Eggnog Cookies

Soft, cake-like cookies using yogurt in place of most butter and tastes just like eggnog but in cookie form.
  • 2¼ cup all-purpse flour
  • 1 tsp. baking powder
  • ½ tsp. ground cinnamon
  • ½ tsp. ground nutmeg
  • ½ cup Truvia Baking Blend (or 1¼ cup granulated sugar)
  • 6 Tbsp. butter
  • 3 Tbsp. light vanilla yogurt (I used Yoplait brand)
  • ½ cup light eggnog
  • 1 tsp. vanilla extract
  • 2 egg yolks
  • ground nutmeg, for sprinkling on top before baking
  • 1 cup powdered sugar
  • 2-3 Tbsp. light eggnog
  1. Preheat oven to 300ºF.
  2. In a medium bowl, combine flour, baking powder, cinnamon, and ½ tsp. nutmeg. Mix well and set aside.
  3. In a large bowl, cream sugar, butter and yogurt with an electric mixer. Add eggnog, vanilla and egg yolks. Beat at a medium speed until smooth.
  4. Add the flour mixture and beat at low speed just until combined. Careful not to overmix!
  5. Drop by rounded teaspoons onto cookie sheets that have been lightly sprayed with cooking spray. Sprinkle lightly with nutmeg.
  6. Bake for 23-25 minutes or until bottoms are lightly browned. Transfer immediately to flat surface and let cool.
  7. Pour powdered sugar into a small bowl. Add in eggnog one tablespoon at a time until the consistency you like. Drizzle over the tops of the cooled cookies.
  8. Devour and enjoy!
