packed light brown sugar
Instructions
  1. Preheat oven to 350ºF. Line two baking sheets with parchment paper. Place a wire rack on top of each sheet.
  2. Place bacon in a single layer on the two racks. Sprinkle the bacon slices with pepper and then brown sugar.
  3. Bake in preheated oven until bacon is crisp and browned, about 30-35 minutes, rotating sheets halfway through for even cooking. Pat dry with paper towels, if necessary. Enjoy!

Hooray for summertime! My kids finished their last day of school last Thursday and today was the first day in the last week that I woke up to sunshine instead of foggy weather!

Here I am, acting like I’m excited for summer when I’m really not too thrilled. Summer means the crazy schedule is over (until football in August) but it also means my kids are home with me alllllllll day long.

Nope. I’m not one of those moms that sticks her kids in summer camps and all that jazz. I’d like to say I plan all these fun activities and that’s why I don’t do summer camp but the truth is, I’m too cheap! Those camps are like, $240 a week per kid! And I have FOUR! Yeah, no. That’s not happening.

But this is also a good thing because they’ll be able to help me in the kitchen more and maybe I’ll teach my oldest to take my food pictures for me. Or edit them. Or both! Ooh. I like the sound of that! That’s making me even more excited for the next couple of months!

But what also gets me excited for summer, is the food. I L-O-V-E barbecuing. I love anything grilled and I love summer side dishes and desserts. Today I’m sharing a family favorite recipe my mom used to make (and I’m betting you’ve made it or eaten it a time or two before too!) – Creamy Broccoli Salad.

My husband is a crazy fan of this salad and I’ve ofttimes had to hide it while it’s marinating in the fridge or else I’ll find the entire thing is gone when dinner time comes around. It’s such a creamy, crunchy, flavorful broccoli salad – you won’t be able to stop eating it. Honestly. It’s just that good!

Don’t take my word for it, try it out today! It may sound odd, broccoli with dried cranberries, sunflower seeds and bacon but do not be fooled. It’s the best flavor combo ever. I’ve tried lightening the recipe up a bit by using Truvia in place of sugar and using light mayo instead of regular. But I figure since it’s a BROCCOLI salad, it’s okay to have a little extra calories since it’s full of veggies, right?! Enjoy!

Creamy Broccoli Salad

Ingredients
  • 1 lb. fresh broccoli, cut into bite sized pieces
  • 1 lb. bacon, cooked and crumbled
  • 1 small red onion, diced finely
  • ½ cup dried cranberries
  • ¾ cup sunflower seed kernels
  • 1 cup light mayonnaise
  • ¼ cup Truvia Baking Blend (or ½ cup sugar)
  • 2 tsp. white vinegar
Instructions
  1. Toss broccoli with bacon, onion, cranberries and sunflower kernels.
  2. Whisk together mayo, sugar and vinegar. Toss dressing in with broccoli salad an hour or two before serving. Refrigerate until ready to serve. Stir before serving. Enjoy!

At the end of last year, I was having a bunch of health issues. Nothing serious, but just frustrating. I was having stomach pain all the time, extreme heart burn, and it was hard to breathe with just the littlest bit of cardio.

I took all four of these condiments and put them into a delicious recipe for turkey burgers! We are huge turkey burger fans and if I can make them spicy turkey burgers, I’m even happier. You can take out the jalapeño and make these less spicy or add in some more to give it an extra kick. You can’t go wrong with caramelized onions on top so of course I added some on there. It gives the burgers more flavor and an added texture that I like.

The spicy turkey burgers are good but the star of the show is the spicy mayo sauce. OMG.

Do you see that little white bowl on the plate with the sweet potato fries? I ate that entire thing. I poured it on my burger, dipped my fries in it and then licked it clean. I can’t even tell you how amazing it is! It’s creamy, sweet and spicy all at the same time. You will love dipping those sweet potato wedges in it.

