These Peach Muffins are filled with chunks of yummy peach pieces. It’s the best breakfast or snack!
Who doesn’t love a good muffin? For breakfast or lunch or dessert?
Here are a few of my favorites:
Apple Carrot Muffins, Banana Streusel Muffins and Fudgy Avocado Muffins. YUM.
I used to hate breakfast. I think it was mostly the thought of preparing something as soon as I woke up that killed the dream for me.
Then I realized that peach muffins are easy to make and you can refrigerate them or freeze them for later.
So easy peasy. So many options.
These muffins are amazing. They’re soft and moist, and the peach flavor is awesome. Every time I make them, I lick the batter from the bowl. Literally.
Note: You can substitute applesauce in place of the coconut oil/butter and if you’re not a huge peach fan, use berries in place of the peaches. My boys and husband love these and I hope you will too! They’re the perfect breakfast or treat!
Peach Muffins
Ingredients
- 1 egg slightly beaten
- 1/4 cup coconut oil melted butter OR applesauce, for lower fat
- 1/4 cup + 1 Tbsp Truvia Baking Bend OR 2/3 cup sugar
- 1/2 tsp. salt
- 1/4 tsp. cinnamon
- 1 tsp. lemon juice
- 1/4 tsp. vanilla
- 2 cups all-purpose flour
- 1 Tbsp. baking powder
- 1 cup milk
- 1 cup peeled and diced peaches
Instructions
- Preheat oven to 400 degrees F. Grease cupcake pan or line with paper liners.
- Combine egg, butter (or applesauce), sugar, salt, cinnamon, lemon juice and vanilla in a large mixing bowl.
- Mix flour and baking powder in a small bowl. Alternate adding in flour mixture and milk to large mixing bowl, stirring until just blended. Fold in peaches.
- Bake for 18-20 minutes in preheated oven. Yummy when warm, enjoy!!

These look sooooo good and I absolutely love peaches! The problem is, they’ve been hit or miss for me this summer. Sometimes when I buy them they are sweet, juicy and irresistible and other times- mushy and nasty. Hopefully before the season ends, I can get my hands on some winners and try these muffins!

OMG Me too Kim!!! Peaches have been so hit and miss for me this year. In fact, when I was making this very batch, I threw away two before keeping the third peach and throwing it in to the batter. It wasn’t the greatest peach but after it was baked, you couldn’t even tell! So I’m thinking it’s a great recipe for using those kind of peaches. Thanks for stopping by Kim! xo!

Hehe, I think once I realized quick breads (cakes? 🙂 and muffins (cupcakes YES) were breakfast food, I was totally on board as well. I still save most of my muffins for afternoon snacks, but they make the best breakfasts. Especially when peaches are involved!
