Most mornings I’m scrambling to get my kids up and ready for school and out the door that I forget to eat. It’s not that I’m sleeping in and rushing, but the crazy thing is that I get up early every morning!
So I’m up at 6:30am to get the first kid out the door by 7am, then get the next one up and out by 7:45am. My younger two go at 8:15am and I’m usually throwing food at them to get them to eat something for breakfast. When everyone is at school, I realize that I’m famished and I need to eat ASAP or I’ll be hangry if I don’t.

This French Toast in a mug is such an easy breakfast for on-the-go! French toast was a breakfast staple when I was growing up. I still like to make it for my kids on weekends sometimes. But it’s a bit of work and not something I can feasibly make for my kids in the morning without losing my mind. 😉
This mug french toast is like comfort food meets healthy because it’s yummy french toast but uses egg whites instead of whole eggs to save some calories and add in more protein. So you get the comfort of the dish without all of the calories and fat.
AllWhites 100% liquid egg whites is my favorite way to replace eggs in recipes. It’s fat-free, cholesterol-free and low-calorie source of lean protein (5 grams of protein, 0 grams of fat and only 25 calories in each serving!). Each carton contains 100% real liquid egg whites, with half the calories of traditional whole eggs and less than 1% carbohydrate.

Ingredients
- 2 slices bread any kind
- 1/4 cup AllWhites Egg Whites
- 2 Tbsp. fat-free milk
- 1 tsp. Truvia sweetener or other favorite sweetener
- 3/4 tsp. vanilla
- 1/2 tsp. cinnamon
- dash salt
- optional toppings: berries whipped cream, powdered sugar, etc
Instructions
- Cut bread into one inch cubes.
- Mix together egg whites, milk, sweetener, vanilla, cinnamon and salt. Whisk until combined.
- Spray a microwave-safe mug with cooking spray. Add enough bread to coat the bottom of the mug. Drizzle with a little of the egg mixture. Add a few more pieces of bread and drizzle with a little egg mixture. Continue to do this until all the bread and egg mixture is used and bread is coated with egg.
- Place in microwave and cook for one minute. Check and if still runny at the bottom of mug, cook another 30 seconds. Serve immediately with preferred toppings. Enjoy!

i love adding extra protein to scrambled eggs by adding whites!
Oh my goodness that looks so delicious. I have never tried that but it looks so much easier in the mug- lol. More excuses for me to eat more 😉 I think I would make a white cake with fresh berries and whipped cream! Egg whites are the best for recipes and getting in that protein!
