Pecan Crusted Honey-Mustard Salmon

  • 4 4-oz salmon filets
  • 1/4 cup melted coconut oil or butter
  • 3 Tbsp. Dijon mustard
  • 1 1/2 Tbsp. honey
  • 1/4 cup finely chopped pecans
  • 1/4 cup bread crumbs
  • 4 tsp. chopped fresh parsley
  • salt & pepper


  • Preheat oven to 400º F.
  • In a small bowl, mix melted coconut oil, mustard and honey.
  • In another small bowl, mix bread crumbs, pecans and parsley.
  • Place salmon filets on a foil covered baking sheet. Season salmon with salt and pepper and pour the honey mixture over the tops. Sprinkle with the bread crumb mixture.
  • Bake salmon until it flakes easily with a fork, about 20 minutes. Enjoy!
