Lemon Chicken Pasta
Equipment
- 1 oiled skillet
Ingredients
- 5-6 oz whole wheat high-protein penne pasta (cooked)
- 3/4-1 lb. thin cut chicken breast fillets diced
- ½ tsp salt substitute or regular salt
- ¼ tsp black pepper
- 2 cloves minced garlic
- 1 cup low-sodium chicken broth
- Zest and juice from ½ lemon
- 5 cups baby spinach
- ¼ cup nonfat Greek yogurt
- Optional: Lemon slices & shaved parmesan for serving
Instructions
- Cook the pasta. Follow the directions on the pasta box for timing of cooking.
- Meanwhile, season the chopped chicken with salt substitute (or regular salt if preferred) and black pepper. (Adjust seasonings if you prefer!) Cook in an oiled skillet (medium-heat) until browned.
- Add in garlic and let simmer for about 30 seconds, stirring so it won’t burn. Add in low-sodium chicken broth. Simmer for a minute and then add in baby spinach and cooked pasta. Add more broth if necessary.
- Add in the Greek yogurt. Stir to combine and heat through on low- do not boil!
- Add lemon juice and zest for a fresh kick.
- Serve & Garnish – Plate with lemon slices and shaved Parmesan and enjoy!

Can I freeze this
You definitely should be able to freeze this! Assuming you’re cooking it before freezing it, let it (or the leftovers) cool completely in the fridge. Divide it into individual portion sizes in freezer-safe bags or containers and freeze. For the best texture, slightly undercook the pasta before freezing so they don’t turn mushy upon reheating.
