It’s finally Saturday!! I love Saturdays! Sometimes they’re uneventful, but usually they’re crazy busy. My oldest son has a scrimmage baseball game today and my 11 year old will be gone to a birthday party for a good chunk of the day. I have a bunch of errands to do, one of them of course being the grocery store.

I’m a little nervous about the crowd at the store because I’m pretty sure 95% of the population will be out shopping for Super Bowl Sunday. Am I right?? What are you doing for Super Bowl Sunday? Have you ever had the worst day ever and then made a skillet cookie and completely devoured the entire thing by yourself in 5 minutes? Yeah, me neither. (wink, wink!)

We all know dessert is the ultimate comfort food. I must admit, I’m not a big cookie fan. I know you’re thinking “Um, right. Who doesn’t like cookies?” right now, but I just don’t! If I had the choice, I would choose brownies or cake over a dozen cookies. BUT…now we’re talking about a skillet cookie. With a Nutella swirl. So yeah, the game has changed, lol!

My oldest son turned 14 last November and he’s not a cake fan. He specifically asked for “pizookies” instead of Birthday cake. Have you ever had a pizookie at a restaurant before? Or made them from home? I hadn’t ever made one from scratch. I had to run to Bed, Bath & Beyond to grab some skillets so I could attempt to make some at home.

I’m so glad I did! One of the best investments are these super cute 8″ cast iron skillets! They’re great to make desserts and dips in. They’re a great appetizer size. They’re amazing for a skillet cookie! I adapted one of my favorite lower cholesterol cookie recipes from Mrs. Fields and added just the right amount of Nutella swirls to the top. Baked it up and watched that cookie puff up under those Nutella swirls!

Add a couple scoops of light ice cream or frozen yogurt to the top of your fresh-from-the-oven skillet cookie…and wait for it to melt. Heaven!

Now, you can use Homemade Nutella, or skip the Nutella and add chocolate chips instead if you wish. But why would you? Nutella is the BOMB! Did you know that it’s World Nutella Day?

Yep. So don’t be surprised if you see Nutella everywhere you look today. I always have at least one of those huge containers of it from Costco in my pantry. My boys love it! We like to dip apples in peanut butter and Nutella. The best after school snack ever.

But my new favorite (and soon to be yours, too!) is swirling it in a skillet cookie.

I can’t even get over that yummy, ooey, gooey, cookie/Nutella/ice cream combo above! I need another Nutella swirled skillet cookie ASAP!!


Nutella Swirled Skillet Cookie Recipe

Serves: Approx. two 8" cast iron skillets
Ingredients
  • 2½ cups all-purpose-flour
  • ½ tsp. baking soda
  • ¼ tsp. salt
  • ¾ cups packed light brown sugar
  • ½ cup sugar (or ¼ cup Truvia Baking Blend)
  • ½ cup margarine or butter, softened
  • 3 large egg whites
  • 2 Tbsp. honey
  • 2 tsp. vanilla extract
  • ½ cup Nutella
  • frozen yogurt or light vanilla ice cream, if desired for topping
Instructions
  1. Preheat oven to 300ºF.
  2. In a medium bowl, combine flour, baking soda and salt. Mix with a whisk and set aside.
  3. In an electric mixer, blend butter/margarine and sugars until it becomes a grainy paste.
  4. In a small bowl, beat the egg whites with an electric mixer until fluffy. Add egg whites, honey and vanilla to sugar/butter mixture. Beat until smooth.
  5. Add flour mixture and blend on low speed until just combined.
  6. Divide the cookie mixture into two 8" greased cast iron skillets. Place small scoops of the Nutella spread on top of the cookie and swirl with the tip of a knife to get a swirled effect.
  7. Bake in preheated oven for about 40 mins or until golden brown and springy to the touch. Serve with a scoop of ice cream or frozen yogurt for an even yummier treat. Enjoy!

Guess what this coming Tuesday is? It’s Fat Tuesday, or Mardi Gras! Do you usually celebrate? We don’t usually do much to celebrate but I do like making a special treat for my family, like a king cake.

So in case you’re not familiar with this cool holiday, here’s a little background…according to historians, Mardi Gras dates back thousands of years. When Christianity arrived in Rome, religious leaders decided to merge the popular local traditions into the new faith. As a result, the Mardi Gras season became a precursor to Lent. Along with Christianity, Mardi Gras spread from Rome to other European countries, including France, Germany, Spain and England.

