Red, White & Blue Fruit Popsicles
A healthy and easy treat the entire family will gobble up!
Servings: 8 -10 popsicles, depending on the size
- 2 cups sliced strawberries
- 1 cup pineapple chunks + a little extra pineapple juice
- sweetener of your choice Truvia, honey, sugar, etc
- low-fat vanilla yogurt
- 1 cup blueberries
- 1/2 a banana
- 1/2 tsp. lemon juice
In a blender or food processor, blend together strawberries and pineapple. Add in a little juice if it needs it. Add in some sweetener to taste. Pour mixture in the bottom of popsicle molds.
Fill the middle section of each popsicle mold with yogurt.
In a blender or food processor, mix together blueberries, banana and lemon juice. Sweeten if necessary. Fill remaining popsicle molds with blueberry mixture. Place in the freezer to set.
When fully set, run some warm water over the bottom of the popsicle mold to loosen. Pull out each popsicle, serve and enjoy!
