Course: Entree
Author: Jenn

Ingredients

  • 2 pounds beef sirloin cubed or sliced (I use the pre-chopped beef stew meat)
  • salt & pepper to taste
  • garlic powder to taste
  • cooking spray
  • 1 cube beef bouillon
  • 1/4 cup hot water
  • 1 Tbsp. cornstarch
  • 1 large yellow onion sliced
  • 1 large yellow bell pepper sliced
  • 1 large red bell pepper sliced
  • 1 14.5-oz can stewed tomatoes (with juice)
  • 3 Tbsp. soy sauce
  • 1 tsp. sugar
  • 1 tsp. salt

Instructions

  • Sprinkle chopped/cubed sirloin with salt, pepper and garlic powder to taste. Heat a large skillet over medium heat, spray with cooking spray and brown the seasoned beef. Transfer to a slow cooker.
  • Mix bouillon cube with hot water until dissolved, then mix in cornstarch until dissolved. Pour into the slow cooker with meat. Stir in sliced onion and peppers, stewed tomatoes, soy sauce, sugar, and salt.
  • Cover, and cook on High for 3 to 4 hours, or on Low for 6 to 8 hours. Serve over warm cooked rice. Enjoy!!
