Greek Tomato Salad
Amazing healthy side dish that's fresh and full of flavor
Course: Vegetable Side Dish
Servings: 2 -3
- 4 medium tomatoes cut into 8 wedges
- 1/2 of a cucumber peeled, halved and sliced
- 1/4 cup sliced green onions
- 8 kalamata olives sliced
- 3 Tbsp. low-fat feta cheese
- 1/4 cup red wine vinegar
- 2 Tbsp. olive oil
- 1/4 tsp. garlic powder or 1 clove garlic, minced
- 1/2 tsp. oregano
- 1/4 tsp . basil
- 1/8 tsp. sugar
- 1/8 tsp pepper
Combine tomatoes, cucumber, green onions, olives and cheese in a medium sized bowl.
In a small bowl, whisk together vinegar, oil, garlic, oregano, basil, sugar, salt and pepper. Pour over vegetables and toss to coat.
