I’ve never tried freezing it but I’m willing to bet it would freeze well, just like any other cake! Let me know if you do try it!

Hi Sam! Did you add the cornstarch to the filling as the instructions direct? That’s how it stays thick, as well as cooking it long enough to be thick and bubbly.

Yep, it’s correct! It’s a smaller jelly roll pan so it may look like it’s rolled from the long side but it’s actually rolled from the short side. I hope you’ll give it a try!

This is not a recipe that bakes well into cupcakes because it’s meant to be a flat sheet cake you roll up with a filling. I hope you’ll give it a second chance and try the recipe again and make it into a sheet cake! Thanks!

I haven’t made any other filling but you could try replacing the lemon juice, etc with orange juice for an orange filling?
