Spinach Salad with Strawberries, Peaches, Candied Walnuts, Goat Cheese & Poppyseed Dressing

Spinach Salad with strawberries, peaches, candied walnuts, goat cheese and a crazy good (and crazy easy) homemade poppyseed dressing!
Dressing Ingredients:
  • 2 Tbsp. Truvia Baking Blend (or 4 Tbsp. sugar)
  • 1 tsp. grated red onion
  • ⅓ cup white vinegar
  • ⅔ cup canola oil
  • ¾ tsp. ground mustard
  • ¾ tsp. salt
  • 1 tsp. poppy seeds
Salad Ingredients:
  • 2 Tbsp. Truvia Baking Blend (or 4 Tbsp. sugar)
  • ½ cup walnut halves
  • 2 cups fresh baby spinach
  • ½ peach, sliced
  • ½ cup sliced strawberries
  • 1-2 Tbsp. crumbled goat cheese
  1. Combine all of the dressing ingredients except the poppy seeds into your blender. Blend until combined. Pour in poppy seeds and pulse to incorporate.
  2. In a small pan, stir together 2 Tbsp. Truvia and walnut halves over medium heat. Stir constantly until sugar melts and sticks to the nuts. Be careful not to burn! Pour onto parchment paper to cool.
  3. To assemble your salad, layer spinach in bowl(s) and top with sliced peaches, strawberries, goat cheese, and candied walnuts.
  4. Drizzle your homemade poppyseed dressing over the top. Serve and enjoy!
*This makes a cup or so of dressing and can stay good in a jar or airtight container in the fridge for several days.