Many historians believe that the first American Mardi Gras took place on March 3, 1699, when French explorers landed in what is now Louisiana. They held a small celebration and dubbed the spot Point du Mardi Gras. After that, New Orleans and other French settlements marked the holiday with street parties, masked balls and lavish dinners.

On Mardi Gras in 1837, the first New Orleans Mardi Gras parade took place, a tradition that continues to this day. In 1857, a secret society of New Orleans businessmen called the Mistick Krewe of Comus organized a torch-lit Mardi Gras procession with marching bands and rolling floats. Since then, krewes are still a part of the Carnival scene in Louisiana. Other lasting customs include throwing beads and other trinkets, wearing masks, decorating floats and eating King Cake. Booyah!!

So yes, back to King Cake. There are many ways to make this cake. It’s made from a yeast dough that rises and then is rolled out into a rectangle shape. It’s then filled with a yummy layer of filling and rolled up into a long cylinder. There are all sorts of fillings to fill it with, but we like a cinnamon, Truvia Brown Sugar Blend (to make it lower calorie) and pecans.

It’s reminiscent of a cinnamon roll except after you roll it, you shape it into a circle and fuse the ends together, creating a ring. After you bake it, you put icing on it and sprinkle yellow, green and purple colored sugar on the top. It’s so fun and festive!

Cutting into it is my favorite part (of course)! It’s so pretty to see the ring of filling in the cake. It’s so delicious and can be eaten for dessert or breakfast, too! The tradition of the King Cake is that before you cook it, you put a small plastic baby inside the cake somewhere.

Why a baby? The Mardi Gras or Carnival season officially begins on January 6th or “King’s Day” – also known to Christians as the Epiphany. Epiphany comes from a Greek word that means “to show”. Bethlehem is where infant Jesus first showed himself to the world.

In New Orleans, the person who receives the piece of cake containing the baby, must provide the King Cake for the next Mardi Gras party! Why purple, green, and yellow (gold)? It’s traditional to bake a King Cake in honor of the three kings. The official colors of Mardi Gras, are purple for justice, green for faith, and gold for power.

So there you have it. Now you’re a Mardi Gras King Cake know-it-all! Does all this make you want to run to your kitchen and bake a King Cake? It should!

Especially when you can make it lower calorie and low sugar by using Truvia Baking Blend and Truvia Brown Sugar Blend instead of regular sugar and brown sugar. I also included substitutes for some of the butter by using applesauce. This is an amazing cake that works for not only your Mardi Gras celebration but also for breakfast. It’s light, flavorful and will impress everyone!


Mardi Gras King Cake
 
A fun cake made for a Mardi Gras celebration (or for any occasion because it's delicious!!)

Recipe type: Dessert
Serves: 1 king cake
Ingredients
Dough:
  • ½ cup milk
  • 2 Tbsp. butter*
  • 1 (1/4 oz) packages active dry yeast (or rapidrise yeast)
  • ⅓ cup warm water (110ºF)
  • 2 Tbsp. Truvia Baking Blend (or ¼ cup sugar)
  • 1 egg
  • ¾ tsp. salt
  • ¼ tsp. ground nutmeg
  • 2¾ cups all-purpose flour
Filling:
  • ¼ cup + 2 tsp. Truvia Brown Sugar Blend (or ½ cup light brown sugar)
  • 2 Tbsp. pecans, chopped
  • 2 Tbsp. all-purpose flour
  • 2 Tbsp. unsweetened applesauce
  • 2 Tbsp. butter, melted
  • ½ Tbsp. ground cinnamon
Icing:
  • 2 cups powdered sugar
  • 3 Tbsp. milk (or until thinned to your liking)
  • purple, yellow and green colored sugar for topping
Instructions
  1. Measure milk in a microwavable dish. Add butter and microwave for 1 minute, until the butter is melted. Stir and set aside to cool to room temperature.
  2. In a measuring cup, add the warm water and 1.5 teaspoons of the Truvia Baking Blend (or ½ Tablespoon of sugar). Sprinkle yeast in and stir lightly. Let stand until bubbly, about 10 minutes.
  3. Pour room temperature milk/butter mixture into a large mixing bowl. Add in yeast. Whisk together lightly. Whisk in eggs, the remaining sugar, salt and nutmeg.
  4. Add the first cup of flour in and whisk. Add the rest of the flour and stir with a wooden spoon to combine.
  5. Turn it out onto a lightly floured surface and knead until smooth and elastic, about 5-8 minutes. Spray the mixing bowl the dough was stirred in with cooking spray and place kneaded dough inside. Cover with a cloth or plastic wrap and let rise until doubled in volume, about 2 hours.
  6. Make filling by stirring together brown sugar, chopped pecans, flour, applesauce, melted butter, and ground cinnamon. Set aside.
  7. When risen, punch dough down and roll dough on a lightly floured surface. Shape into a large rectangle, approximately 10x16" or so. Sprinkle the dough with the filling and spread to cover the rectangle. Beginning at the wide side, roll tightly like a jelly roll. Bring the ends of the roll together to make an oval. Cut off a little piece at the ends so they're straight lines and use a little water to press the end together.
  8. Place on a greased baking sheet and let rise for about 45 minutes, or until doubled in sized.
  9. Preheat oven to 325 degrees and bake for about 30 minutes, or until golden brown on the outside. Let cool and then mix powdered sugar and milk together until to your desired consistency. Drizzle on cooled cake. Sprinkle colored sprinkles on top, alternating purple, yellow and green.
  10. Slice and enjoy!

