Preheat oven to 350 degrees F. Cover a large baking sheet with tin foil or parchment paper. Place chopped, dry kale leaves on baking sheet and pour a light drizzle of olive oil over the top (amount of olive oil depends on amount of kale used. You don't want too much but you want every kale piece lightly covered). Toss lightly with a spoon or use your fingers to distribute evenly. Sprinkle coarse salt over the kale and again, toss until equally distributed.
