Homemade Whole Wheat Pita Bread
Easy and healthy whole wheat pita bread - tastes so much better than the store-bought!

- 2 cups warm water
- 4 tsp. bread machine or instant yeast
- 1 Tbsp. salt
- 4 cups whole wheat flour I like King Arthur brand (can use all-purpose if desired)
Combine water and yeast in a large bowl. Let sit for a few minutes.
Stir in salt and flour. Cover and let rise for 1 hour - dough will be sticky.
Turn onto floured surface and knead lightly, cover with a towel and let rise 30 minutes.
Preheat oven to 500º F. Divide dough into 6 balls. Roll each into an 8" circle with rolling pin, using as few strokes as possible and only rolling out on one side.
Place on lightly greased cookie sheet(s). Place cookie sheet on rack that's placed in the lower half of the oven and bake for 8-10 minutes or until circles puff up like pillows and are lightly brown - don't over bake! (I use two cookie sheets, one at a time)
Cut or break pockets open and fill with whatever you'd like - enjoy!