This week has been a crazy one. Lots of things going on for PTA at my son’s school, high school meetings (I can’t believe I will have a high schooler!) and all the regular stuff like swim lessons, baseball, scouts and jiu jitsu. Sometimes I just want to crawl into a hole and sleep for a few days until the weekend begins.

But then I bought Disneyland passes. OMG guys. I’ve NEVER been a Disney fan. As a kid I went like, once to Disney. It doesn’t matter now. Now? I’m obsessed. Disneyland and California Adventure are the BOMB!!! We went yesterday for the first time and I cannot WAIT to go back!! Thank goodness I live in SoCal because I’m sure I’ll be spending my weekends in Disneyland. I can’t complain! I’ve turned into one of those crazy Disney moms and I don’t even care, lol!

Jamaica Retreat Recap – get ready for tons of pictures from my trip to Jamaica last October for the Eat, Love, Sandals Food Blogger Retreat! 

Last October I was given the opportunity to go to Jamaica, without my husband or kids, to meet up with some of the most amazing food bloggers for a retreat. Destination Sandals Ocho Rios Resort!

I’ve been hesitant to write up this Jamaica retreat post. One of the reasons is because of the passing of my friend, Joan. She passed away in her sleep a few months ago from a heart attack. You can read my post dedicated to Joan and see more picture of her there. She was the entire reason I went on this retreat. She locked in a spot for me and pushed me out of my comfort zone to go. I didn’t know many of the girls going so was feeling a bit nervous about that and also overwhelmed at the thought of leaving the country. It had been years since I’d left to go anywhere that far.

I agreed to go because, well, you can’t say no to Joan. She wouldn’t let you.

When we arrived, we took a bus shuttle all the way to Ocho Rios. It was a good 30 minute drive from the airport in Montego Bay. I had no idea driving in Jamaica would be so intense! The drivers drive like maniacs! They drive on the opposite side of the road than we do in America and often pass the car(s) ahead by going into the opposite lane. Cars are literally coming right at you! Then they swerve at the last minute into the left lane again. OMG I swear I almost had a panic attack right in the bus! It was insane!

But then we get there and after dealing with check-in, we go to our rooms to freshen up. The atmosphere is gorgeous. I mean, breathtaking. Even with the humidity and heat, the views are out of this world. They had little golf carts to take us to our suites.

My room was beautiful. Above is the view from my little deck/patio. I had a sitting room, kitchen and huge four poster bed in my suite. Oh, and it had the best air conditioning which was necessary for getting out of the Jamaican heat! 

We had our first dinner, a welcome party that evening. Enjoy some of the pictures of the food below! My favorite was the coconut shrimp on skewers. So yummy!

The next day we had a crazy delicious breakfast of the Jamaican National dish: Ackee & Salt Fish and Jamaican hot chocolate. You guys, this hot chocolate changed my life!!! Best hot chocolate ever!

After breakfast, we had a roundtable discussion about the best thing we’ve ever done for our business. Because, you know, we were there for a food blogger retreat not because we wanted a vacation, right? (wink, wink!)

I had to leave a bit early from the meeting to go on a special date. A special FIRST date. I went snorkeling for the very first time EVER!!!

