Okay, mom confession here…my four and five year old just took their very first swim lesson today. Good news, right? Except they’re kind of old to be just barely learning to swim, right? I’ve always wanted to be the mom that has the 2 year old who’s able to swim without floaties, but I just never got around to putting them in lessons! #momfail
Truth be told, I get very involved in my older boys’ schedule. With sports, music, school, etc. I get super busy with what they have going on and end up just dragging my two youngest along with me to games and practices. I’ve hardly had the time to sign them up for anything.
But I had a traumatic experience this last Saturday that I won’t soon forget. We had a pool party to celebrate my oldest sons first day at football. We had just gotten to the party with our whole family. Immediately my 5-year old, Brock got his floaties on and was swimming around the pool (which was full of tons of my son’s football teammates). I was urging my 4-year old, Tate to come up and get his floaties on but of course he was doing his own thing and was walking on the big long step in the pool.
My husband and I were watching them closely right next to the pool but turned for one second to say hi to a parent who had walked up to us, when I hear this tiny yell: “Mom!”. I look to see Brock sinking with the weight of Tate, who’s completely under water, holding onto Brock for dear life.
You guys. I will never forget the look on Tate’s face. His eyes were huge and staring right at me under the water, pleading “save me!”. So of course I dove in the pool with my regular clothes and shoes on, with my husband right behind me, ruining his phone and keys.
Tate was only under for a couple seconds and is totally fine but seriously – it only takes ONE second of turning your back. With all those kids in the pool, not one of them noticed what was going on. I’ve never been so scared, shaky and so so SO grateful for my boys and their safety. It really shook me up. I couldn’t stop thinking (and crying) about it all weekend. So on Monday I got them all signed up for swim classes and I’m so glad I did. They absolutely LOVED going!
And you know what else they loved? These Strawberry Cheesecake Rolls! What’s not to love? Crescent rolls (which are freaking awesome on their own) with a cream cheese mixture spread on each triangle, a scoop of strawberries rolled together and baked.
Holy heck, these are yummy! I sprinkled the tops with a little cinnamon and sugar when I pulled them from the oven. They taste best when they’re fresh right from the oven. I love how the cream cheese and strawberries sort of melt together and create this gooey yumminess! If you have strawberry cheesecake lovers at your house, I’m sure you won’t have any leftover. They are so good!
Easy Strawberry Cheesecake Rolls
Ingredients
- 1 8-oz package reduced-fat crescent rolls
- 4- oz light cream cheese
- 2 Tbsp. powdered sugar
- 1/2 tsp. vanilla
- 3/4 cup strawberries chopped small
- 1-2 tsp. Truvia sweetener or sugar to sweeten strawberries
Instructions
- Preheat oven to 375ºF. Spray a cookie sheet with cooking spray. Set aside.
- Combine cream cheese, powdered sugar and vanilla in a small mixing bowl.
- Open crescent roll package and separate each into triangles. Pat out each triangle wither fingertips to thin out a bit.
- Spread a teaspoon or so of cream cheese mixture onto each triangle.
- Then place a small scoop of strawberries on the wider edge of the triangle.
- Roll up each crescent roll, starting on wide edge, tucking in edges over the strawberries and then roll down to the point of the crescent, creating a little bundle.
- Place on prepared cookie sheet and repeat until all strawberry cheesecake rolls are made.
- Bake in preheated oven for 10-12 minutes, or until dough is cooked through and golden brown.
- Sprinkle with cinnamon and sugar if desired. enjoy!
