Prune Bacon Jam Crostini Recipe

This California Prune Bacon Jam Crostini Recipe might sound a little different from a normal crostini - but the flavors are absolutely INCREDIBLE together! I can't stop making it and eating it!

Ingredients

  • 1 lb bacon
  • 1 onion diced
  • 2 shallots diced
  • 2 garlic cloves minced
  • 1 tsp. chili powder
  • 1/4 cup maple syrup
  • 1/3 cup apple cider vinegar
  • 10 California Prunes diced
  • 1 loaf baguette
  • olive oil
  • 4 ounces goat cheese

Instructions

  • Cook bacon in a large skillet until brown. Place bacon on paper towels to drain and drain all but 1 Tbsp. bacon fat in the skillet.
  • In the reserved bacon fat, cook the onion and shallots until clear. Add the garlic. (Don't over cook)
  • Add in the chili powder, maple syrup, apple cider vinegar and prunes to the mixture. Cook until everything is softened. Taste and season. Pull off heat and let cool. Crumble up the bacon and put it into the onion and prune mixture. (Smash with a potato smasher if desired.)
  • Cut the baguette into slices. Drizzle olive oil over the slices and toast under the broiler until golden brown. Top with a spoonful of goat cheese and a spoonful of prune bacon jam. Sprinkle some diced rosemary on top for a delicious appetizer! Enjoy!
