I’m in awe that it’s already July. Where the heck did the year run off to? How can it already be half over?
There are so many things that I love about summer. The sunshine, beach days, afternoons in the yard watching the boys play in the hose… so many great memories being made.
But there’s on thing that tears at me every summer, looming over my head, slowly consuming me until it finally happens: My oldest leaving to spend a month with his dad in Utah.
It happens every year and I hate it. There. I said it.
I try to be the happy mom that is always positive about things but when you have to say goodbye to your first born for a month every year (plus holidays) it’s just downright hard.
Justin and I have definitely been through some tough times together and I feel such a bond with him. He helps me so much with the boys. He’s always my go-to guy when it comes to helping me put my two little guys in the car, or entertaining them when I have to work, or even helping me get them dressed. He will be such a good dad one day.
He adds a great dynamic to our family. He prevents fighting from the boys and is my shoulder to lean on. He’s always making me laugh and makes me feel needed (in good mom ways, you know?).
He’s at scout camp this week and when he comes back, we’ll have one day with him before he leaves for the rest of the long month of July.
Honestly, this week has been so hard for me. I miss him a lot. Even though I’m sure he’s having a blast at camp, I can’t help but dwell on the impending month ahead.
BUT… I need to try and stay positive about it. He loves seeing his dad and has a great relationship with him and his family. I’m sure he will have a blast!
Don’t worry about me, I’ll just be baking up these potato wedges every day, devouring batch after batch, counting down the days when I can go pick him up from the airport. 😉
But seriously, these fries are the bomb diggity. They have so much flavor packed in a small fry. I heart parmesan and these are truly magnificent.
If you’ve been living under a rock and haven’t made homemade fries yet – this is the simplest and most delicious basic recipe you will find. If you’re ever feeling down, these babies will pick you right up! 😉 Beware of smiley faces that will take place after biting into these crisp, flavorful fries with fry sauce!
Baked Parmesan Potato Wedges
Ingredients
- 6 white potatoes
- 1/4 cup olive oil
- 1/2 tsp. salt
- 1/4 tsp. paprika
- 1 Tbsp. powdered parmesan cheese
- 1/4 tsp. garlic powder
- 1/8 tsp. pepper
- Fry sauce:
- mayonnaise
- ketchup
Instructions
- Preheat oven to 375º F. Cut potatoes into wedges, leaving the peel on. Arrange potato wedges on a baking sheet. Mix oil, salt, paprika, parmesan cheese, garlic powder and pepper.
- Pour mixture over potatoes and toss gently with your hands. Bake for 45 minutes or until potatoes are golden brown.
- While cooking, mix together some mayonnaise and ketchup to make fry sauce. I usually do half mayo and half ketchup but make what tastes the best to you!
- When potato wedges are golden brown, take out and serve with fry sauce. Enjoy!

I always feel like I’ve done something good when I make my own oven fries! Sprinkling on the parmesan sounds great! I would be just like you if my oldest would leave for that long. What a sweet and special bond you have! The year is going so fast, he will be back before you know it!

These ‘fries’ look delish. I could make a meal of just these. Get feelin’ like a teenager again. Whoa heavy duty feelings—speaking of feelings—-about not having your eldest boy full time. That is hard. But it is what it is.
