This Creamy White Chicken Chili is a quick and easy meal for any night of the week. It’s creamy and filling. My family loves it. I serve it with a big bowl of tortilla chips for dipping!
First off, can I get a holla for my three year old that is officially potty trained?! Woot woot!! Now I have my two year old to go. He seems pretty eager though and has already gone #2 in the potty (yay!) so I have high hopes that I can cross diapers off my weekly grocery list soon!
So, apparently my mind has moved onto fall but my heart is still in summer. I’m already pulling out the chili and soup recipes and it’s still July…and yet, I’m still going to the beach every weekend to get a tan. Hmmm…
My older two boys start football this week. Thursday my life gets a whole lot more complicated. During the entire month of August, they each practice five days a week. Five. That’s a whole lot of practicing and a whole lot of driving around. After school starts at the end of August they go down to three days a week. That’s still a lot of driving around. But they love football and I gotta be honest, so do I! It’s so fun to be a mom of boys and watch them play sports. Makes my heart happy.
You know what else makes me happy, is this chili. It’s delicious. Creamy, rich and bold. Fills you up and puts a smile on your face. My family loves it. Give it a try and let me know what you think!
Ingredients
- 1 Tbsp. olive oil
- 1 onion diced
- 1 clove garlic diced
- 1 14-oz can chicken broth
- 1 lb. cooked & cubed chicken breasts or 1 large can cooked chicken
- 2 15-oz cans Great Northern Beans
- 1 15-oz can garbanzo beans
- 1 14-oz can corn
- 1 4-oz can chopped green chiles
- 1 tsp. ground cumin
- 1 tsp. salt
- 1/4 tsp. black pepper
- 1 cup sour cream
- 1/2 cup whipping cream
Instructions
- Heat oil in a large pot. Sauté onions and garlic until tender. Add broth, chicken, beans, corn, green chiles, cumin, salt and pepper. Stir to combine and bring to a boil.
- Reduce heat and simmer 30 minutes, uncovered. Remove from heat and stir in sour cream and whipping cream. Serve in bowls. {My family likes dipping tortilla chips into it} Enjoy!

Love this recipe, Jen! I didn’t realize we both had two year olds, but I have it easy because I don’t also have a 3 year old! Holy moly, I don’t know how you do it! I’m hoping potty training is in the near future for us, but my little one doesn’t seem too interested yet. Congrats on having one less child in diapers 🙂

1- could i omit the beans
2- is there any substitutes for the whipping cream like greek yogurt?
Hi Miranda! If you omit the beans, there won’t be much of a chili left, lol! Is there a specific bean you like better and could replace it with? I think milk would work nicely as a sub for the whipping cream. I’ve never tried using greek yogurt but it might work as well. Hope this helps!