Just a quick side note: Many of the Tessemae’s dressings & marinades are olive oil based and therefore, the olive oil solidifies when chilled in the frig. When you store your dressings in the frig (refrigerate for quality up to 7 months), it’s important that you know the dressings haven’t spoiled/gone bad! Just let your dressing warm to room temperature on the kitchen counter or place the bottle in warm water for a few minutes (I use a mug filled with hot water from the tap).

Spicy Turkey Burgers with Caramelized Onions & Sweet Potato Fries with Spicy Mayo Dipping Sauce

Ingredients
  • 1 lb. lean ground turkey
  • ½ white onion, grated
  • 1 Tbsp. Mesquite grill seasoning
  • 2 Tbsp. Tessemae's All Natural BBQ Sauce
  • 1 Tbsp. Worcestershire sauce
  • 2 garlic cloves, minced
  • 1 jalapeno, seeded & minced
  • ½ cup shredded sharp cheddar
  • ¼ cup bread crumbs
  • 1½ onion, sliced
  • 1 Tbsp. olive oil
  • ¼ cup Tessemae's All Natural Mayonnaise
  • 1 Tbsp. Tessemae's All Natural Honey Mustard
  • ¼ tsp. prepared horseradish, or more for even spicier
  • ⅛ tsp. ground cayenne pepper
  • 3 sweet potatoes, peeled and cut into wedges
  • 2-3 Tbsp. olive oil
  • sea salt & pepper, to taste
  • hamburger buns, for serving
  • Tesserae's All Natural Ketchup, for serving
Instructions
  1. Heat grill or grill pan up to medium-high heat.
  2. Place olive oil in a pan on the stovetop. Add in sliced onion and cook on medium-low until softened and brown.
  3. Meanwhile, preheat oven to 450ºF. Cut up sweet potatoes and throw onto a cookie sheet. Toss with olive oil and sea salt and pepper. Bake in the oven for 20-25 mins.
  4. In a medium sized mixing bowl, combine together turkey, grated onion, grill seasoning, BBQ sauce, Worcestershire, garlic, jalapeño, cheese and bread crumbs. Shape into 4 - 5 patties. Grill until no longer pink inside, 165 degrees F inside.
  5. Quickly make sauce by combining mayo, honey mustard, horseradish and cayenne. Can double or triple sauce amount easily. Serve with burgers and sweet potato fries.
  6. Serve spicy turkey burgers with a pile of caramelized onions on top and a bit of ketchup. Side dish of sweet potato wedges and spicy mayo sauce. Enjoy!

It’s finally the last week of school here in SoCal. My boys are already in summer mode, though. They’re counting down the hours until school is out.

Honest mom moment: I always WANT to have fun plans with my boys for summertime but never actually follow through with them. This year is my year to finally follow through! One of my boys’ favorite meals is pizza. I mean, who doesn’t like pizza?! I’ve got the best secret ever for a quick pizza – pita bread.

Have you ever tried making a pita bread pizza? It makes the most delicious crust and is (obviously) already made so you don’t have to worry about making dough. But here’s another question…have you ever had ranch on a pizza? OMG you guys. So so so yummy!

Ingredients
  • ¼ - ½ cup prepared Hidden Valley® Greek Yogurt Dips Mix
  • ½ cup chopped cooked chicken (I used the lunch meat kind)
  • 3 pitas, whole
  • 3 slices cooked bacon, crumbled
  • ¼ cup cheddar (I used Cabot Light Sharp Cheddar)
  • sliced green onions, for serving
Instructions
  1. Preheat oven to 400ºF.
  2. Mix together Hidden Valley® Greek Yogurt Dips Mix and 1½ cups nonfat Greek yogurt.
  3. Place pita bread on the cookie sheet and spread with prepared dip mix. Top with chicken, bacon and cheddar.
  4. Bake for about 15 minutes, or until cheese is melted and crust is golden. Sprinkle with green onions, cut into fourths and serve. Enjoy!

