It’s no surprise I’m a HUGE avocado fan! I mean, who isn’t, right? I have countless avocado recipes here on Yummy Healthy Easy, ranging from appetizers all the way to desserts that incorporate avocados in them. They are one of the most versatile fruit on the planet. Avocados can be added to many savory dishes for extra texture and flavor but can also be used to sub out butter and oil in desserts. I can’t think of one bad thing to say about avocados!
I’m teaming up with the California Avocado Commission again this year, along with a few other bloggers, and I couldn’t be more excited!! We have a monthly theme to our recipes, and March’s theme is Surprising Swaps. I was pondering over what I use avocados for as a surprising swap, and the thought immediately hit me that I love using avocados in place of mayonnaise.
Okay, first let me say that I LOVE mayo. I know I shouldn’t because it’s one of those cliche things you know you shouldn’t be eating. But I grew up mixing ketchup into mayo and dipping my fries in them, so yes, I have a good relationship with mayo, lol!
I’m also a huge chicken salad and tuna salad fan but hate adding extra calories because of my love for mayo. Who’s with me?! So a fun and surprising tip is to completely swap out the mayonnaise for AVOCADO!!! Yes! You can do that!

You will LOVE this recipe. I couldn’t believe the creamy, richness of this Avocado Egg Salad. Eggs are one of my very favorite last minute meals.
I always have hard boiled eggs on hand and there are many days when I will be in a total rush and think, what in the world am I going to make to eat? Then I remember I have eggs, so I’ll whip up a quick egg salad! Eggs are such a great source of protein, and avocados are an amazing source of healthy fat and fiber. The combination? A protein-rich, fiber filled meal! You will never use mayonnaise again after trying this Mayo-Free Avocado Egg Salad recipe!
Ingredients
- 1 large ripe California Avocado
- 4 hard boiled eggs peeled and diced
- 2 green onions diced small
- 1 1/2 Tbsp. fat-free Greek yogurt
- 1/2 tsp. fresh lime juice
- 1/8 tsp. garlic salt or more to taste
- 1/8 tsp. kosher salt or more to taste
- fresh cracked pepper to taste
Instructions
- Cut avocado into small chunks and place in a bowl. Using a fork, mash avocado. Add lime juice, green onion, garlic salt, kosher salt and pepper and mix.
- Fold in diced egg. Then add Greek yogurt and fold together until creamy. Serve alone or on bread or chips and enjoy!
