Easy 20 Minute Pork Fried Rice

Crazy delicious family-favorite Pork Fried Rice that's easy, only has 7 simple ingredients, takes 20 minutes or less and will WOW any and everyone!

Ingredients

  • 1 cup diced pork tenderloin
  • 4 cups cooked rice
  • 2 beaten eggs
  • 2 green onions chopped
  • 2 Tbsp. soy sauce
  • 1/2 tsp. salt
  • 2 1/2 Tbsp. oil I use canola

Instructions

  • Heat 1/2 Tbsp. of oil in a wok heated to about 375ºF (or use a pan over the stovetop). Cook diced pork tenderloin until browned and cooked through. Set aside in a bowl. (I've also used leftover pork, diced up and just heated in pan for a minute or two.)
  • Heat another 1/2 Tbsp. of oil in wok and scramble the beaten eggs. Pour into bowl with cooked diced pork.
  • Pour about 1 1/2 Tbsp. of oil into wok and pour in the cooked rice, breaking up big pieces until heated through.
  • When heated through, add green onions and cook for a minute.
  • Add in soy sauce, pork and scrambled eggs. Stir to cover the rice with soy sauce. Add salt and stir until all heated through.
  • Serve and enjoy!
