(Hidden Veggie) Crock Pot Sloppy Joes

Ingredients

  • 3 cloves garlic peeled
  • 2 carrots
  • 1 10-oz container button mushrooms
  • 1 onion peeled
  • 1.25 pound lean turkey
  • 1 1/2 cup ketchup
  • 2 tsp. mustard
  • 1 1/2 Tbsp. light brown sugar
  • 1 tsp. salt
  • 1/2 tsp. pepper

Instructions

  • In a food processor, combine garlic, carrots, mushrooms and onion. Blend until fully pureed. Set aside.
  • In a saucepan, brown turkey. Add in pureed vegetables and heat through. Pour all into the crock pot.
  • Add ketchup, mustard, brown sugar, salt and pepper into crock pot and stir together.
  • Cook on LOW for 4-6 hours. Serve on buns and enjoy!
