Soft (healthier) Eggnog Cookies drizzled with a light eggnog glaze over the top makes for a pretty darn near perfect dessert!

Eggnog Cookies

Soft, cake-like cookies using yogurt in place of most butter and tastes just like eggnog but in cookie form.

Ingredients

  • 2 1/4 cup all-purpse flour
  • 1 tsp. baking powder
  • 1/2 tsp. ground cinnamon
  • 1/2 tsp. ground nutmeg
  • 1/2 cup Truvia Baking Blend or 1 1/4 cup granulated sugar
  • 6 Tbsp. butter
  • 3 Tbsp. light vanilla yogurt I used Yoplait brand
  • 1/2 cup light eggnog
  • 1 tsp. vanilla extract
  • 2 egg yolks
  • ground nutmeg for sprinkling on top before baking
  • 1 cup powdered sugar
  • 2-3 Tbsp. light eggnog

Instructions

  • Preheat oven to 300ºF.
  • In a medium bowl, combine flour, baking powder, cinnamon, and 1/2 tsp. nutmeg. Mix well and set aside.
  • In a large bowl, cream sugar, butter and yogurt with an electric mixer. Add eggnog, vanilla and egg yolks. Beat at a medium speed until smooth.
  • Add the flour mixture and beat at low speed just until combined. Careful not to overmix!
  • Drop by rounded teaspoons onto cookie sheets that have been lightly sprayed with cooking spray. Sprinkle lightly with nutmeg.
  • Bake for 23-25 minutes or until bottoms are lightly browned. Transfer immediately to flat surface and let cool.
  • Pour powdered sugar into a small bowl. Add in eggnog one tablespoon at a time until the consistency you like. Drizzle over the tops of the cooled cookies.
  • Devour and enjoy!
