Quinoa Muffins

I’ve mentioned before that I’m the baby of the family. I have 3 older brothers and 2 older sisters. I’ve also mentioned before that my brothers used to tease/torment me a LOT while I was growing up.The brother just above me, is three years older than me.

He used to blow up my Barbies by taping some sort of firecracker to them. Oh, but first would cut off all their hair! So mean! He teased me mercilessly about whatever hair style I had my hair in, or just about the extra long length of my hair (all the way down to my butt!). He always remembered humiliating things I did and would never let me live them down.

Like the one time I made fabulous chocolate cookies while my family was gone and I was home by myself. I was probably 8 or 9 and so proud of myself for making the cookies from start to finish, all alone. Well, my mom had bought a giant case of cinnamon and had poured it into a canning jar and it looked just like cocoa.

Being a young and inexperienced cook, I used the cinnamon, thinking it was cocoa. Like, a whole cup of cinnamon instead of cocoa. Boy, you’d think I’d be able to have lived that down by now. Especially since it’s been about 20 years, but nooooo. Guess which one of my brothers brings up the cinnamon cookie story at every single family get together? Ha!
But that’s okay, because now that I’m a grown up, I don’t make mistakes like putting weird ingredients into my baked goods. Well, okay. You got me. I guess I did add quinoa to these. Does that make me weird?
I’m a huge quinoa fan. So is my husband. I love the texture and the chewiness of it. Not to mention the health benefits of it. The addition of quinoa in these muffins makes them moist but also rich. I added mini chocolate chips but you don’t have to. You can add raisins or other dried fruit and these would make an even healthier muffin. I love that every bite has quinoa in it and a few little chocolate morsels. My boys loved these!

Ingredients
  • 2 cups cooled, cooked quinoa
  • 1 cup white whole wheat flour
  • 1 cup all-purpose flour
  • ¾ cup packed dark-brown sugar
  • 1-1/2 tsp. baking powder
  • 1 tsp. salt
  • ½ cup mini chocolate chips
  • ¼ cup canola oil
  • ½ cup buttermilk
  • 1 large egg
  • ¼ cup plain Greek yogurt
  • 1 tsp. vanilla extract
Instructions
  1. Preheat oven to 350º. Line a muffin tin with paper liners or spray with cooking spray.
  2. In a medium bowl, whisk together flour, sugar, baking powder, salt, mini chocolate chips and quinoa.
  3. In a small bowl, whisk together oil, buttermilk, egg, yogurt, and vanilla. Add milk mixture to flour mixture and stir just until combined. Divide among muffin cups.
  4. Bake until a toothpick inserted in the center of a muffin comes out clean, about 25 to 30 minutes. Cool muffins in pan for 5 minutes then transfer to a wire rack to cool. Enjoy!

    I’m glad you survived all that torture as a kid :) I love the cinnamon story. We have all done goofy things like that! I have never seen quinoa in a baked goodie, but it’s brilliant! Pinning this one for sure :)

    I definitely want to give these a try. I have a whole thing of quinoa in my pantry and I’ve never done anything with it. I had my husband buy it one day and just haven’t been inspired to use it. Thanks for the new inspiration!

    I used baking soda instead of flour to make chocolate chip cookies when I was 10. :) These muffins look so good, I can’t wait to try them!!

    I accidentally added salt instead of sugar to koolaid at a children’s function at church many years ago. Who keeps salt in a large plastic container with no label? The reactions were actually really, really funny! Oops! I still haven’t tried quinoa but my sister loves the stuff. Thanks for linking up to Saturday Dishes.     Well done, Jen! These are just right. I made mine with a gluten-free flour mix and they still turned out moist and satisfying. I love how dense they are. Of course I had to add more chocolate chips though. ;) Thanks for the recipe–I was on the hunt for a way to use up my leftover quinoa. Perfect!

    I’m going to try these today! They look great. I love quinoa too. I have a great meatloaf recipe that uses quinoa instead of breadcrumbs. I once was making a mock lasagna casserole which calls for cottage cheese and I didn’t realize I purchased cottage cheese with pineapple tidbits until after I served it to my guests:) That was a strange flavor combo!

      Is the frozen quinoa pre-cooked? The quinoa just needs to be cooked and cooled for this recipe. Let me know if you have any other comments, Mary!

      Hi Shantal! Some egg replacements you might try: 1/3 cup applesauce or 1/3 cup canned pumpkin puree or 1/2 pureed banana or 1 Tbsp. ground flaxseeds mixed with 3 Tbsp. water. I haven’t personally tried this recipe using any of these replacements, but they are options that might work! I hope this helps!

    I am new to the quinoa world and bought a bunch for a chili recipe that turned out nasty!! I am anxiously looking for recipes to use up the rest. Is it 2 cups once it’s cooked, or 2 cups before it’s cooked?

      Hi Candace! 2 cups after it’s cooked. Usually cooking one cup quinoa with two cups of water will get you a little more than 2 cups of cooked quinoa. I am obsessed with quinoa – I add it to almost everything, lol! I hope you like these muffins!! Check out some of my other quinoa recipes too to use up your stash! :)

      Hi Ashley! I’m not sure sesame or olive oil would be a good fit for this recipe. Regular vegetable oil or coconut oil would be other good substitutions instead of the canola!