Simply delicious Tropical Chia Pudding recipe and a recap of my ALDI test kitchen trip in Chicago! (this is a sponsored conversation provided by ALDI. All opinions are my own.)

Have you heard about my first experience in an ALDI store? I wrote all about my undying love for ALDI in this post. While I was in Chicago a few weeks ago, I was able to go into the ALDI test kitchens with some other food bloggers.

I wasn’t sure what to expect but when I first walked into the headquarters, I was pleasantly surprised by the vastness of the building. It was big, bright and very clean. We set our purses down in one room and then went into a room with two tables stocked with food. Below is what I saw:

There were plates and bowls marked with an A or a B. We were given a checklist and told to try each of the products and check the box for the one we liked better out of the two. There was Havarti cheese (pictured above), yogurt, guacamole, chips, orange juice and crackers.

After tasting them, the true brands identity was revealed. Out of the six samples, I chose four of the ALDI brand. The other two products I didn’t choose from ALDI were so similar in taste that I ended just picking one. What does this mean? ALDI products are pretty darn delicious and they taste just like brand name products.

But what’s even better? ALDI products are much cheaper than the name brands! Take a look at this chart above. I know it’s a little hard to read the small print, but each product we tested is up there and the green arrows show the savings from the name brand to the ALDI exclusive brands. Just another reason to shop at ALDI.

After we taste tested, we were brought back into the first room and were able to listen to Registered Dietician Tara Gidus and Chef Brigitte Nguyen speak to us about eating for energy. I learned a lot of tips from them during their presentation.

Did you know you should be getting 30 grams of protein for breakfast? THIRTY! Tara talked to us about the proper snack and meal sizes.  She also explained how if we eat the right foods, we will feel better and have more energy. Brigitte showed us some delicious recipes she came up with to help us eat healthier.

You can see our samples below. Bottom left is a Chicken & Sweet Potato Patty that you can make for breakfast (each patty has 15g of protein!), then the Tuna Salad Veggie Cups that were made with hummus instead of mayo. Bottom right is Tuscan Shrimp with White Beans & Quinoa. I’ve made it for my family twice since being home from Chicago and they LOVE it!

Top left is the Cottage Ranch Dip and then the Tropical Chia Pudding on the right, which is what I’m sharing with you today!

I can’t even tell you how delicious this tropical chia pudding recipe is! It’s super easy to make, healthy, filling and tastes like dessert without the calories of a dessert! Here’s how simple it is to make, you just soak chia seeds in coconut milk and then mix in Greek yogurt. Layer it in a glass with some tropical fruit and top with coconut. Boom. Healthy breakfast, snack or dessert!

I’ve also made this recipe a lot since being home from Chicago. I’ve tried all different assortments of yogurts and fruits and feel good about the combo I’m sharing with you today. I really hope you’ll try it. Even if you’ve never had chia seeds – this will change your mind about them. I’m pretty confident you will want to make this chia pudding recipe over and over again.

Okay, back to the test kitchen…after our presentation with Tara and Brigitte, we were brought into yet another room. This one had several work tables and side tables full of every salad ingredient you could think of and every dressing ingredient you could ever imagine.

We were told we had 20 minutes to make our very own version of a salad in a jar. Guys, this was like Chopped style. Do you know how much I love that show?! Never in a million years would I have ever thought I’d have an opportunity like that!

Well, needless to say, I freaked out a bit. I started about three different dressing recipes before deciding on one. There was too much to choose from!

Ultimately, I decided on a southwestern avocado dressing (pictured above) with Greek yogurt, orange and lime juice, lime zest, chopped cilantro and S & P. I wished I’d had a little milk to thin it out but it was still delicious.

For my salad, I added spinach, tomatoes, chopped grilled chicken, red onion, black beans, garbanzo beans, a little bow tie pasta for texture and some crumbly feta cheese on top. Cowboy Cilantro Chicken Salad, baby! Doesn’t it look so cute layered up in the jar?