What Jamaica Retreat recap is complete without a selfie pic?! Ha! This is me terrified, below. I might look excited, but I was terrified. I have a little fear of the ocean. Okay, it’s a huge fear of the ocean. Even if it’s gorgeous and blue, I don’t want to go in it. I think it’s because I’m not a strong swimmer. I can doggie paddle and swim under water, but I don’t know how to do strokes. So yeah, water without set boundaries like a pool, scares me a bit.

The boat was really fun though and I was in good company…

…so I put on my big girl panties, sucked up the fear and went snorkeling! I took my oldest son’s GoPro and snagged a few cool pictures..

It was awesome!! It was the perfect “first” snorkeling experience for me because the water was pretty shallow and there weren’t a ton of sea creatures. Just harmless little fish. I think Leslie and Meghan, who went with me, were a bit disappointed it wasn’t cooler, but it was perfect for me, lol!

After snorkeling, the boat took us to Dunn’s waterfalls. We got to hike up this series of really cool waterfalls with a tour guide leading us up.

The only other waterfall I’ve seen was one in Kona a couple years ago, so I thought the experience was really neat. This picture below totally cracks me up!

One of the best memories from that snorkeling/waterfall trip was the ride back to shore on the boat. The boat driver went the long way and went really fast over the waves in the process. They turned up the loud reggae and other pop music on the speakers and we totally jammed out with the tour guides that went with us. Yep, there was definitely a few renditions of “Watch Me Whip” going on.

After we got back to the resort and cleaned up, we had the opportunity to make a few dishes ourselves at the Jerk Shack in the resort. We dined on Jerk Pork, Fish in Foil Packets, and hush puppies. It was all so delicious!

The following morning, we had another roundtable discussion after breakfast, which was super useful. After that, we headed out in a bus to The Seville Golden Preschool. We each brought a backpack full of school supplies from home to give to the children at the school.

I’m tearing up as I write this, because it was such an amazing experience for me. The area that the school is located is gorgeous, as you can see by the pictures. Right by the ocean. But the area surrounding it is not. Most of Jamaica is poverty stricken. You see it everywhere you look.

Yet these kids at Seville. Wow. They are vibrant. They are thriving. They are happy. It’s contagious. I fell in love with these kids!


We read them books, chatted with them, hugged them, colored with them and then gave them the items we had brought with us. You guys. They were beyond thrilled to get something as simple as a pencil sharpener. Thrilled! A stuffed animal? The best present ever!

They were so sweet! I’m so thankful for the opportunity to be with these amazing kids. It really made this Jamaica retreat the most special. Please donate to the Sandals Foundation to help this and other schools like it! They need every donation!

On our way back to the resort from the school, we parked at a local spot to snap some real Jamaica beach pictures…

Our farewell party was that night. It was a 50’s themed dinner with French food. I ate escargot! The food was my favorite of the whole trip. The best French Onion soup I’ve had in a long time! I have some pictures but the room was so dark, you can hardly tell what it is.

The next day it was time to pack up and go. I was so sad to say goodbye to Jamaica, but even sadder to say goodbye to friends, old and new. I learned so much on this Jamaica retreat.

This picture below means so much to me. It’s the last picture I got with Joan. It was the last time I saw her. I will miss her dearly. She was insistent on taking this picture in the airport by all the duty-free goods. I’m so glad we did because I’ll cherish it forever.

Guess what today is? It’s my BIRTHDAY!!! I’m finally 21!

Just kidding. I wish! I remember being 21 and wishing I was older. My mom used to tell me one day that would change and I’d want to be younger again. Well mom, you were right! I’m definitely feeling older, when I look in the mirror and see some lines forming around my eyes and let’s not even talk about how much harder it is to lose weight. I swear my metabolism has drastically changed during the last couple of years!

BUT all that being said, I’m sure happy with what I’ve learned so far in my life. I’m grateful to be a mom. I’m happy with the person I’ve grown up into. I’m also grateful for this little blog of mine. It’s saved me in a way.

I started it on a whim one day, about 4 years ago. It was soon after my Birthday and I was stuck at home with two little guys who were 11 months apart. I was slowly losing my sense of self. I was only seeing myself as “mom” instead of a mom and a woman with other goals and interests. Does that make sense?

So I started thinking of what I loved to do. One thing was cooking and another was blogging. I had a family blog at the time. So I merged the two together and started YHE! Such a great choice, right?!

