Chinese Chicken Salad with Homemade Easy Dressing
Chinese Chicken Salad is a healthy, flavorful, easy lunch or dinner salad recipe!

Salad:
- 1 bunch romaine lettuce chopped
- 1/2 red bell pepper diced
- 1 bunch green onions sliced
- 1/2 cup slivered almonds
- 1 Tbsp. sesame seeds
- 1 package Chicken flavor Top Ramen noodles crushed
- 1 pound chicken tenders cooked and cubed
- 1 large can mandarin oranges drained
Dressing:
- 1 flavor packet from the Top Ramen
- 1/3 cup canola oil
- 3/4 Tbsp. Truvia Baking Blend or about 1 1/2 Tbsp. sugar
- 2 Tbsp. vinegar
- 1/4 tsp. black pepper
- 3/4 tsp. kosher salt
Preheat oven to 350ºF. Toast almonds for 3 minutes, stirring once or twice while cooking. Sprinkle sesame seeds over almonds and roast for 2 -3 minutes together or until browned. Set aside.
Meanwhile, combine lettuce, bell pepper, green onions, chicken, oranges and dry, crushed ramen noodles.
Combine dressing ingredients in a jar and shake to combine.
When almonds and sesame seeds cool, add to salad. When ready to serve, toss with some of the dressing. Serve and enjoy!
