I hear ya, Jen! Our weekends are rarely relaxing…between soccer, birthday parties, family get togethers, play dates….I sometimes breathe a sigh of relief when the week starts again! These crock pot potatoes look amazing…my family LOVES tacos and these would be a huge hit!

I LOVE every single thing about this entire recipe. As a poor college student, I ate baked potatoes all the time. Like, constantly. I still love baked potatoes, but don’t get to make them as often. Why? Well, because my kids have me all over town at different events! Dance! Play practice! Lacrosse! Student council! Egads … I feel like I see the inside of my car more than the inside of my house!
I do love the joy the older kids bring – it’s just different than the joy from littler ones!
