Egg & Sausage Breakfast Casserole

Ingredients

  • 1/2 lb. pork sausage
  • 1/4 cup all-purpose flour
  • 1/2 tsp. salt
  • 1/2 tsp. baking powder
  • 1 cup low-fat cottage cheese
  • 6 eggs beaten
  • 8- oz shredded cheddar cheese
  • 1 4-oz can diced green chilies

Instructions

  • Cook sausage in frying pan and drain well. Preheat oven to 350º F. Spray a 2 quart casserole dish with cooking spray; set aside.
  • In a mixing bowl, stir together flour, salt and baking powder into cottage cheese. Add in eggs and then cheese. Stir in chilies and sausage. Pour into prepared baking dish.
  • Bake for 45 minutes. Cut into squares and serve. Enjoy!

Notes

*recipe is easily double to fit in a 9x13" pan. Great for brunch!
