Have you ever made a mason jar salad before? I’ve made only a few but I need to start making them a LOT more. Up front it seems like a lot of work because you cut the veggies, and do all the legwork for all of the salads at the same time. But in the long run, it saves you time because you can just grab a jar and take it to work, school or wherever for an easy lunch. So much better than running to get fast food.
The best part about this salad is the avocado dressing though, I have to admit! It’s so flavorful and creamy! I added jalapeños to give it a kick and cilantro and seasonings to bring out the southwestern flavors.
I blended it up right in my blender and it took maybe 15 seconds to become a smooth, creamy dressing. It’s great for dipping veggies in or just drizzled over any salad if you don’t want to make the mason jar salad. It’s healthy and really has a great flavor.
Layering the salad ingredients is really easy. After I poured the avocado dressing into the bottom of the jars, I layered the veggies in order from the hardest vegetable to the softest. This ensures that the vegetables won’t become soggy as they sit in the dressing. In fact, it seems to marinate the veggies that are in the dressing, making the salad more flavorful. Topping them with spiraled zucchini (or zoodles) makes the mason jar salad so pretty and I think easier to eat than adding chopped up zucchini.
I love creating food that tastes delicious but is also healthy. This mason jar salad with avocado dressing is low-carb, low-sugar and gluten-free. You can change up the ingredients in this versatile salad and swap out ingredients you like. You can also easily make this meat-free by taking out the chicken. Overall, a very satisfying make-ahead lunch!
Ingredients
Avocado Dressing Ingredients:
- 1 ripe avocado
- 1 5.3-oz container plain fat-free Greek yogurt
- 2 Tbsp. sliced green onions
- 1/2 jalapeno chopped
- 1 garlic clove minced
- 1/4 cup light sour cream
- handful cilantro about 1/4 cup
- 1 tsp. fresh lemon juice
- 1/8 tsp. pepper
- 1/4 tsp. salt
Mason Jar Salad Ingredients:
- cauliflower chopped
- cooked chicken diced
- black beans drained and rinsed
- tomatoes chopped
- spiralized zucchini
Instructions
- Blend all the ingredients listed for the avocado dressing in a blender: avocado, yogurt, green onions, jalapeño, garlic, sour cream, cilantro, lemon juice, salt and pepper. Blend until combined and creamy.
- Pour dressing into bottom of Mason jars. The amount of jars you will fill depends on how much dressing you want in your mason jar salad.
- Place vegetables on top of avocado dressing in the order listed: cauliflower, chicken, black beans, tomatoes, spiralized zucchini. Place lid on top and refrigerate until ready to eat. Can eat straight from the jar or dump out into a bowl. Enjoy!