We introduced our salads and explained what was in them and then the judges (Dietician Tara and Chef Brigitte) judged them. I didn’t win the grand prize BUT I was still super proud of myself for holding it together during a Chopped-style challenge, haha!

When we were finished with the salads in a jar, we headed off to eat MORE food. There was an entire healthy feast for us all to enjoy. At that point, I was already stuffed but I made room in my belly for some delicious treats, like these below…

Tropical Chia Pudding Recipe

  • 3 Tbsp. chia seeds
  • 1 cup coconut milk
  • 2 (5.3-oz) containers coconut Greek yogurt
  • 1 mango, peeled & diced
  • 1 cup fresh pineapple, peeled & diced
  • 2 cups strawberries, hulled & diced
  • shredded coconut, for serving
Instructions
  1. Stir the chia seeds into coconut milk and refrigerate for at least an hour (I like to soak overnight).
  2. Fold in yogurt to chia seed mixture.
  3. In glasses or jars, layer it: strawberries, yogurt mixture, pineapple, yogurt mixture, then mango. Top with coconut and serve. Enjoy!

Do you ever have a mile long daily to-do list but somehow you end up sitting in a chair staring at the wall? Or your computer screen?

No? Okay, then. I’m a weirdo.

That’s me today. I leave town to go to Portland early Friday morning for a blog conference. Like, early. My flight leaves at 6:40am. Yowza! I have only one day to get everything packed and prepared for my trip.

This includes typing out an agenda for my babysitter of everything she has to do on Friday. It’s really crazy how much driving I do! Handing the burden over for a day feels good but the preparation is annoying.

Not to mention all the laundry and packing to get my bag ready to go…plus a million errands around town and a baseball game for my ten year old and baseball practice for my oldest on the night before I go.

Just thinking about it makes me want a nap!

But then I end up sitting in my office chair, staring at my computer screen or the wall. I don’t want to do any of it! I want to just be able to leave town and have it all done for me. Ha!

Of course, the last thing I want to do is think about dinner. My husband is great about making quick things like sandwiches for the kids if I’m out of town. But I like to make a few yummy meals ahead of time and leave them for him and the boys to eat while I’m gone so he doesn’t have to worry about it.

This Chicken Cacciatore recipe is the perfect one to make for them. Not only does it makes quite a bit of food but it’s great as leftovers. My boys love it and I love the fact that they’ll eat the vegetables in it! This is one of those recipes you can pull out of your hat if you have company coming over and want to impress them. It does require some chopping of vegetables but it all simmers together on the stove until cooked and tastes fabulous over a bed of noodles or my boys’ favorite: mashed potatoes.

This Chicken Cacciatore recipe is one you will not want to miss. You will love this easy and healthy dinner!


Chicken Cacciatore
 
An easy, comforting and healthy dinner the whole family will love!

Recipe type: Main
Serves: 6-8 servings
Ingredients
  • 2-3 lbs. chicken cutlets or chicken breasts, cut into smaller pieces
  • salt & pepper
  • 2 Tbsp. olive oil, divided
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 green bell pepper, diced
  • 2 cups fresh mushrooms, sliced or quartered
  • 1 (14.5-oz) can diced tomatoes, undrained
  • salt & pepper, to taste
  • 1 Tbsp. Italian seasoning
  • ½ cup chicken broth
  • mashed potatoes or noodles, to serve with
Instructions
  1. In a dutch oven (or heavy pan), heat 1 Tbsp. olive oil over medium-high heat.
  2. Season chicken with salt and pepper and place in hot pan. Brown chicken on both sides. Remove from skillet and set aside on a plate.
  3. Pour remaining tablespoon of olive oil in dutch oven and add in onion, garlic and bell pepper. Stir until fairly tender, being careful not to burn the garlic.
  4. Pour in tomatoes, broth, Italian seasoning and mushrooms. Cook until mushrooms are almost tender. Taste and season as needed. Add in browned chicken and juices.
  5. Cover and simmer for 30-40 minutes on medium-low heat, until all vegetables are tender and chicken is cooked through and very tender.
