First thing in the morning, I usually run on the treadmill, do sit-ups, and then eat a siggi’s yogurt and a banana. Have you ever tried siggi’s yogurt? It’s an Icelandic-style strained yogurt that doesn’t contain any artificial preservatives, thickeners, sweeteners, flavors or colors, and is made with milk from family farms who do not use growth hormones such as rBGH.
The packaging brags (rightfully so) that the yogurt has more protein than sugar. Less sugar and more protein means after eating a cup of siggi’s yogurt, you’ll be fuller longer and your blood sugar won’t spike. Perfect if you’re watching your calories and eating healthier!
While I love eating a cup of yogurt for breakfast, sometimes I need a little change. Insert {baked oatmeal}. It’s almost like an oatmeal cake, but instead of being full of butter, sugar and flour – it’s full of oats, yogurt, applesauce, and egg whites. Sounds boring right? Um, nope. It’s deeelicious.
And perfect for a healthy breakfast that will fill you full of good stuff before a busy day. Your family won’t even know it’s healthy! Serve with a drizzle of syrup, fruit or a few spoonfuls of yogurt, and you got yourself a new breakfast of champions!
Ingredients
- 3 cups quick oats
- 2 Tbsp. Truvia Brown Sugar Blend or 1/4 cup light brown sugar
- 1 3/4 tsp. baking powder
- 3/4 tsp. cinnamon
- 1/4 tsp. salt
- 1/2 cup milk
- 1/2 cup plain applesauce
- 1/2 cup siggi's strawberry yogurt about one 5.3-oz container
- 2 egg whites ot about 1/4 cup egg white substitute
- 2 Tbsp. canola oil
- 1 1/2 tsp. vanilla extract
- 1 Tbsp. Truvia Brown Sugar Blend or 2 Tbsp. light brown sugar
Instructions
- Preheat oven to 350ºF. Spray a 1.5 quart casserole dish with cooking spray; set aside.
- Mix together quick oats, 2 Tbsp. Truvia, baking powder, cinnamon, and salt in a medium sized bowl, until combined.
- Add milk, applesauce, yogurt, egg whites, oil and vanilla into the oat mixture. Stir together to combine.
- Pour into prepared dish and bake in preheated oven for 30 minutes, or until toothpick comes out clean. During the last 5 minutes of baking, pull baked oatmeal out and sprinkle the last 1 Tbsp. Truvia Brown Sugar over the top and continue baking for 5 minutes.
- Serve with a drizzle of syrup or milk, fruit or yogurt. Enjoy!
