Soft & Chewy Gingersnaps
Soft, chewy, delicious gingersnaps cookies.

Servings: 2 -3 dozen
- 3/4 cup butter softened
- 1 cup brown sugar
- 1 egg
- 1/4 cup molasses
- 2-1/4 cup flour
- 1 tsp. cinnamon
- 1 tsp. ginger
- 1/2 tsp. ground cloves
- 1/4 tsp. salt
- 1 tsp. soda
- granulated sugar for rolling and sprinkling on top
Combine dry ingredients in a small bowl and set aside.
Mix butter, sugar, egg and molasses in a mixer with a paddle attachment. Add in dry ingredients and mix well. Cover and chill in refrigerator until easy to handle, about an hour.
Preheat oven to 375º. Spray cookie sheet(s) with cooking spray. Shape dough into small balls and roll in sugar. Slightly flatten each cookies with bottom of a glass cup. Bake for 10 minutes. Right when they come out of the oven, sprinkle a bit of sugar on the tops, if desired.
