I know all of those exclamation points are over the top, but bear with me. I am just too excited to use a period!!!!!!
This isn’t just any car… it’s a 2015 Chevy Suburban in tungsten gray. So beautiful! And brand spankin’ new. It has like 80 miles on it. And it’s mine! All mine!
Guys, this is a HUGE deal for me. Before this, I was driving a 1999 Dodge Durango that had so many problems, it was basically just a problem on wheels. It was paid off and we were trying to be frugal for a few years without a car payment. I paid my dues and now I get to reap the reward!
Suburbans are pretty big cars. I wasn’t thinking I wanted to go that big. I really wanted a Tahoe, but after test driving one, I found that there just wasn’t much room. The third row is small, with minimal leg room. And the cargo space in the back was about the same as the Durango. So we drove the Suburban and it was love at first drive!
One of the main reasons I wanted a new car is because my boys are getting big. Man-size big. I needed more room for sure. Big ‘ol 13 year old kids climbing into the back of a small Durango for carpool, practically folding themselves in half to get into the third row…not cool. I have so much more room now and lots of cargo space in the back. Obviously, I’m thrilled to have a new car. 😉
But enough about my new car. Let’s talk about this kid above and these brussels sprouts below.
Tate. My youngest, funny, break dancing, photographer wannabe. He hung out with me while I took these brussels sprouts pictures. In fact, he helped me take this picture below. Not bad, eh? 😉
He’s always so interested in the cooking and the photography I’m working on. He’s my helper and my taste tester. You always wonder what your kids are going to be when they grow up, but I’m thinking this kid has a future in cooking and/or photography (blogging, too perhaps? 🙂 ) I snapped this picture of him really quickly, and that pose is all him. {i heart him}
These brussels sprouts are crazy delicious. They don’t take long to make and have such a great flavor. Obviously, anything with bacon is bound to taste amazing, right? It’s so great to take the classic flavor of bacon and add in a healthy thing like brussels sprouts and you get the best of both world’s. The tastiest side dish that works great for a party/get together or just a weeknight meal!
Ingredients
- 3 slices bacon
- 4 green onions
- 2 garlic cloves minced
- 1 lb. brussels sprouts halved if large
- 1/3 cup water
- 1/2 tsp. salt
- 1/4 tsp. pepper
- 1 tsp. lemon juice
Instructions
- In a medium sized pot, cook 3 slices of bacon over medium heat. When browned and crispy, pull bacon out and set aside.
- In remaining bacon grease, add green onions, garlic, salt and pepper. Cook until softened. Be careful not to burn!
- Then add the brussels sprouts and 1/3 cup water. Cover on medium heat, until sprouts are tender.
- Add lemon juice to sprouts and top with crumbled bacon. Toss and serve. Enjoy!

Brussel sprouts aren’t something we often have, but bacon makes anything great!
Yay for new cars!! My husband has driven an older car he has hated for a while so we could save up, in a month or two he will get to get a new truck and he is counting down the days!! 🙂