To celebrate my birthday today, I wanted to share a little splurge of a recipe – funfetti cookies! I had an event that I needed to bring cookies to and my kids had been begging for my sugar cookies. So I went ahead and dumped some sprinkles into the sugar cookie dough, rolled them out and used a circle cutter to make round cut-out sprinkle funfetti cookies! My little boys loved helping me make these.

I think they turned out so cute and festive but they’re also absolutely delicious! This is honestly the BEST sugar cookie recipe I’ve ever had. It’s my go-to favorite. Adding sprinkles to make funfetti cookies was such a good choice. They’re soft and buttery. The sprinkles add a little crunch and sweetness to them, too. I didn’t top with frosting but you definitely could!

Funfetti Cookies

Recipe type: Dessert
Ingredients
  • 1 cup butter
  • 2 cups sugar
  • 2 eggs
  • 3 tsp. vanilla extract
  • 1 cup sour cream
  • 1 tsp. salt
  • 2 tsp. baking soda
  • 5½ cups all-purpose flour
  • rainbow jimmies sprinkles (about ½ - 1 cup)
Instructions
  1. In a mixer, cream butter and sugar and then add eggs and vanilla. Add sour cream.
  2. In a separate bowl, combine salt, baking soda and flour. Add to butter mixture, creaming until combined. NOTE: If dough seems too sticky to roll out, place in refrigerator for 20 minutes or so and then continue with the next step.
  3. I like to separate the dough into three big balls of dough to roll out separately. When ready to roll out dough, pour sprinkles into only the ball of dough you'll be immediately rolling out (I eyeballed the amounts) and lightly mix them into the dough.
  4. Roll out on a floured surface to about ¼ to ⅓ inches thickness. {Yes, seriously. If you make it any thinner, they will be crispy and not as good! This is the trick to making them super soft!}
  5. Cut with cookie cutter (I used a circle glass) and using a spatula, transfer cookies to baking sheet that has either been sprayed with cooking spray or has parchment paper on it.
  6. Bake at 375 degrees F for 7-8 minutes {Yes, seriously. This is another important step! Do NOT overbake!} They won't look done, but just trust me on this, take them out of the oven.
  7. Wait about 5 minutes and carefully transfer cookies to a cooling rack. (This recipe makes several dozen cookies but is easy to half as well.)

Okay, fess up. January is almost over. Are you still holding on strong to your New Years resolutions?

Be truthful! Or did they fly out the window a few weeks ago like mine did? Ha!

I’ve been good about a couple things and bad about a couple things. I’m not one to make a ton of huge resolutions that I know I can’t keep. I’m all about keeping it smallish. One of mine was to take a multi-vitamin every day. Easy, right? Ha! I failed at that the first week of January! Another is to drink more water. Let’s be honest, that’s always going to be on my list and it’s always going to be a work in progress. #idontlikewater

But a couple of the resolutions I’ve stuck to, is eating a healthy breakfast and simplifying my life. I have both of those covered for you here today all rolled into one recipe, woot woot!

Here’s why these bran muffins are going to simplify your breakfast and your life:

  1. You make up a batch of batter and you never have to stir it again!
  2. It stays in the fridge until ready to be scooped into the muffin tins.
  3. It’s easy to make, with only 9 simple ingredients you probably already have. Life with Less Ingredients is Just As Sweet! #truth
  4. You can double, triple, or quadruple this recipe to make a LOT of ready-to-use bran muffin batter!
  5. Oh, and did I mention it lasts in the fridge for up to six weeks?

See? So many awesome things about these bran muffins that will simplify your life and your morning! This recipe has always been a family favorite. It’s one of those tried & true recipes that I grew up eating and my boys have grown up eating. It’s a recipe straight from my dad’s family cookbook and I make them all the time!

I love the simplicity of it. You make a batch up in about 10 minutes and stick it in the fridge. When you’re in a hurry for breakfast, preheat the oven and scoop some of the batter into a muffin tin. Stick them in the oven, do your hair and make-up and BAM. The muffins are done and you look like a hero for having breakfast ready for the whole family in no time! Plus, they’re lower in sugar, thanks to Truvia®!

