Easter Egg Nest Macaroons

Delicious little nests made with an easy macaroon recipe and then topped with M&M Easter egg candies!

  • 2 2/3 cups flaked coconut
  • 5 Tbsp + 1 tsp. Truvia sweetener or 2/3 cup white sugar
  • 1/4 tsp. salt
  • 1/4 cup all-purpose flour
  • 4 egg whites
  • 1 tsp. almond extract
  • 1 cup chopped almonds
  • powdered sugar
  • water
  • M&M Easter Egg candies


  • Preheat oven to 325º. Lightly spray baking sheet with cooking spray.
  • Combine coconut, Truvia (or sugar), salt and flour in a mixing bowl. Stir in egg whites and almond extract. Stir in almonds and mix well.
  • Scoop by tablespoon or with a cookie scoop onto prepared cookie sheets. Press your finger in the center a bit to create a small indent.
  • Bake for about 20 minutes or until edges are golden brown. Be careful not to over cook! Remove from baking sheet immediately and let cool.
  • Make a quick glaze by mixing together a small amount of powdered sugar and water. When cookies are cooled a bit, put a small drop of glaze inside the indent and place three M&M candies on top. Let harden so the M&M's stay put and then serve. So cute and perfect for spring!
