Copycat Olive Garden Zuppa Toscana Soup

- 4 slices bacon diced
- 1 onion diced
- 2 cloves garlic minced
- 1 pound Italian sausage
- 10 cups chicken broth
- 3 russet potatoes sliced thin, quartered if large
- 16 ounces heavy whipping cream
- 3 cups fresh kale diced
Dice four slices of bacon. In a cast iron skillet, cook the bacon pieces until browned.
Add the diced onion and cook with the bacon until softened. Next, add the two cloves of minced garlic and one pound Italian sausage and break it up while browning.
When the sausage is browned, take mixture out and place on a plate for later use. In the same skillet, add chicken broth and sliced russet potatoes.
Bring to a boil for about 15 minutes or until the potatoes are softened.
Pour the sausage mixture back into the pot with the potatoes, then add the heavy whipping cream to the pot.
Now, add in 3-4 cups diced fresh kale and let that soften for a few minutes. Taste and add salt and pepper and even red chili pepper flakes if you like it spicy. Enjoy!
