Creamy White Chicken Chili
Quick, easy and filling creamy chili recipe.
- 1 Tbsp. olive oil
- 1 onion diced
- 1 clove garlic diced
- 1 14-oz can chicken broth
- 1 lb. cooked & cubed chicken breasts or 1 large can cooked chicken
- 2 15-oz cans Great Northern Beans
- 1 15-oz can garbanzo beans
- 1 14-oz can corn
- 1 4-oz can chopped green chiles
- 1 tsp. ground cumin
- 1 tsp. salt
- 1/4 tsp. black pepper
- 1 cup sour cream
- 1/2 cup whipping cream
Heat oil in a large pot. Sauté onions and garlic until tender. Add broth, chicken, beans, corn, green chiles, cumin, salt and pepper. Stir to combine and bring to a boil.
Reduce heat and simmer 30 minutes, uncovered. Remove from heat and stir in sour cream and whipping cream. Serve in bowls. {My family likes dipping tortilla chips into it} Enjoy!
