I’ve done this with Russian dressing, but it’s hard to find. Catalina works great as a sub. I switch up the jam for red pepper or jalapeño jelly as it’s not so sweet and I like a little kick. Easy, tasty and usually have leftovers for tomorrow. Win- win- win! I’ have a pork loin today that I’m going to try for a different flavour. Should be just as good.

Wow, this recipe for Four-Ingredient Baked Russian Chicken looks delicious! I love finding easy and flavorful recipes that don't require a long list of ingredients. I can't wait to give this a try for dinner this week. The combination of Russian dressing, apricot preserves, and onion soup mix sounds intriguing. I'm sure it will create a unique and tasty flavor profile for the chicken. Thanks for sharing this recipe!

I make this often, but I add 1 cup of mayonnaise. If you use homemade Russian dressing, you won't need this (or not as much). This is a sure crowd-pleaser!

I've been making Russian chicken for 13-14 years and the only difference in my recipe is I add pineapple chunks to the sauce after it's poured on the chicken.
The lady who showed me this dish also use to use pineapple apricot jam in hers as she could buy them where she lived. Sadly I can hardly ever find Pineapple jam anymore.
Thanks for sharing!
