Peppermint Ice Cream Cookie Bars – delicious sandwich cookie crust topped with Dreyer’s Peppermint Wonderland Ice Cream and topped with chocolate syrup and crushed sandwich cookies.
When I was little, we always had at least one gallon of Dreyer’s ice cream in the freezer. It’s my dad’s very favorite dessert EVER and his very favorite brand. No joke! Most of the time he doesn’t even get a bowl, but just eats it right out of the carton.
I’ve followed in my dad’s footsteps because I’m also an ice cream connoisseur. Currently, I have three containers of Dreyer’s Slow Churned ice cream in my freezer. It’s the only kind I buy.
I have so many great memories of Sunday nights when I was a kid. We would have pot roast and mashed potatoes for dinner. Then my mom would pull out her famous frozen dessert she called “Bride’s Pride”. It had a crumbled chocolate cookie crust topped with mint chocolate chip ice cream and then drizzled with chocolate syrup. Yummy, right?! It’s one of my favorites. Weird how food (specifically ice cream) can bring back happy memories!
I couldn’t not share my mom’s awesome recipe with you! My version of Bride’s Pride has the same buttery, crumbly cookie crust but is topped with Dreyer’s Slow Churned Peppermint Wonderland Ice Cream. It’s then topped with chocolate syrup and the remaining crumbles of chocolate cookies. Basically, it’s to die for.
Dreyer’s Slow Churned ice creams have the most amazing texture and flavor. I love all of their flavors but look forward to their winter flavors all year long. The Peppermint Wonderland is creamy and full of little crunchy pieces of mint. Plus, you get all the taste with half the fat and 1/3 fewer calories than regular ice cream, which makes it even better! 😉
Now as an adult, I carry on the tradition and make this dessert for my four boys. Saying they love it is an understatement! Sunday family ice cream night always puts a smile on their faces!
Peppermint Ice Cream Cookie Bars
Delicious sandwich cookie crust topped with Dreyer's Peppermint Wonderland Ice Cream and topped with chocolate syrup and crushed sandwich cookies.

Ingredients
- 28 chocolate sandwich cookies crushed
- 1/4 cup melted butter
- 1/2 cup chopped pecans
- 1 1.5 quart container Dreyer's Peppermint Wonderland Ice Cream, softened
- chocolate syrup
Instructions
- In a food processor, blend sandwich cookies, melted butter and pecans.
- Put 3/4 of the chocolate cookie mixture into a 9x13 pan and press down with fingers to get it packed down and even.
- Spread the softened peppermint ice cream on crust. Drizzle chocolate syrup over the top and sprinkle with the remaining chocolate cookie crust mixture. Place in freezer until firm and cut into squares to serve. Enjoy!