No Stir Make Ahead Bran Muffins

Recipe type: Breakfast
Serves: about 2½ dozen muffins
Ingredients
  • 1 cup boiling water
  • 2½ tsp. baking soda
  • 3 cups bran cereal
  • ½ cup oil (canola, coconut, etc)
  • ½ cup Truvia Baking Blend (or 1 cup sugar)
  • 2 eggs
  • 2 cups low-fat buttermilk*
  • 2½ cups white whole wheat flour
  • ½ tsp. salt
Instructions
  1. In a medium bowl, stir baking soda into boiling water and set aside.
  2. In a large bowl, stir together Truvia and oil. Add eggs and mix in well.
  3. Stir in buttermilk, flour and salt. Pour the soda water in and mix well.
  4. Stir in the bran cereal and mix well. Store this mixture in an air-tight container in the refrigerator and use as needed.
  5. This will keep for up to six weeks in the fridge and you will never have to stir again! When you're ready to bake up a batch, line muffin tin with paper liners or grease generously and fill each cup ⅔ full with mixture. Bake at 375ºF for 20 minutes. This recipe is easily doubled, tripled, etc!
Notes
*instead of buying buttermilk, you can sour some milk by adding 2 Tbsp. vinegar or lemon juice to 2 cups of milk. Use this instead of buttermilk if desired.
*personally, I enjoy making the batter a day or so ahead of time before making the first batch. I make this batter the night before and cook in the morning for a quick breakfast!

Guess what today is? National Popcorn Day!!! Am I the first to tell you or did you have it planned out already and have your hand in a big tub of it now as you read this? I’m super excited to be teaming up with some other great bloggers once a month #celebratingfood with things just like National Popcorn Day. (So stick around after the recipe below for links to even more popcorn recipes at the bottom of this post!)

Popcorn is without a doubt, a staple at my house. I always have a carton of microwaveable popcorn in my pantry. We probably cook some up every other day. No joke! It’s one of my kids’ favorite snack to eat.

But, do you ever make popcorn the old fashioned way – on the stovetop? It’s one of the easiest things to make. For REAL! You only need a few ingredients and it takes only a couple minutes to make. What about homemade kettle corn?

If you answered no to that last question then you need to scroll down right now to the ingredients and make this homemade kettle corn ASAP! It’s the easiest snack you’ll ever make and it tastes incredible. A little sweet and a little salty, with a crispy exterior on every popped popcorn kernel. You will want to eat the whole batch!

I like to lower the sugar content a bit by using Truvia Baking Blend instead of regular sugar. Works like a charm! While I love those microwaveable popcorn bags, I’m not sure how healthy they are for you. In this kettle corn recipe, you know exactly what’s going into your popcorn and can control the amount of salt and sugar you add.


Easy Homemade Kettle Corn

Serves: 8-9 cups popped popcorn
Ingredients
  • ¼ cup oil, such as canola
  • 2-3 Tbsp. Truvia Baking Blend (or ¼ cup sugar)
  • ½ cup uncooked popcorn kernels
  • ¼ tsp. salt
  • 1-2 Tbsp. melted butter, if desired for topping
Instructions
  1. Heat oil over medium-high heat in a heavy pan. Add 3 popcorn kernels to the oil. Shake pan every few seconds until the 3 kernels pop.
  2. When popped, add Truvia or sugar and stir constantly until close to dissolved, about 10-15 seconds.
  3. Quickly add ½ cup popcorn kernels and cover with lid.
  4. Shake pan five times and let rest for 2 seconds. Repeat this until you hear the popping stop.
  5. Immediately pull off heat and pour into a large bowl. Toss with ¼ tsp. salt. If desired, add 1-2 Tbsp. melted butter and drizzle over the top for extra flavor. Enjoy!

Howdy! Happy Saturday! What are you up to this weekend? Like I mentioned in my last Healthy Weekly Meal Plan post, my family is in Big Bear this weekend! I am loving the cute cabin we rented. We’re planning on going skiing and tubing this weekend and just hanging out at the cabin the rest of the time. The cabin is the cutest thing EVER. It has a jacuzzi, pool table, foosball table, tons (like, I’ve never seen more) movies and internet. Internet is totally important.

I go through a LOT of food at my house. Having four boys + a husband means I’m constantly cooking and going to the grocery store. I’m always on the lookout for meals that will be simple to make but in the healthy spectrum and that will feed lots of hungry mouths.

With football games constantly playing on TV lately, I feel like I’m always whipping up snacks for my boys to eat while they watch the games. We’re huge football fans! My older two boys play tackle football and love it. One of our favorite game day snacks (and one of our favorite meals, too) are tacos.

