Healthy Baked Oatmeal

Ingredients

  • 3 cups quick oats
  • 2 Tbsp. Truvia Brown Sugar Blend or 1/4 cup light brown sugar
  • 1 3/4 tsp. baking powder
  • 3/4 tsp. cinnamon
  • 1/4 tsp. salt
  • 1/2 cup milk
  • 1/2 cup plain applesauce
  • 1/2 cup siggi's strawberry yogurt about one 5.3-oz container
  • 2 egg whites ot about 1/4 cup egg white substitute
  • 2 Tbsp. canola oil
  • 1 1/2 tsp. vanilla extract
  • 1 Tbsp. Truvia Brown Sugar Blend or 2 Tbsp. light brown sugar

Instructions

  • Preheat oven to 350ºF. Spray a 1.5 quart casserole dish with cooking spray; set aside.
  • Mix together quick oats, 2 Tbsp. Truvia, baking powder, cinnamon, and salt in a medium sized bowl, until combined.
  • Add milk, applesauce, yogurt, egg whites, oil and vanilla into the oat mixture. Stir together to combine.
  • Pour into prepared dish and bake in preheated oven for 30 minutes, or until toothpick comes out clean. During the last 5 minutes of baking, pull baked oatmeal out and sprinkle the last 1 Tbsp. Truvia Brown Sugar over the top and continue baking for 5 minutes.
  • Serve with a drizzle of syrup or milk, fruit or yogurt. Enjoy!
