Soft, chewy, delicious gingersnaps cookies. Just like Grandma made. Your family will love these!
Picture me, sweating, shaking, trying not to cry while I’m holding my screaming toddler and wiping blood off of him.
Now picture the complete opposite. Cool, calm, collected. That’s my husband. In he walks and calmly asks what happened and then he’s reassuring me it will all be okay. His teeth didn’t get knocked out, he’s fine, he’s a boy, this stuff happens, calm down.
His little teeth were chipped and his gums above were blue. Later that night his lip began to swell. He had total duck lip, poor dude.
I took my little guy to the dentist the next day and he was an angel! All the assistants, the dentist, everyone in the office were so impressed with how good he was. They took an x-ray and examined his teeth. His teeth were loose but will hopefully harden again within 2 weeks. They also filed down his two jagged teeth.
Now it’s just a waiting game to see if his teeth will turn colors. Right now they’re a slight gray but his gums are still discolored so I’m hoping that’s what’s giving them the tint.
After the dentist appointment, I came home and began baking. Sometimes when life hands you lemons, you have to make cookies. Well, since I’m not a huge lemon fan, I made gingersnaps. Ha!
These cookies are no joke, the best EVER. My boy’s don’t really like gingerbread or anything made with ginger/molasses combo usually because they’re so strong of a flavor, except for these. They inhale these. Next time I’m going to double the recipe because I only got to eat a couple!
If you like soft & chewy cookies, you will love these. They are absolutely delicious and even better after a tough day!
Soft & Chewy Gingersnaps
Ingredients
- 3/4 cup butter softened
- 1 cup brown sugar
- 1 egg
- 1/4 cup molasses
- 2-1/4 cup flour
- 1 tsp. cinnamon
- 1 tsp. ginger
- 1/2 tsp. ground cloves
- 1/4 tsp. salt
- 1 tsp. soda
- granulated sugar for rolling and sprinkling on top
Instructions
- Combine dry ingredients in a small bowl and set aside.
- Mix butter, sugar, egg and molasses in a mixer with a paddle attachment. Add in dry ingredients and mix well. Cover and chill in refrigerator until easy to handle, about an hour.
- Preheat oven to 375º. Spray cookie sheet(s) with cooking spray. Shape dough into small balls and roll in sugar. Slightly flatten each cookies with bottom of a glass cup. Bake for 10 minutes. Right when they come out of the oven, sprinkle a bit of sugar on the tops, if desired.

Really the biggest difference in mine is that it contains cocoa. Otherwise, very similar (just larger batch). You can see it for yourself very soon – I’m planning to post it in a few weeks!

I bet those cookies are amazing… soft and chewy, the opposite of the texture I associate with ginger snaps… But perhaps you should rename them, since, you know, they don’t snap?

is there any alternative that i can use to replace the molasses?

Hi Sabine! I haven’t ever used a replacement for the molasses but I did google it (gotta love google!) and came up with these things you might be able to try: 1 cup dark corn syrup, honey or maple syrup OR 3/4 cup firmly packed brown sugar OR 3/4 cup granulated sugar + 1/4 cup water. Let me know how it works out!
