What's better than french toast? Blueberry French Toast Casserole! Delicious casserole with cubes of bread and blueberries baked in an egg and orange juice mixture. Perfect for Easter breakfast... or breakfast any day!

Blueberry French Toast Casserole

Ingredients

  • 6 cups white bread cubes I used french bread
  • 4 eggs
  • 3/4 cup milk
  • 1/4 cup heavy whipping cream
  • 1/2 cup orange juice
  • 2 Tbsp. Truvia Baking Blend or 4 Tbsp. granulated sugar
  • 1/4 tsp. salt
  • 1 tsp. vanilla extract
  • 1 cup fresh blueberries
  • 1 Tbsp. light butter
  • whipped cream for topping

Instructions

  • Preheat oven to 350ºF. Cut bread into cubes and spread into an even layer on cookie sheet. Place in preheated oven for 10 minutes, until toasted. Pull out of oven and set aside.
  • Combine together eggs, milk, cream, orange juice, sugar, salt and vanilla in a bowl and whisk together.
  • Place toasted bread cubes into a 2 quart casserole dish. Toss in blueberries.
  • Pour egg mixture over the top and let sit 10 minutes. Place little pats of the butter over the top of the casserole and place in oven.
  • Bake for 45 minutes in 350ºF oven. Serve in dishes with a dollop of whipped cream on top. Enjoy!
