Ingredients

  • 2 cups warm water
  • 4 tsp. bread machine or instant yeast
  • 1 Tbsp. salt
  • 4 cups whole wheat flour I like King Arthur brand (can use all-purpose if desired)

Instructions

  • Combine water and yeast in a large bowl. Let sit for a few minutes.
  • Stir in salt and flour. Cover and let rise for 1 hour - dough will be sticky.
  • Turn onto floured surface and knead lightly, cover with a towel and let rise 30 minutes.
  • Preheat oven to 500º F. Divide dough into 6 balls. Roll each into an 8" circle with rolling pin, using as few strokes as possible and only rolling out on one side.
  • Place on lightly greased cookie sheet(s). Place cookie sheet on rack that's placed in the lower half of the oven and bake for 8-10 minutes or until circles puff up like pillows and are lightly brown - don't over bake! (I use two cookie sheets, one at a time)
  • Cut or break pockets open and fill with whatever you'd like - enjoy!
