Preheat oven to 400 degrees F. Spray a large baking sheet with cooking spray, or line with parchment paper.
Combine bread crumbs and parmesan cheese on a plate and set aside.
Mix together flour, garlic powder, Italian seasoning, salt and pepper in a bowl and set aside.
In another bowl, pour milk and set aside.
Take chicken strips and dredge in flour mixture. Next, dip in milk and then roll in bread crumb/parmesan. Place breaded chicken onto prepared baking sheet. Repeat with remaining chicken.
Give chicken a quick spray with cooking spray and then place in preheated oven. Bake for 15-20 minutes, or until chicken is no longer pink inside.
While chicken is cooling off, mix together sour cream, parmesan, dijon and salt & pepper. Serve with chicken strips and enjoy!
