Red White & Blueberry Layered Shortcakes (in a jar!)

My boys’ elementary school has a million fund-raisers during the school year. It seems like every week something is being sent home that we’re supposed to peddle out to friends and family. Most I just ignore, but for the second year in a row they’ve sold really cute reusable bags. I bought a couple last year and loved them so I bought a few new ones this year.
During the last week of school they handed out the orders and I was stoked! My little blue and white cooler is adorable! I decided I had to take my boys to the park or beach just so I could bring a lunch and pack it in this adorable cooler.
Looking around my kitchen, I had berries in the fridge and leftover pound cake on the counter. This is no ordinary pound cake, you guys. This is the most addictingly delicious pound cake you’ve ever had. It’s my mom’s recipe and I shared it on here last year. I try not to make desserts. I really do. But when a craving hits for my mom’s pound cake, it’s a necessity. Anyway, I cubed some of the yummy cake up and layered it with whipped cream, blueberries and strawberries in mason jars to make a fun patriotic treat. I packed them along with some sandwiches in my cute new cooler and set off to the park. I felt like a cool mom pulling out a fun treat for my kids at the park!
Guys, these shortcakes were delicious! You can use any kind of cake but I seriously LOVE my mom’s recipe and it really holds up well in the jars. I am definitely doing this again for our 4th of July dessert!
Red White & Blueberry Layered Shortcakes (in a jar!)
Recipe type: Dessert
  • Pound Cake
  • Strawberries, sliced
  • Blueberries
  • Whipped Cream
  • Mason Jars
  1. Cut up cake into small cubes. Layer mason jars starting with blueberries, cake, whipped cream, strawberries and then repeat until jar is filled.
  2. Seal lid and store in the refrigerator until ready to serve. Enjoy!!