Everyone likes tacos! What’s not to love? They’re easy to hold and are packed with tons of flavor inside a crispy taco shell. My version of ground turkey tacos, aka Layered Oven-Baked Ground Turkey Tacos are super simple and taste incredible!

They bake altogether in one pan, which makes it easy to serve. Especially to a bunch of hungry people watching a football game!

Making these ground turkey tacos is easy. First, I visited my local Pavilions. I love that store! They have everything that I need there. They have all of the Old El Paso products all in one spot, making my shopping even easier. I grabbed a box of the Old El Paso Stand ‘n Stuff taco shells, some Old El Paso refried beans and salsa.

I’m always blown away by the quality of Old El Paso products. They’re inexpensive, too! Pavilions always has a great sale going on. I also grabbed the ingredients for my ground turkey tacos. The meat is so delicious and requires no packet of taco seasoning!

After making my taco meat, I pre-baked my taco shells for a few minutes in the oven. Then I added my first layer to the tacos: refried beans. After the beans, I added the taco meat. Then I layered the veggies on the top. First tomatoes, then cilantro, green onions and lastly, cheese. I baked the tacos for about ten minutes, to heat them through and melt the cheese on top.

This is such a great recipe to serve your family. It’s easy, quick and is a recipe everyone will like! I love that the taco shells stand up on their own so you can easily bake and serve them. The layers of deliciousness in these ground turkey tacos will definitely impress anyone you have over for game day, whether it’s friends or whether it’s family. Don’t forget to spice up your game day with Old El Paso recipes and ingredients from Pavilions!

Layered Oven-Baked Ground Turkey Tacos

Serves: 15+ tacos
Ingredients
  • 1 Tbsp. olive oil
  • 1 onion, diced small
  • 1 green bell pepper, diced
  • 2-3 cloves garlic, minced
  • ⅓ cup tomato paste
  • 4 tsp. chili powder
  • 1 pound lean ground turkey
  • 1 tsp. salt
  • 1 (16-oz) can Old El Paso Refried Beans
  • 1 (7.1-oz) box Old El Paso Stand 'N Stuff Taco Shells
  • tomatoes, chopped
  • cilantro, chopped
  • green onions, chopped
  • shredded colby jack cheese
  • Old El Paso salsa, for topping
Instructions
  1. Heat oil over large skillet over medium-high. Add onion and bell pepper and sauté until softened, about five minutes. Add in garlic and stir for another minute or two.
  2. Stir in tomato paste, chili powder and salt. Add ground turkey, breaking up with a wooden spoon until cooked through.
  3. Meanwhile, preheat oven to 325ºF. Lay the taco shells out as directed on the box and pre-bake for 6-7 mins (or as directed on box).
  4. When shells are done, pull out of oven and let cool for a few minutes. Turn oven heat up to 350ºF.
  5. Arrange taco shells on baking sheet and fill the bottom of the shells with refried beans. Then add cooked taco meat. Now layer the veggies on: tomatoes, cilantro and green onions and top with cheese.
  6. Bake in preheated oven for 10 minutes or until heated through and cheese is melted. Serve with any extra toppings, such as salsa. Enjoy!

Last Christmas Eve, my family was invited to our friend’s home to celebrate the holiday. They had the yummiest food and I was really impressed! When I asked what the recipe was for the salad I was enjoying, my friend told me sheepishly that she hadn’t actually made it from scratch, but ordered it from a local restaurant near us. It was a Chinese Chicken Salad…and I was in LOVE!

From then on I was obsessed with Chinese Chicken Salad! There’s something about the savory aspect of the lettuce, veggies and chicken with the sweetness of the mandarin oranges and homemade dressing. It’s the perfect combo together and makes the best ever Chinese Chicken Salad!

To make this easy and delicious salad, I combined romaine lettuce, red bell pepper, cooked chicken, roasted almonds and sesame seeds. I crumbled some uncooked ramen noodles on top, too.

I don’t know about you but I love love love ramen noodles! It’s the 16 year old in me. Have you ever eaten the dry noodles from the package? My two younger boys love eating the noodles like that. I crush the package before opening it up so I get little chunks of uncooked ramen noodles and tossed it in the salad. I love the added crunch it gives!

