Today is a BIG day at my house! It’s my husband’s Birthday! He’s officially 21 years old. 😉
Kidding! He only wishes. But it really is his Birthday and I think it’s pretty crummy that it falls on a Wednesday. He has to go to work and has a church meeting at night so we’re not doing much to celebrate. I’m hoping to take him out to dinner this weekend.
I’m a huge Birthday fan. I don’t know why but I just love them! He’s requested a white cake with blue frosting. How weird is that? That’s my husband for you! And I was thinking instead of ice cream to go with the cake, I’ll serve him some hot chocolate. Because duh, it’s December.
It’s been cold there lately. Although, I’m pretty sure my definition of cold is probably not most peeps definition of cold, eh? 50’s in SoCal is chilly. 😉
Either way, I’ve been drinking a lot of herbal teas and hot chocolate lately. Anything to warm up my always freezing hands. The other night, I ran out of hot chocolate mix and sort of freaked out. I wanted a yummy mug of hot chocolate, gosh dangit! Then I thought, why don’t I make a batch of homemade hot chocolate?
I have a crazy good crock pot hot chocolate recipe on here but that makes a huge batch. I wanted just one serving. If you’ve found yourself in this very same situation, then listen up! Here’s the recipe you need to hold onto forever and for always… Hot Chocolate for One!
You got it – it’s one serving of homemade hot chocolate with only four easy ingredients and it takes one minute to whip up. It’s easy to double, if you want to make one larger batch or triple if you want to share (which I never do, ha!). My eleven year old makes this hot chocolate for one by himself now for a quick dessert. It’s tasty and has easily become a favorite around here.
Hot Chocolate for One
Ingredients
- 1 cup milk
- 1 Tbsp. Truvia Baking Blend or 2 Tbsp. sugar
- 2 tsp. cocoa
- 1/4 tsp. vanilla extract
- marshmallows whipped cream and/or a candy cane, for serving (if desired)
Instructions
- Pour milk in a microwave safe glass. Heat in microwave for one minute, or until warm.
- Meanwhile, in a small bowl combine the sugar and cocoa.
- Pour sugar/cocoa mix into warm milk and stir or whisk to incorporate. Add in vanilla.
- Serve with a little whipped cream or marshmallows and a candy cane! Enjoy! 🙂

I’ve made hot chocolate this way before, but it never seemed to turn out that good… however I never tried adding vanilla before. I wonder if that’s what I was missing the whole time.
I think it definitely makes a difference! I like to use high quality cocoa too. I think that really makes it taste better. Good luck! 🙂
