1/2cupTruvia Baking Blendor 1 1/4 cup granulated sugar
6Tbsp.butter
3Tbsp.light vanilla yogurtI used Yoplait brand
1/2cuplight eggnog
1tsp.vanilla extract
2egg yolks
ground nutmegfor sprinkling on top before baking
1cuppowdered sugar
2-3Tbsp.light eggnog
Instructions
Preheat oven to 300ºF.
In a medium bowl, combine flour, baking powder, cinnamon, and 1/2 tsp. nutmeg. Mix well and set aside.
In a large bowl, cream sugar, butter and yogurt with an electric mixer. Add eggnog, vanilla and egg yolks. Beat at a medium speed until smooth.
Add the flour mixture and beat at low speed just until combined. Careful not to overmix!
Drop by rounded teaspoons onto cookie sheets that have been lightly sprayed with cooking spray. Sprinkle lightly with nutmeg.
Bake for 23-25 minutes or until bottoms are lightly browned. Transfer immediately to flat surface and let cool.
Pour powdered sugar into a small bowl. Add in eggnog one tablespoon at a time until the consistency you like. Drizzle over the tops of the cooled cookies.
Devour and enjoy!
