Copycat Olive Garden Zuppa Toscana Soup

Ingredients

  • 4 slices bacon diced
  • 1 onion diced
  • 2 cloves garlic minced
  • 1 pound Italian sausage
  • 10 cups chicken broth
  • 3 russet potatoes sliced thin, quartered if large
  • 16 ounces heavy whipping cream
  • 3 cups fresh kale diced

Instructions

  • Dice four slices of bacon. In a cast iron skillet, cook the bacon pieces until browned.
  • Add the diced onion and cook with the bacon until softened. Next, add the two cloves of minced garlic and one pound Italian sausage and break it up while browning.
  • When the sausage is browned, take mixture out and place on a plate for later use. In the same skillet, add chicken broth and sliced russet potatoes.
  • Bring to a boil for about 15 minutes or until the potatoes are softened.
  • Pour the sausage mixture back into the pot with the potatoes, then add the heavy whipping cream to the pot.
  • Now, add in 3-4 cups diced fresh kale and let that soften for a few minutes. Taste and add salt and pepper and even red chili pepper flakes if you like it spicy. Enjoy!
