Healthy Baked Chicken Fingers

Baked Chicken Fingers are my go-to easy dinner idea and my favorite way to eat chicken! They're incredibly flavorful, healthy and delicious!

Ingredients

  • 1 1/2 slices whole wheat bread I leave the slices out for an hour or so to dry them out a bit
  • 1/3 cup shredded parmesan cheese
  • 1/3 cup almonds I've used all kinds in this recipe!
  • 2 Tbsp. parsley
  • 1 tsp. salt
  • 1 tsp. Italian seasoning
  • 1/8 tsp. pepper
  • 3/4 tsp. garlic powder
  • 1 1/2 lbs. Foster Farms Breast Tenders
  • 1/4 cup olive oil

Instructions

  • Preheat the oven to 400ºF. Spray a cookie sheet with cooking spray and set aside.
  • Using a food processor, combine bread slices, parmesan cheese and almonds. Process until combined and crushed into small bits.
  • Add parsley, salt, pepper, garlic powder, and Italian seasoning. Pulse to combine into almond mixture. Pour into a large bowl.
  • Pour olive oil into another bowl. Dredge chicken tenders into oil and then roll in almond mixture, making sure to completely coat the chicken. Place chicken on cookie sheet.
  • Repeat until all chicken pieces are coated and placed on the cookie sheet. Bake in preheated oven for 25 minutes, or until chicken is cooked through and almond crust is golden brown.
  • Cool for a few minutes and serve. Enjoy!

Notes

We like this with a side of rice or couscous and a salad!
