Funfetti Cookies to celebrate a special day! This is honestly the BEST sugar cookie recipe EVER. They’re soft, buttery and the sprinkles add just the right amount of crunch and sweetness!
Guess what today is? It’s my BIRTHDAY!!! I’m finally 21!
Just kidding. I wish! I remember being 21 and wishing I was older. My mom used to tell me one day that would change and I’d want to be younger again. Well mom, you were right! I’m definitely feeling older, when I look in the mirror and see some lines forming around my eyes and let’s not even talk about how much harder it is to lose weight. I swear my metabolism has drastically changed during the last couple of years!
BUT all that being said, I’m sure happy with what I’ve learned so far in my life. I’m grateful to be a mom. I’m happy with the person I’ve grown up into. I’m also grateful for this little blog of mine. It’s saved me in a way.
I started it on a whim one day, about 4 years ago. It was soon after my Birthday and I was stuck at home with two little guys who were 11 months apart. I was slowly losing my sense of self. I was only seeing myself as “mom” instead of a mom and a woman with other goals and interests. Does that make sense?
So I started thinking of what I loved to do. One thing was cooking and another was blogging. I had a family blog at the time. So I merged the two together and started YHE! Such a great choice, right?!
To celebrate my birthday today, I wanted to share a little splurge of a recipe – funfetti cookies! I had an event that I needed to bring cookies to and my kids had been begging for my sugar cookies. So I went ahead and dumped some sprinkles into the sugar cookie dough, rolled them out and used a circle cutter to make round cut-out sprinkle funfetti cookies! My little boys loved helping me make these.
I think they turned out so cute and festive but they’re also absolutely delicious! This is honestly the BEST sugar cookie recipe I’ve ever had. It’s my go-to favorite. Adding sprinkles to make funfetti cookies was such a good choice. They’re soft and buttery. The sprinkles add a little crunch and sweetness to them, too. I didn’t top with frosting but you definitely could!

Ingredients
- 1 cup butter
- 2 cups sugar
- 2 eggs
- 3 tsp. vanilla extract
- 1 cup sour cream
- 1 tsp. salt
- 2 tsp. baking soda
- 5½ cups all-purpose flour
- rainbow jimmies sprinkles about 1/2 - 1 cup
Instructions
- In a mixer, cream butter and sugar and then add eggs and vanilla. Add sour cream.
- In a separate bowl, combine salt, baking soda and flour. Add to butter mixture, creaming until combined. NOTE: If dough seems too sticky to roll out, place in refrigerator for 20 minutes or so and then continue with the next step.
- I like to separate the dough into three big balls of dough to roll out separately. When ready to roll out dough, pour sprinkles into only the ball of dough you'll be immediately rolling out (I eyeballed the amounts) and lightly mix them into the dough.
- Roll out on a floured surface to about ¼ to ⅓ inches thickness. {Yes, seriously. If you make it any thinner, they will be crispy and not as good! This is the trick to making them super soft!}
- Cut with cookie cutter (I used a circle glass) and using a spatula, transfer cookies to baking sheet that has either been sprayed with cooking spray or has parchment paper on it.
- Bake at 375 degrees F for 7-8 minutes {Yes, seriously. This is another important step! Do NOT overbake!} They won't look done, but just trust me on this, take them out of the oven.
- Wait about 5 minutes and carefully transfer cookies to a cooling rack. (This recipe makes several dozen cookies but is easy to half as well.)
