Soft & Chewy Gingersnaps

Soft, chewy, delicious gingersnaps cookies.

  • 3/4 cup butter softened
  • 1 cup brown sugar
  • 1 egg
  • 1/4 cup molasses
  • 2-1/4 cup flour
  • 1 tsp. cinnamon
  • 1 tsp. ginger
  • 1/2 tsp. ground cloves
  • 1/4 tsp. salt
  • 1 tsp. soda
  • granulated sugar for rolling and sprinkling on top


  • Combine dry ingredients in a small bowl and set aside.
  • Mix butter, sugar, egg and molasses in a mixer with a paddle attachment. Add in dry ingredients and mix well. Cover and chill in refrigerator until easy to handle, about an hour.
  • Preheat oven to 375º. Spray cookie sheet(s) with cooking spray. Shape dough into small balls and roll in sugar. Slightly flatten each cookies with bottom of a glass cup. Bake for 10 minutes. Right when they come out of the oven, sprinkle a bit of sugar on the tops, if desired.
