Skinny Blueberry Crumble Bars

Ingredients

Crumbled Oat Crust & Topping Ingredients:

  • 1/2 cup white whole wheat flour
  • 1/3 cup light brown sugar packed
  • 1/4 tsp. salt
  • 1/4 cup coconut oil
  • 1 1/4 cup quick cooking oats
  • 2 Tbsp. apple or orange juice

Blueberry Layer Ingredients:

  • 1 Tbsp. Truvia
  • 1 Tbsp. flour
  • pinch of salt
  • 1 1/2 cups fresh blueberries
  • 1 Tbsp. fresh lemon juice

Instructions

  • Preheat oven to 375º F. Spray an 8x8" dish with cooking spray.
  • In a food processor, combine the 1/2 cup flour, 1/3 cup brown sugar, 1/4 tsp. salt, 1/4 cup coconut oil, 1 1/4 cup oats, and 2 Tbsp. apple or orange juice. Pulse until combined and crumbly.
  • Take out 3/4 cup of the oat mixture and set aside (this will be the topping).
  • Press the remaining part of oat mixture into the bottom of prepared dish. (I used the back of a measuring cup to press it down evenly)
  • In a medium sized bowl, combine the 1 Tbsp. Truvia, 1 Tbsp. flour, pinch of salt, 1 1/2 cups blueberries and 1 Tbsp. lemon juice. Toss together. Pour blueberries over crust.
  • Top the blueberries with the reserved 3/4 cup of crumbled oat topping. Bake for 35 mins or until golden brown on the edges. Let cool and cut into bars and enjoy!