The homemade salad dressing is so simple to make with only a few ingredients. It completes this incredible Chinese Chicken Salad! Instead of throwing that seasoning packet away from the ramen noodles, I used it in the dressing along with a little oil, vinegar, sugar and salt and pepper. It’s really simple to mix together and keeps in the refrigerator for several days. I like to mix it in a jar so I can shake it up before pouring it on my salad.

I’m really trying to eat more greens throughout the week. I mentioned in this post that I’ve been eating healthier in order to lose a few pounds. This Chinese Chicken Salad is definitely making things a lot easier! Not only is it healthy but it honest-to-goodness does NOT taste like it’s healthy, lol! It’s disguised really well. Healthy food doesn’t always have to taste like it’s healthy. Stick to those New Years Resolutions and eat more Chinese Chicken Salad!


Chinese Chicken Salad with Homemade Easy Dressing
 
Chinese Chicken Salad is a healthy, flavorful, easy lunch or dinner salad recipe!
Author:
Recipe type: Salad
Serves: 8-10 servings
Ingredients
Salad:
  • 1 bunch romaine lettuce, chopped
  • ½ red bell pepper, diced
  • 1 bunch green onions, sliced
  • ½ cup slivered almonds
  • 1 Tbsp. sesame seeds
  • 1 package Chicken flavor Top Ramen, noodles crushed
  • 1 pound chicken tenders, cooked and cubed
  • 1 large can mandarin oranges, drained
Dressing:
  • 1 flavor packet from the Top Ramen
  • ⅓ cup canola oil
  • ¾ Tbsp. Truvia Baking Blend (or about 1½ Tbsp. sugar)
  • 2 Tbsp. vinegar
  • ¼ tsp. black pepper
  • ¾ tsp. kosher salt
Instructions
  1. Preheat oven to 350ºF. Toast almonds for 3 minutes, stirring once or twice while cooking. Sprinkle sesame seeds over almonds and roast for 2 -3 minutes together or until browned. Set aside.
  2. Meanwhile, combine lettuce, bell pepper, green onions, chicken, oranges and dry, crushed ramen noodles.
  3. Combine dressing ingredients in a jar and shake to combine.
  4. When almonds and sesame seeds cool, add to salad. When ready to serve, toss with some of the dressing. Serve and enjoy!

I love the month of January’s because I celebrate my Birthday (woohoo!) and my anniversary is right on the tail end of the month. But I also hate January because after all those yummy holiday treats, I always gain a few pounds. January = New Year’s resolutions.

I haven’t minded swapping out breakfast and lunch with a protein shake. Yet. I’ve also been working out almost every day, lifting weights and doing cardio. I’m hoping to see results in a month. It always takes my body sooooooo long to lose any weight!

The protein shakes have cut my sweet cravings down quite a bit, but I do like having a little something chocolatey every so often. That’s where this awesome recipe comes in!

I found a recipe from Hungry Girl several years ago that I changed up a bit to become a skinny dessert staple in my house. I had to share it with you! Only 3 ingredients and no eggs for this Skinny Peanut Butter Brownie Fudge!

I love adding pumpkin to baked goods because it takes the place of things like eggs and butter/oil. You can’t taste the pumpkin at ALL! It’s the pumpkin that makes this dish low calorie.

The peanut butter is the perfect compliment to the fudgy chocolate. Just a little bit goes a long way. Each bite of this delicious Skinny Peanut Butter Brownie Fudge is a dieters heaven! With only 42 calories per square, this is a rich, decadent dessert that will satisfy your sweet tooth but keep your waistline happy!


3 Ingredient Skinny Peanut Butter Brownie Fudge

Serves: About 36 1½" squares
Ingredients
  • 1 (12.35 oz) box Sugar Free Brownie Mix
  • 1 (15-oz) can pureed pumpkin
  • 2 Tbsp. reduced fat peanut butter, room temperature
Instructions
  1. Preheat oven to 350ºF. Spray a 9x9" square dish with cooking spray and set aside.
  2. In a mixing bowl, combine the brownie mix and pumpkin. Stir until smooth (this takes a bit of elbow grease).
  3. Pour into prepared dish, smoothing down the top. Spoon peanut butter in globs on top of brownie mix and lightly swirl around top with a knife until marbled throughout.
  4. Bake for 35 minutes in preheated oven. Cool. Cut into 1½" squares and enjoy!
Notes
*store in an airtight container. These are best eaten within a day or two.
