Mini Cherry Cobbler Recipe

An easy and delicious cherry cobbler recipe that makes 4 individual sized servings.

Ingredients

  • 4 Tbsp. unsalted butter divided
  • 1/2 cup white whole wheat flour
  • 1/4 cup Truvia Baking Blend
  • 1/2 tsp. baking powder
  • 1/2 cup milk
  • 1/8 tsp. cinnamon
  • 1/4 tsp. vanilla extract
  • 1 1/2 cups pitted & halved cherries
  • 1/4 cup Truvia Baking Blend
  • 1/2 Tbsp. white whole wheat flour

Instructions

  • Preheat oven to 350ºF. In four ramekins, place 1 Tbsp. butter. Place the ramekins on a cookie sheet and place in preheating oven for about 5 minutes, or until the butter is melted.
  • In a medium sized mixing bowl, mix together the next ingredients: flour through vanilla. Stir until smooth.
  • Pour 1/4 cup of batter into each cup of melted butter. Do NOT stir!
  • Mix together pitted and halved cherries with 1/4 cup Truvia and 1/2 Tbsp. white whole wheat flour (depending on how sweet your cherries are, you may need more or less Truvia to sweeten).
  • Top each batter filled cup with a fourth of the cherry mixture. Again, do NOT stir.
  • Bake in preheated oven (with ramekins on the cookie sheet) for 40-45 minutes, until the cake part is cooked through and the top is golden brown.
  • Serve with whipped cream, ice cream or alone and enjoy!
