My husband and I have been on a mission to eat healthier. I keep calling it a diet, and my husband keeps telling me that it isn’t a diet! And he’s right, it really isn’t. It’s just a healthier way of eating with portion control.
We plan out our lunches and dinners on Saturdays and make a ton of healthy proteins and vegetables and then divide everything into portable containers. If you’re someone who already does this, then you know how amazing it is to be able to pull out a container from the fridge and heat it up and eat your healthy lunch or dinner without the hassle of prepping it right before you eat it. It is magical!
If you haven’t ever tried meal prepping before, I strongly suggest you try it! I feel so much healthier. It really has changed the way I think about food. When I look at the size of my pre-made dinner, I usually think “there’s no way this is going to fill me up”. But no joke. It fills me up every time!
Today I want to show you a really amazing way to cook three different flavors of chicken in one sheet pan! I found this idea from Fit Men Cook on Pinterest one day and have used the idea ever since. Genius!! This is the BEST way to meal prep chicken and get variety. I need that with my chicken! It can get super boring and bland. I can’t have zero-flavor chicken, guys!
So back to the the best way to meal prep chicken. 😉 Cover the sheet pan with foil and then take two sheets of foil and roll each into a long stick shape. Use the stick shapes to separate the sheet pan into thirds. Then make these clean-eating marinades to flavor cubed chicken breasts and bake them up. The BEST way to cook chicken and so easy too! The clean up is a breeze!
Ingredients
- 1 pound boneless skinless chicken breast, cut into cubes
- Zest from 1/2 lemon
- 2 Tbsp. fresh lemon juice
- 1 tsp. fresh thyme diced
- 1/2- 1 Tbsp. olive oil
- 1/4 tsp. kosher salt
- 1/4 tsp. fresh ground pepper
- 1 small garlic clove minced
Instructions
- Mix lemon zest, lemon juice, thyme, oil, salt, pepper and garlic together in a small bowl. Pour over chicken cubes and toss until coated.
- Bake on baking sheet for about 20 minutes at 400ºF.

- 1/2 tsp. garlic powder
- 1/2 tsp. onion powder
- 1/2 tsp. Mexican oregano
- 1/4 tsp. cayenne or more if desired
- 1/4 tsp. kosher salt
- 1/8 tsp. red pepper flakes or more if desired
- drizzle coconut or olive oil
Instructions
- Mix paprika, garlic powder, onion powder, oregano, cayenne, salt and pepper flakes together.
- Sprinkle on raw chicken cubes, drizzle with coconut or olive oil and toss.
- Bake on baking sheet for about 20 minutes at 400ºF.

- 1/4 tsp. salt
- 1/4 tsp. pepper
- 1/4 tsp. Mexican oregano

- 1/2 Tbsp. olive oil
- 1/4 tsp. chili powder
- Combine garlic, lemon juice, cumin, salt, pepper, oregano, cilantro, olive oil and chili powder in a small bowl. Toss with chicken cubes.
- Bake on baking sheet for about 20 minutes at 400ºF.

If you make 3-lbs of chicken how many prepped meals do you get out of it?
I get about 10-12 meals from these recipes. I cook it for both my husband and I so it works out great for a mostly full week’s worth of meals for both of us. I hope this helps!
Your description says 3 marinades, but I’m only seeing 2 (Lemon Thyme marinade and Cajun Rub marinade).
